Don't Have A Frother? Here's Another Way
No frother on hand? Add the pumpkin cream ingredients to a small jar with a tight fitting lid and shake vigorously for about a minute, until the mixture thickens and turns foamy. It won't be quite as airy as a frothed version, but it still gives you that same creamy pumpkin layer on top.
Why Cold Brew Instead Of Regular Coffee
Cold brew is naturally less acidic than iced coffee made from hot brewed coffee, which makes it a smoother base for a sweet, creamy drink like this one. If you don't have cold brew on hand, a strong iced coffee or even iced espresso will still work, just expect a slightly sharper coffee flavor underneath the pumpkin cream.

Storage
For the cold brew I use this Takeya Patented Deluxe Cold Brew Coffee Maker and store the coffee in the refrigerator in the pitcher.
You can make a double or triple batch of the brown sugar cinnamon syrup to store in the refrigerator, but I don't suggest making the pumpkin cold foam ahead of time.
Top tip
When making the pumpkin cream cold foam hold the milk frother at a 45 degree angle so more air gets into the mixture and creates a thick foam.

Brown Sugar Cinnamon Syrup:
- ¼ cup Hot Water
- 2 Tbsp Brown Sugar

Pumpkin Cream Cold Foam:
- 2 Tbsp Milk
- 2 Tbsp Heavy Whipping Cream
- 2 Tbsp Pumpkin Puree
- 1 Tbsp Brown Sugar
- ½ tsp Vanilla Extract
Instructions
First you will want to make cold brew. You can use a cold brew pitcher or simply a large jar with a lid. I like to use coarse ground coffee so I don't end up with a coffee sludge at the bottom of the pitcher from fine ground coffee.
Then to make the brown sugar cinnamon syrup in a one cup glass microwave safe measuring cup or heat proof jar you will add the hot water, brown sugar, cinnamon and salt. Stir to combine and then set aside.
In a small bowl or measuring cup add the milk, heavy cream, brown sugar, pumpkin puree and vanilla. Using a milk frother whisk the ingredients until they form a stiff foam.
To assemble your drink add ice to a large cup or jar. Then pour the brown sugar cinnamon syrup over top. Pour the cold brew coffee over that and then top with the pumpkin cream cold foam. Add a glass straw or stainless straw and enjoy.
