    Description

    These gluten free pecan pie bars have a buttery shortbread crust and a rich, gooey filling made with pure maple syrup instead of corn syrup. They're easy to slice and share, perfect for Thanksgiving or any fall gathering.


    Ingredients

    Crust:

    • 2 cups Gluten Free Flour
    • 1 cup Unsalted Butter, at room temperature
    • ⅓ cup Brown Sugar
    • ⅓ cup Pecans, finely chopped

    Filling:

    • ⅓ cup Granulated Sugar
    • ⅓ cup Brown Sugar
    • ⅓ cup Gluten Free Flour
    • 1 tsp. Sea Salt
    • 1 cup Pure Maple Syrup
    • 4 large Eggs
    • 2 tsp. Vanilla Extract
    • 1 cup Pecans, coarsely chopped

    Instructions

    Preheat your oven to 350 degrees. Grease a 9x13 pan with coconut oil or butter. If you would like to pull the bars out of the pan to cut them also line the pan with parchment paper. Set aside.

    In a food processor, using a push chopper or a knife and cutting board finely chop ⅓ cup pecans. Then, coarsely chop 1 cup of pecans. Set aside.

    In the bowl of your stand mixer add the butter and brown sugar. Beat until well blended together. Add the gluten free flour and finely chopped pecans and beat until a dough forms.

    Press the dough evenly into the 9x13 pan. Bake at 350 degrees for 25 minutes or until the edges are golden brown.

    While the crust is baking make the filling. In your stand mixer add the granulated sugar, brown sugar, gluten free flour, salt, maple syrup, eggs and vanilla. Beat until the ingredients are mixed into a runny batter. Add the coarsely chopped pecans and beat just until they are blended.

    When the crust comes out of the oven pour the filling mixture over top.

    Return the 9x13 pan to the oven and bake at 350 degrees for 30-35 minutes. The edges will pull away from the sides and be browned when the bars are done.

    Cool completely before cutting into bars.

    This recipe is really great for using up leftover sweet potatoes. You can use the sweet potatoes you served the day before to make biscuits for the next nights meal!

    I like to prepare my sweet potatoes in my instant pot (pressure pot). Put one cup of water in the bottom of the instant pot and then put the rack in to keep the sweet potatoes out of the water. I add my sweet potatoes and then using manual pressure cook for 12-18 minutes depending on how many and how large the sweet potatoes are.

    Let the steam release naturally from the instant pot and then remove the lid. Let the sweet potatoes cool completely and then remove the skins. Put the sweet potatoes in the bowl of your stand mixer and beat until they are mashed.

    I love this recipe because it comes together as an easy 9x13 sheet cake. No layering, no fuss, just mix, bake, and frost. If you'd rather make two rounds for a layered look, that works too (see the pan options below). Either way, this gluten free sweet potato cake recipe is one of those desserts that gets more requests every year.

    For the sweet potato, I cook a large sweet potato in the Instant Pot for 12 minutes on manual and let the pressure release naturally. It's faster than roasting and gives you perfectly soft, easy to mash sweet potato every time. Once it's cooled, I peel off the skin and mash it right in the bowl, or you can mash it directly in your stand mixer.

    Made with real mashed sweet potato and warm fall spices, this gluten free sweet potato cake bakes up soft, moist, and tender every time. A simple cream cheese frosting and crunch of toasted pecans make it just as at home on a holiday dessert table as it is on a Tuesday night.


    Ingredients

    Units Scale

    Cake:

    • 1 cup Unsalted Butter, at room temperature
    • ½ cup Granulated Sugar
    • ½ cup Brown Sugar
    • 2 large Eggs
    • 1 tsp. Vanilla Extract
    • 1 cup mashed Sweet Potato
    • ½ cup Milk
    • 2 cups Gluten Free Flour
    • 2 tsp. Baking Powder
    • 1 tsp. Baking Soda
    • 1 tsp. Sea Salt
    • 1 tsp. Ground Cinnamon
    • ½ tsp. Ground Nutmeg
    • ¼ tsp. Ground Cloves
    • ½ cup Pecans, roughly chopped for on top of frosting

    Frosting:

    • 8 ounces Cream Cheese
    • ½ cup Unsalted Butter, at room temperature
    • 2 tsp. Vanilla Extract
    • 2 cups Powdered Sugar, sifted to remove lumps

    Instructions

    Cook your sweet potato, let it cool, remove skin and then mash. I cook my sweet potato in my instant pot for 10 minutes on manual and then let the steam release naturally.

    Preheat your oven to 350 degrees.

    Grease a 9x13 baking pan or two 9-inch cake pans with butter or coconut oil. Set aside.

    In a mixing bowl whisk together the gluten free flour, baking powder, baking soda, salt, cinnamon, nutmeg and cloves. Set aside.

    In the bowl of your stand mixer add the butter, granulated sugar and brown sugar. Beat these ingredients together until well combined and fluffy. Add the eggs, vanilla, sweet potato and milk. Blend until ingredients are well combined.

    Add the dry ingredients to the wet ingredients and beat together until just combined and your cake batter forms.

    Pour the cake batter into the greased baking pan(s) and spread with a spoon or spatula until in an even layer.

    Baked at 350 degrees for 35 minutes or until a toothpick inserted in the center comes out clean.

    Let the cake stand in the pan for 10 minutes and then invert onto a cooling rack.

    Once the cake is cooled combine the frosting.

    In the bowl of your stand mixer add the cream cheese, room temperature butter and vanilla. Blend until all lumps are gone. You will want to stop the mixer a couple of times and using a spatula push the ingredients down the side of the mixer bowl and then blend again.

    Once those ingredients are smooth add the sifted powdered sugar and beat the frosting until it is smooth.

    Frost your completely cooled cake(s) and then if you like sprinkle chopped pecans on top.

    These slow cooker cranberry meatballs are sweet, tangy, and practically make themselves. Perfect as a holiday appetizer for a crowd or served over rice or mashed potatoes for an easy weeknight dinner, they're a gluten free favorite that always disappears fast at a party.


    Ingredients

    Scale

    Meatballs:

    • 2 pounds Ground Beef
    • ½ cup Gluten Free Bread Crumbs
    • 1 large Egg
    • ¼ cup Parmesan Cheese, finely grated
    • 1 small Yellow Onion, grated
    • 2 Tbsp. Minced Garlic
    • 1 ½ tsp. Sea Salt
    • 1 tsp. Coarse Ground Black Pepper
    • 1 Tbsp. Dried Parsley

    Sauce:

    • 1 - 14 ounce can Whole Cranberry Sauce or my Cranberry Jam
    • 1 - 6.57 ounce jar Chili Sauce
    • 1 cup Water
    • ½ cup Brown Sugar

    Instructions

    In a mixing bowl using your hands or a large spoon mix together the ground beef, gluten free bread crumbs, egg, parmesan cheese, onion, garlic, salt, pepper and parsley until well combined.

    In a mixing bowl or large measuring cup whisk together the cranberry sauce, chili sauce, water and brown sugar until well combined.

    Pour enough of the sauce mixture on the bottom of your slow cooker to coat it. Then roll the meatball mixture into golf ball sized balls and place them touching, but not on top of each other on the bottom of the slow cooker.

    After all the meatballs are in the slow cooker pour the rest of the sauce on top of the meatballs.

    Set your crockpot to low and and cook 2-4 hours until the internal temperature is a minimum of 165 degrees.

    Move the meatballs to a plate and pour a bit of sauce over them to serve with toothpicks for an appetizer or over mashed potatoes or buttered noodles for a meal.
