    Homemade Strawberry Banana Popsicles

This easy recipe for homemade strawberry banana popsicles is a creamy frozen treat! I love ice pops as a perfect summer frozen dessert. This healthy recipe has real fruit and is simple to make.

Perfect as a popsicle recipe for kids or a light easy summer dessert, these frozen fruit popsicles are a great alternative to store-bought versions.

With the sweet taste of strawberries and bananas in every bite, they're a go-to healthy strawberry banana popsicle option that fits any warm-weather occasion.

If you're wondering how to make strawberry banana popsicles that are delicious and guilt-free, this easy fruit popsicle recipe is the answer.

My favorite popsicle mold is the Norpro Frozen Ice Pop Maker. I like it's sturdy construction and that I can use wooden popsicle sticks with it. After the popsicles are frozen the lid comes off easily. I dip the mold into hot water and the ice pops come out easily.

    Ingredients

    Strawberries
    Bananas
    Milk
    Honey
    Heavy Whipping Cream
    Granulated Sugar

    Instructions

In a saucepan on medium heat cook the strawberries, bananas, milk and honey stirring occasionally until fruit is broken down and the mixture has slightly thickened.

    Let the fruit mixture cool.

Using a stand mixer on high speed whisk the heavy whipping cream and sugar until stiff peaks form.

Reserve one cup of the fruit mixture. Pour the rest of the fruit mixture into a blender and puree.

Fold the fruit mixture, fruit puree and whipped cream together.

Pour or scoop the mixture into the popsicle molds. Place the lid on your mold and the popsicle sticks into the lid. If you don't have a lid you can use plastic wrap or tin foil to hold the popsicle sticks in place.

Freeze for at least two hours before serving.

If you can't get the popsicles out of the mold you can submerge the bottom of the mold in hot water for a few seconds. Be careful not to get water into your popsicles.

    Supplies

    Top Tip

When I say fold I mean to pour the whipped cream on top of the strawberry mixture, then take a spatula and gently pull strawberry mixture over the whipped cream until they mix together. You want to keep the airiness of the whipped cream so you don't just want to stir them together.

    Frequently Asked Questions

How long will homemade popsicles last in the freezer?

I don't like to leave my homemade strawberry banana popsicles in the freezer for longer than one week. This prevents them from getting freezer burnt. Honestly, they get consumed so fast they don't normally last the entire week during the summer.

    Air Fryer Sweet Potato Wedges

plate full of gluten free air fryer sweet potato wedges

This recipe for easy Air Fryer Sweet Potato Wedges makes a perfect crispy and healthy side dish. These homemade seasoned wedges are whole 30 compliant. They can be air fried quickly and are the best way to make sweet potato wedges.

We love these air fryer sweet potato wedges for a snack also. They are great to serve for a crowd at a gathering or to make for a snack. I like to cut up and soak six sweet potatoes so I can make more than one batch at a time.

It is key when making a larger batch not to try to crowd them into your air fryer. It is best to stick to no more than two medium sweet potatoes cut up in your air fryer at a time.

If you crowd the potatoes or stack them on top of each other they won't get a crispy exterior and may not cook completely. When I'm doing multiple batches I air fry and switch them out while I make the rest of dinner.

a plate full of gluten free air fryer sweet potato wedges with gluten free homemade ranch dip

Are air fried sweet potatoes healthy?

Since these aren't deep fried they are a healthier version than wedges or fries that are. We do use oil in this recipe to bind the spices to the potatoes, but it's much less oil on the fries than you would get if they were deep fried.

I also like that by using the air fryer I can control the type of oil I use. I used olive oil in this recipe, but I could have also use avocado oil or coconut oil. I'm able to choose healthier options when I air fry the sweet potatoes at home.

    Air Fryers and Accessories

How do I air fry sweet potato wedges?

These gluten free air fryer sweet potato wedges are really simple to make. I like to soak the chopped up sweet potatoes in water for an hour before air frying.

By soaking the sweet potatoes you remove some of the excess starch. Removing the excess starch helps the sweet potatoes not to stick together and to get a crispy exterior.

Drain and pat dry the sweet potatoes. In a bowl add the sweet potatoes, olive oil, sea salt, pepper, garlic powder, onion powder and paprika. Stir to coat the sweet potatoes in the mixture.

Lay the wedges out in the air fryer basket so they aren't touching. Air fryer at 400 degrees for 11 minutes.

    Frequently Asked Questions

    Can I air fry nuts?

Yes! This recipe has raw cashews, almonds and walnuts, but you could also use other nut varieties you have on hand. If you want to use seeds you will need to line the basket of your air fryer with tin foil and lower the cooking time a bit.

    Are air fryers worth purchasing?

I love my air fryer! I was super hesitant to get one. We have a small kitchen with very little storage space and I just didn't think I needed one more small appliance. But, now I use my air fryer a lot. I make snacks like these air fryer savory herb roasted nuts, air fry frozen vegetable, hamburger patties, steaks, french fries, etc. My air fryer gets used a few nights a week.

    Top Tip

I mix these air fryer savory herb roasted nuts together in a large mixing bowl and then they air fry for 6 minutes. They are a quick and easy snack! The best part is they are healthy too.

As soon as the six minutes are up and the nuts are finished I spread them on a parchment lined baking sheet to cool. This will prevent them from sticking together. They also continue to cook a little after you take them out of the air fryer so this slows that process down.

Gluten Free Apple Cinnamon Mini Muffins

I've cut back on sugar and flours lately. But sometimes I just need a little sweet treat. These apple cinnamon mini muffins are the perfect solution. They are sweetened with dates and apples so there isn't any refined sugar added.

These mini muffins are quick and easy to make in the blender or food processor. All the ingredients except the apple chunks get tossed in and blended up. Then the apple chunks are stirred in and they are ready for the muffin tin.

This recipe makes 24 mini muffins or about 6 regular sized muffins. I like the option for the mini muffins so I can eat one or two instead of a regular sized muffin.

If you don't have liners for your mini muffin trays I highly suggest getting them. They are inexpensive and make clean up so much easier. I order mine on Amazon.

    Description

These mini muffins are made in the blender or food processor. They are quick and easy to make for a fast, delicious treat.

    Ingredients

    Scale

    1 Banana, very ripe
    ⅓ cup Apple Sauce, unsweetened
    2 Tbsp. Coconut Oil, solid
    3 Medjool Dates, pitted
    2 large Eggs
    1 ½ cups Almond Flour
    1 ½ tsp. Ground Cinnamon
    ¼ tsp. Ground Cloves
    1 tsp. Baking Soda
    1 tsp. Baking Powder
    ¼ tsp. Sea Salt
½ cup Apple, finely chopped (approximately ½ an apple)

    Instructions

    Preheat oven to 350 degrees.

In a blender or food processor (I like the food processor because it's easier to get the batter out of) blend the banana, applesauce, coconut oil, dates, eggs, almond flour, cinnamon, cloves, baking soda, baking powder and salt. Blend until all ingredients make a smooth batter.

Add the finely chopped apple to the batter and mix together.

Spoon about a tablespoon and a half into each greased or lined mini muffin cup. I always use liners so the clean up time in minimal.

I like to use the other half of the apple to put a couple of apple chunks on top. This is optional. If you are like my husband you've already eaten the other half of the apple.

Bake for 20 minutes or until golden brown.

Store covered or I like to divide them up into baggies for lunches and store them in the fridge.
