    I love to use my cast iron skillet to make this recipe a one pan meal, but you could also use a frying pan and then a 9x13 baking dish to make this recipe. Another option would be to use a 6-7 quart dutch oven.

    To reheat your casserole put a serving on a plate and cover with a damp paper towel. In your microwave heat for 30 second intervals until it's hot.

    How do I clean and season my cast iron skillet?

    I love to cook with cast iron. It evenly heats and is easy to clean. I like to use this U-picks Cast Iron Skillet Cleaner Chainmail Scrubber that I got from Amazon. I rinse the pan with hot water to remove any loose food and leftover oil. Then I use the chainmail scrubber to lift up any bits of food left.
     
    I place the pan on the stove top at medium heat and let it dry completely. Then I pour a tablespoon of oil on the pan and rub it onto the entire inside of the pan with a paper towel. Remove the skillet from heat and it's ready for your next meal.

    Remember to never put your cast iron skillet into the dishwasher.

    What type of pasta should I use for this casserole?

    I'm a big fan of gluten free brown rice pasta. I like how well it holds up to being baked and doesn't get soggy. I also think brown rice pasta has a nice texture and is the closest thing I've found to regular wheat pasta.

    Do I need to cook the pasta before adding it to the casserole?

    No. The pasta cooks right in the oven along with the sauce and chicken juices, so there's no need to boil it first.

    Description

    This gluten free chicken parmesan pasta casserole is a cheesy, comforting dinner that combines two favorites in one dish. Chicken, gluten free pasta, and marinara sauce bake together in a single pan for an easy weeknight meal. Top with melted mozzarella and parmesan for the ultimate cozy casserole.


    Ingredients

    Scale
    • 1 Tbsp. Olive Oil
    • 2 cups Chicken Breast, cube (approximately 2 medium sized breasts)
    • 1 medium Yellow Onion, chopped
    • 2 Tbsp. Minced Garlic
    • 1 tsp. Dried Italian Seasoning
    • 2 tsp. Dried Parsley
    • 1 tsp. Sea Salt
    • ½ tsp. Coarse Ground Black Pepper
    • 1 - 25 ounce jar Marinara Sauce
    • 1 - 14.5 ounce can Diced Tomatoes
    • 2 cups Chicken Stock
    • 12 ounces Gluten Free Penne Pasta
    • 1 ½ cups Mozzarella Cheese, shredded
    • ½ cup Parmesan Cheese, grated

    Instructions

    Preheat your oven to 350 degrees.

    In a cast iron skillet or oven safe pan over medium heat add the olive oil. Cook the chicken breast until almost done. Then add the onion, garlic, italian seasoning, parsley, salt and pepper. Cook until the onions are translucent and the chicken is done.

    Add the marinara sauce, diced tomatoes, chicken stock, penne pasta, 1 cup mozzarella cheese and parmesan cheese. Stir to combine the ingredients.

    Top with the remaining ½ cup mozzarella cheese.

    Bake at 350 degrees for 35-40 minutes. The casserole will be bubbling and the pasta will be el dente when the casserole is done.
