In a cast iron skillet over medium heat cook the beef until very little pink remains. Add the chopped onions and minced garlic. Cook until the onions are translucent.
Add the stewed tomatoes, corn, tomato paste, olives, chili powder, cumin and salt. Stir to combine. Remove the pan from heat.
In your stand mixer beat together the unsalted butter, milk egg, cornmeal, flour, sugar, baking powder and salt. Spread the cornbread mixture over top of the ground beef mixture.
Bake at 350 degrees for 20 minutes or until the cornbread topping is browned.
Hint: I love to serve this casserole with sour cream and cheese on top.

- 14.5 ounce can Stewed Tomatoes
- 15 ounce can Whole Kernel Corn, drained
- 6 ounce can Tomato Paste
- 2.25 ounce can Sliced Black Olives
- 2 tsp Chili Powder
- 1 tsp Ground Cumin
- 1 tsp Sea Salt
