    Ingredients

    • Almond Flour
    • Baking Powder
    • Xanthan Gum
    • Sea Salt
    • Dried Basil
    • Dried Oregano
    • Onion Powder
    • Garlic Powder

    Instructions

    Preheat your oven to 350 degrees. Grease a 9x5-inch metal loaf pan with coconut oil or butter. Set aside.

    Using the whisk attachment on your stand mixer beat the eggs until they are light and frothy. Add the melted butter and olive oil and blend into the eggs.

    Add the dry ingredients to the wet ingredients and using a spatula fold them together until they are combined. 

    Pour the bread batter into your greased 9x5 inch metal bread pan.

    Bake at 350 degrees for 45-55 minutes. The bread will be lightly browned on top and a toothpick inserted in the middle will come out clean.

    What is Keto bread made of?

    Keto bread usually has a base of almond flour and/or coconut flour. Then eggs, baking powder, milk and an oil are added to form the bread. For this gluten free Italian Keto bread I also added spices, parmesan cheese and olive oil to give the bread a delicious flavor.

    My bread may be a bit more yellow than yours because I used farm fresh duck eggs for this recipe. Duck eggs tend to have a darker yolk than chicken eggs and will give your bread a darker color.

    How do I store my Keto bread?

    This gluten free Italian keto bread is best stored in the refrigerator. Since there are no preservatives this bread won't last for more than a couple of days on your countertop before it goes bad. Especially if the temperature is warm or if moisture gets into the container you are storing the bread in.

    Can I freeze this gluten free Italian keto bread?

    Yes! This bread recipe freezes really well. I love to make extra loaves to freeze and then defrost when I want them to go with dinner or for lunches. I wrap the bread in tinfoil and then store it in a freezer safe bag. You could also store this bread in a freezer safe container.

    You may be wondering why a gluten free recipe website is giving you a keto or low carb recipe. I don't eat a low carb or keto diet personally, but I have found that keto breads hold together really well, have a nice texture and are delicious. This makes them a great alternative to buying expensive gluten free bread at the grocery store.

    This easy recipe for gluten free bagels are boiled and then baked to get the perfect texture. These homemade bagels are made with yeast and I used everything seasoning on top. They are perfect for breakfast or a snack with cream cheese spread on them.

    Buying gluten free bagels can get expensive! I found some of the brands upset my gut and others were too dry for me. So I started testing making my own. I think what is key for this gluten free version is boiling them in molasses water.

    Ingredients

    Warm Water
    Active Dry Yeast
    Honey
    Gluten Free Flour
    Sea Salt
    Unsalted Butter
    Baking Soda
    Molasses
    Egg

    Instructions

    Preheat your oven to 425 degrees. Line a baking sheet with parchment paper and set aside. 

    In a small bowl add the warm water and honey. Sprinkle the yeast on top and let stand for 5-10 minutes until the mixture starts to get foamy on top. 

    In the bowl of your stand mixer beat together the gluten free flour, salt and butter. You can use your dough hook or the beater at this point. Add the yeast mixture and blend until a dough forms.

    Divide the dough into five even balls. Form each ball into a bagel shape and place on the baking sheet.

    Bring a large pot of water to a boil. Add the baking soda and molasses to the boiling water.

    Carefully lower 1-2 bagels at a time into the boiling water. Boil on one side for 3 minutes and then flip and boil on the other side for 1 minute. Carefully remove them from the pot and place them on the baking sheet.

    In a small bowl beat the egg until frothy. Brush each bagel with egg and then sprinkle with salt or everything bagel seasoning. 

    Bake at 425 degrees for 20-25 minutes. The bagels will be golden brown when they are done.

    Let them cool completely before storing them in an airtight container.?

    What can I make with gluten free bagels?

    I'm a big fan of eating my gluten free bagels with whipped cream cheese on them. But, I also love a good bagel sandwich with mayonnaise, lettuce, tomatoes, cheddar cheese and turkey. For a breakfast version I fry eggs, melt cheese on them and spread mayonnaise on my bagel for a breakfast sandwich.

    Can I freeze my gluten free bagels?

    Yes! Bagels can be frozen in a freezer safe container or bags. I like to freeze them individually so I can get one out at a time as I want them. Although, this recipe makes 5 bagels and they go pretty quickly at our house. You may want to double this recipe so you have bagels to freeze for later.

    Do I need to use eggs on my bagels?

    In my opinion, yes you should use an egg or egg substitute on your gluten free bagels. The egg will help brown and have a nice outer layer like a bagel you would purchase in the store.

    Eggs also add moisture to the outside of the bagel, if you can't use eggs you need to substitute with either flax seed meal and water or applesauce. You could use a combination of the two, but it will alter the flavor and texture some.

    Since gluten free breads and bagels don't rise as much as ones made with wheat it's important to use the boiling process. The bagels really puff up in the water and then continue to rise a little when they are baked. It really helps you to get a fluffier bagel that doesn't have a dry texture.

    Can I roast raw peanuts in an air fryer?

    Yes! I love to roast raw peanuts and other nut varieties in my air fryer. When you make homemade roasted peanuts you get to control the ingredients. This includes using healthier oils and controlling the spice level.

    How long does it take to roast peanuts in the air fryer?

    Its' so quick! I roasted the peanuts in this recipe for 11 minutes at 330 degrees. The key to perfect peanuts is to not leave them in the air fryer when they are done. As soon as they are done frying I pour them onto a parchment lined baking sheet to cool.

    Let the spicy roasted peanuts cool completely on the baking sheet before moving them to a sealed container or bag to store them. They are perfect for a snack or to pack in lunches.

    Do I need to wash peanuts before roasting?

    I buy my raw peanuts already shelled and I don't wash them before roasting. If you are shelling your own peanuts you may want to wash them before roasting, although I don't think it's completely necessary.

    If you do choose to wash your peanuts be sure that they are completely dry before you mix them with the coating ingredients. If the peanuts are still wet the oil and spices will not stick to them.

    Choosing Your Air Fryer

    When I first got my air fryer a couple of years ago the options were pretty limited, but now there are a lot of versions on the market. I highly suggest getting a five quart or larger model.

    It's so nice to be able to fit a 32 ounce bag of frozen broccoli or tater tots in and cook them in one batch. I've also found the larger size gives enough room to fit a turkey breast, small roast or two steaks. Plus, the price difference isn't very much for the large sizes making them totally worth it.

    Gluten Free Jalapeno Poppers

    This easy recipe for baked gluten free jalapeno poppers is keto and low carb friendly. The jalapeno peppers are stuffed with cream cheese, cheddar cheese, bacon and chicken. This is a perfect party appetizer or snack!

    This is one of my favorite snacks to bring to a party. It's always a hit even if no one else is eating low carb. How hot the poppers are depends on the jalapeño peppers. I've found the spiciness of the peppers tends to vary.

    Ingredients

    Jalapeno Peppers
    Cheddar Cheese
    Cream Cheese
    Canned Chicken Breast
    Bacon
    Salsa
    Onion Powder
    Garlic Powder
    Sea Salt

    Instructions

    Preheat your oven to 400 degrees. Line a baking sheet with parchment paper and set aside.

    Clean jalapeño peppers, cut in half and place on the parchment lined baking sheet.

    Using a spoon remove the seeds and core from each pepper half. 

    In the bowl of your stand mixer combine the cheddar cheese, cream cheese, chicken, bacon, salsa, onion powder, garlic powder and sea salt. Blend the ingredients together stopping to wipe down the sides of the bowl with a spatula a couple of times. Blend until the mixture is completely combined and creamy.

    Spoon the filling mixture into each jalapeño half and place back on the baking sheet.

    Bake at 400 degrees for 30 minutes. Let the peppers cool slightly before serving.

    Store leftovers in the refrigerator in a sealed container for up to five days.

    Yes! They are a high protein and high fat snack that is perfect for a keto or low carb diet. Gluten free jalapeño poppers make a great snack to make ahead and have in the fridge. They are also great to bring to a gathering or party.

    What type of cheese do I put in gluten free jalapeño poppers?

    I prefer to use shredded cheddar cheese. It's even better if it's sharp cheddar cheese, but you could use another type of cheese if you want a milder flavor. Really any cheese with a similar texture to cheddar cheese will work. It's important that it will melted easily and blend well with the other ingredients.

    Ingredients

    • ½ cup Cheddar Cheese, shredded
    • 8 ounces Cream Cheese, softened
    • 1 - 12.5 ounce Canned Chicken Breast, drained
    • 6 strips Bacon, cooked and coarsely chopped
    • ¼ cup Salsa
    • ½ tsp. Onion Powder
    • ½ tsp. Garlic Powder
    • ½ tsp. Sea Salt

    Storage

    If you have leftover poppers or want to make a batch to have in the refrigerator for snacks they will last for up to five days in the fridge in a sealed container. I don't suggest freezing them because the cooked jalapeño peppers become too mushy.

    Top Tip

    If you don't have bacon you could omit it, but I highly suggest adding it in. The bacon gives the gluten free jalapeño poppers a nice smoky flavor. I like to cook the bacon the day before and save six pieces for this recipe. The bacon is easy to chop up cold from the refrigerator.
