    Gluten Free Cheesy Pinto Beans

    This easy recipe for gluten free cheesy pinto beans is delicious as a dip with tortilla chips or in your bean burritos. This bean dip recipe is baked with cheese on top and served hot. It is a Mexican style bean dish full of flavor and spices.

    I like to serve this dish hot right of the oven, but bean dip recipe is also delicious cold out the refrigerator the next day too. If the dip is a bit too thick the next day you can add 1 tablespoon olive oil and reheat to make the dish creamy again.

    Ingredients

    • Canned Pinto Beans
    • Chicken Stock
    • Olive Oil
    • Yellow Onion
    • Minced Garlic
    • Smoked Paprika
    • Chili Powder
    • Ground Cumin
    • Sea Salt

    • Monterrey Jack Cheese

    Instructions

    Preheat your oven to 400 degrees.

    In a food processor or blender puree 1 can of pinto beans (drained and rinsed) with the chicken stock. Set aside.

    In a skillet over medium heat add the olive oil and cook the onions and minced garlic until the onions are translucent, about 3-4 minutes. Add the spices and cook 1-2 minutes more.

    Add the can of pinto beans, the bean puree, ½ cup cheddar cheese and ½ cup monterrey jack cheese to the onion mixture and stir to combine.

    Pour into a 2 quart or 8x8 glass baking dish. Top with remaining cheese.

    Bake at 400 degrees for 10 minutes. The beans will be bubbling around the edges when they are done.

    What can I add to beans for flavor?

    My favorite options to add flavor are onions, minced garlic and of course spices. For this recipe I combined smoked paprika, chili powder, cumin and salt to give these beans lots of flavor. You can use regular ground paprika, but smoked has a lot more flavor in my opinion.

    What tastes good with pinto bean dip?

    I love to serve these gluten free cheesy pinto beans with tortilla chips as a snack. They are perfect on a gluten free tortilla shell to make a bean burrito or with meat and veggie. I also enjoy this recipe as a side dish with rice and barbecued meat.

    Can I keep these cheesy pinto beans warm in a crockpot for a party?

    Yes, with a little planning this works well for gatherings! Bake the beans per the recipe instructions first, then transfer them to your crockpot and set it to warm. I would not leave them on warm for more than 2 hours as they can dry out. If they start to thicken up too much you can stir in a small splash of chicken stock to bring the creamy texture back.

    For the creamiest texture make sure you blend one full can of pinto beans with the chicken stock until completely smooth before adding it to the skillet.     Gluten Free Scotch Eggs with Honey Mustard Dipping Sauce

    This easy recipe for oven baked gluten free scotch eggs with honey mustard dipping sauce is made with boiled eggs, sausage and gluten free bread crumbs. The scotch eggs are delicious on their own, but the special sauce makes them even better. I used turkey sausage for mine, but you could also use pork sausage for a rich treat.

    For the recipe I split one pound of sausage into five equal sections. Then, I flatten the section in my hand as evenly as possible. I wrap the sausage around the boiled egg (with the shell removed) and make sure the entire outside of the egg is coated.

    Next in a small bowl I have one egg that is beaten. I roll the sausage coated egg in the beaten egg and then roll it in the gluten free bread crumbs. Place the final product on a baking sheet or in a baking dish and bake for 30 to 35 minutes. The outside will be browned and the sausage will be completely cooked when the scotch egg is done.

    Ingredients

    • Turkey Sausage or Pork Sausage

    • Gluten Free Bread Crumbs

    Instructions

    Preheat your oven to 400 degrees.

    In a small bowl mix the gluten free bread crumbs, salt and pepper.

    In another small bowl lightly beat the egg for rolling the scotch eggs in.

    Divide the pound of ground sausage into five portions. Take a portion and flatten it out evenly in your hand. Wrap the sausage patty around the egg until the entire surface of the egg is covered.

    Roll the sausage wrapped egg in the beaten and egg and then the crumb mixture. Place on a baking sheet. Repeat this step four more times. Be sure to leave room between each egg so they cook evenly.

    Bake the scotch eggs at 400 degrees for 30 minutes. The eggs will be browned and the juice around them will be clear or slightly browned when they are done.

    While the scotch eggs are baking make the honey mustard dipping sauce. In a bowl or jar add the mayonnaise, mustard and honey. Using a whisk or immersion blender blend the ingredients together until smooth and combined. Store in a sealed container in the refrigerator.

    Let the scotch eggs cool slightly and then remove them from the baking sheet with a turner.

    Serve them immediately warm with the dipping sauce or refrigerate them for at least 2 hours and serve cold with the dipping sauce.

    What is gluten cross contamination?

    If you aren't used to cooking gluten free you may not know that you can cross contaminate. You may have the best intentions to serve gluten free food for you family and friends, but still make them sick.

    You need to remember to make the gluten free food separately. Don't use the same bowls, spoons, mixer blade, etc. until they have been washed thoroughly with soap and water.

    I would start with making the gluten free snacks and then store them separately from the other snacks you make. By making the gluten free treats first you won't have to worry about cross contamination with the other yummy things you are making to serve.

    Yes! My favorite pasta to use is Jovial Gluten Free Brown Rice Farfalle pasta. The brown rice pasta holds together the best when I shake is half way through cooking in the air fryer basket to separate the pieces of pasta.

    How long does it take to make gluten free pasta chips in the air fryer?

    Like many gluten free foods it takes a bit longer to make gluten free pasta chips that it does using regular wheat pasta. I cooked these chips at 400 degrees for ten minutes. At the five minute mark I pulled the air fryer basket out and shook the chips so they weren't clumped together.

    I let the pasta chips cook for another five minutes and then poured them into a bowl to cool. They will be very hot and continue to cook a bit after you have poured them out to cool.

    You could really add any seasoning blend you want or omit the seasoning all together and just add some salt. It is key that you add enough olive oil so the pasta doesn't clump together. This will help when you open the air fryer half way through cooking and shake the pasta to separate it.

    Instructions

    Preheat your oven to 350 degrees. Line two baking sheets with parchment paper and set aside.

    Shred the zucchini and press out any extra moisture. Add the zucchini, coconut oil, almond butter, coconut sugar, egg, avocado oil and vanilla extract to the bowl of your stand mixer. Blend until the ingredients are combined.

    Add the almond flour, coconut flour, rolled oats, baking soda, salt, xanthan gum, cinnamon, chia seeds, protein powder and cocoa powder to the wet ingredients and blend until combined.

    Add the chocolate chips and chopped walnuts to the dough and blend or stir until they are incorporated into the dough.

    Using a large cookie scoop or tablespoon measure out the cookies and place on the baking sheets. Press each cookie down with the palm of your hand. These cookies will not spread much while baking.

    Bake at 350 degrees for 20 minutes.

    If you would like you can sprinkle some coarse sea salt on top of the hot cookies when they come out of the oven.

    Let the cookies cool completely before storing in an air tight container.

    Do gluten free chocolate breakfast cookies take longer to bake?

    Yes, gluten free chocolate breakfast cookies do tend to take longer to bake than cookies made with a gluten flour. The outside of the cookie will be browned, but they may not be cooked through in the center.
     
    If you are having this issue you can lower the oven temperature and bake the cookies a bit longer. I also only bake one baking sheet at a time of gluten free cookies. They need to be evenly heated to cook correctly.

    How long will these breakfast cookies last?

    These cookies will last about a week in an air tight container. You can store them on the counter or in the refrigerator. You can also freeze these cookies in a freezer safe container for up to a month.
     
    I like to freeze a few cookies in a container so I can take them out and add them to lunches. They are great to have in case I haven't planned ahead with something else. I also like to double the batch so we can eat half and freeze half.

    Description

    These healthy gluten free chocolate breakfast cookies are made with zucchini and chia seeds. This on-the-go breakfast recipe is lightly sweetened and packed with protein. These easy double chocolate cookies are a great idea for kids and lunches.


    Ingredients

    Scale

    1 cup Zucchini, shredded and pressed
    2 Tbsp. Coconut Oil, solid

    This recipe can also be made into bars using a greased 9x13 pan. Bake at 350 degrees for 30-35 minutes. Let the bars cool completely before cutting them.

    Top Tip

    I'm a big fan of doubling the recipe and freezing half of these cookies for later. It's so nice to have them for lunches or snacks for trips. I get them out the night before and let them defrost. Be sure to open the bag or container to let moisture escape so they don't get soggy.
