    Ingredients

    • Unsalted Butter
    • Granulated Sugar
    • Vanilla Extract
    • Eggs
    • Eggnog
    • Gluten Free Flour
    • Baking Powder
    • Xanthan Gum
    • Baking Soda
    • Sea Salt
    • Ground Cinnamon
    • Ground Nutmeg
    • White Chocolate Baking Bar
    • Powdered Sugar

    Instructions

    Preheat your oven to 350 degrees. Grease two 9-inch baking pans with butter or coconut oil. Set aside.

    In the bowl of your stand mixer beat the room temperature butter and sugar until combined and light and fluffy. Add the vanilla and the eggs one at a time beating the mixture in between each egg until they are incorporated. Add the eggnog and beat until blended.

    In a mixing bowl whisk together the gluten free flour, baking powder, xanthan gum, baking soda, salt, cinnamon and nutmeg.

    Add the dry ingredients to the wet mixture and beat until a smooth batter forms. Stopping to wipe down the sides of the bowl with a spatula to incorporate all the ingredients into your batter.

    Pour equal amounts of the batter into each baking pan.

    Bake at 350 degrees for 30-35 minutes. The cake with be lightly browned and toothpick will come out clean when the cake is done.

    Let the cake cool for 10 minutes in the pan and then turn out onto a cooling rack to finish cooling.

    When the cake is cooled completely make the frosting and frost the cake.

    To make the frosting melt the white chocolate in your microwave on over a double boiler.

    Place the melted chocolate, eggnog, vanilla and room temperature butter into the bowl of your stand mixer and beat until blended and smooth. Add the sifted powdered sugar one cup at a time until you have a smooth frosting.

    If the frosting isn't thick enough you can add ¼ cup of sifted powdered sugar at a time until you get the texture you want.

    I use my recipe for white chocolate frosting on a lot of the cakes I make. It is always a hit with its rich and creamy texture. For this recipe I substituted milk with eggnog to give the frosting a bit of eggnog flavor.

    Your cake should be a nice golden brown and a tooth pick inserted in the center of the cake should come out clean. You may need to bake your cake up to 5-8 minutes more. If your cake is already very brown, but not done in the center you will need to lower the oven temperature by 25 degrees and cook a bit longer.

    What I'm Watching - All the Christmas movies! I really liked A Boy Called Christmas on Netflix. I also really enjoyed Nantucket Noel and Time For Them To Come Home For Christmas on the Hallmark Channel.

    What I'm Reading - I'm reading The Sisters Sweet by Elizabeth Weiss. It's about a vaudeville act in the early 20's and flashes back to their parent's story too. So far, I'm liking this book. I also just added The Last Thing He Told Me by Laura Dave to my to-be-read list before they release the tv series starring Julia Roberts.

    What I'm Listening To - I've been listening to new album The Future by Nathaniel Rateliff and the Night Sweats in between all the Christmas music.

    What I'm Loving - I've been dealing with low phosphorous and some other low mineral levels. I'm loving Vital Proteins Beef Liver Capsules to help me get those levels up without having to cook and eat liver. I know some people love it, but I'm not one of those people.

    What I Want - I order myself a Recollections Planner every year. This is where I plan my recipes for each month and then add my tasks and appointments each week. It helps me to have a physical place to look at all of this. Plus, they're on sale right now!

    Seven Layer Salad

    This classic recipe for seven layer salad has a delicious dressing and is easy to make. This is the best healthy salad with sour cream and mayo in the dressing. This traditional recipe is gluten free and just like the old fashioned seven layer salads I remember growing up.

    This salad is a classic that we had at all the holidays growing up. It's really easy to make and is always I hit. I love to make this salad the day before so it's one less thing to worry about on holidays.

    Ideal as a make ahead salad, this cold salad can be prepped the night before, making it a stress-free option for parties and large gatherings.

    Whether you're hosting or contributing to a salad for a crowd, the seven layer salad recipe remains a timeless favorite. It's especially popular as a cookout side dish, complete with savory toppings like crispy bacon, offering a perfect balance of freshness and indulgence.

    • Iceberg Lettuce
    • Frozen Peas
    • Eggs
    • Green Onions
    • Tomatoes
    • Bacon
    • Cheddar Cheese
    • Mayonnaise
    • Sour Cream
    • Granulated Sugar
    • Sea Salt
    • Coarse Ground Black Pepper

    Instructions

    Rinse iceberg lettuce and then spin in a salad spinner to get all of the excess water off. Chop the lettuce and cover the bottom of your trifle bowl. Sprinkle with salt and pepper.

    Spread thawed peas over the lettuce layer.

    Spread the chopped hard boiled eggs over the pea layer. Sprinkle with salt and pepper.

    Chop the green onions and spread over the hard boiled egg layer.

    Coarsely chop the tomatoes and spread over the green onion layer. Sprinkle with salt and pepper.

    Crumble the bacon over the tomato layer.

    Sprinkle the shredded cheese over the bacon layer.

    In a mixing bowl whisk the mayonnaise, sour cream and sugar until thoroughly combined. Spread this dressing over the last cheese layer. Spread the dressing all the way to the edges to seal the salad. If you would like to you can sprinkle the top with cheese, bacon and green onions. However, I like mine with just the dressing.

    Cover the salad with plastic wrap and refrigerate for up to one day before serving.

    Description

    This classic seven layer salad is a timeless gluten free side dish that is perfect for potlucks, holidays, cookouts, and any gathering where you need to feed a crowd. Crisp iceberg lettuce, sweet peas, hard boiled eggs, green onions, tomatoes, crispy bacon, and cheddar cheese are layered in a trifle bowl and topped with a creamy homemade dressing that seals in all the freshness. Best of all it can be made a day ahead, making it the ultimate stress-free make ahead salad!


    Ingredients

    Scale
    • 1 medium head Iceberg Lettuce
    • 1 cup Frozen Peas, thawed
    • 6 hard boiled Eggs, chopped
    • 1 cup Green Onions, chopped
    • 2 medium Tomatoes, coarsely chopped
    • 7 slices Bacon, cooked and crumbled
    • 1 cup Cheddar Cheese, shredded
    • 1 cup Mayonnaise
    • 1 cup Sour Cream
    • 2 Tbsp. Granulated Sugar

    Is seven layer salad low carb?

    We don't usually have a lot of leftovers with this yummy salad, but if you do you can store leftovers in the fridge for one day. The key is to not mix the dressing in.

    I serve this salad by scooping it out and placing it on plates with the dressing on top. Then each person can stir their own dressing in. When you want to store this salad place the ingredients on the bottom and the dressing on top of those. Do not stir them together! Stirring them together will make the salad soggy for the next day.
