    Instant Pot Beef and Bean Burrito Casserole

    This easy recipe for instant pot gluten free beef and bean burrito casserole is the perfect weeknight meal! Using ground beef, rice and cheddar cheese this makes a creamy burrito casserole. I like to serve this instant pot Mexican casserole with some sour cream and extra cheese.

    Ingredients

    • Olive Oil
    • Yellow Onion
    • Minced Garlic
    • Chili Powder
    • Ground Cumin
    • Sea Salt
    • Coarse Ground Black Pepper
    • Beef Broth
    • Ground Beef
    • Red Kidney Beans
    • Salsa
    • Jasmine Rice
    • Cheddar Cheese
    • Sour Cream

    Instructions

    Set your Instant Pot to saute and add the olive oil to the pan. Saute the onion and garlic for 4-5 minutes until the onion is becoming translucent and soft. Add the chili powder, cumin, sea salt and black pepper. Saute for 30 seconds more.

    Add the broth, crumbled beef, beans and salsa to the Instant Pot. Stir to combine.

    Shut off the saute function. Sprinkle the rice over the other ingredients, but do not stir.

    Secure the Instant Pot lid and make sure the steam valve is closed. Using the manual setting on high cook for 18 minutes. Let the steam release naturally.

    Carefully remove the lid of your Instant Pot. Add the shredded cheese and stir to combine.

    Serve hot with a dollop of sour cream.

    Description

    This easy recipe for instant pot gluten free beef and bean burrito casserole is the perfect weeknight meal! Using ground beef, rice and cheddar cheese this makes a creamy burrito casserole. I like to serve this instant pot Mexican casserole with some sour cream and extra cheese.


    Ingredients

    Scale
    • 2 Tbsp. Olive Oil
    • 1 medium Yellow Onion, chopped
    • 2 Tbsp. Minced Garlic
    • 2 tsp. Chili Powder
    • 1 ½ tsp. Ground Cumin
    • 1 ½ tsp. Sea Salt
    • ½ tsp. Coarse Ground Black Pepper
    • 2 cups Beef Broth
    • 1 ½ pounds Ground Beef
    • 1 - 15 ounce can Red Kidney Beans, drained and rinsed
    • 1 - 16 ounce jar Salsa
    • 1 cup Jasmine Rice
    • ½ cup Cheddar Cheese, shredded
    • Sour Cream, for serving

    Instructions

    Favorite Things December 31, 2021

    This a collection of things I'm loving right now. I've included recipes that are perfect for this season and some of my favorite things. Grab a cup of your favorite beverage and scroll through all the stuff I've enjoyed this week.


    I can't believe tomorrow is the first of a new year. As I was typing the title for this article I typed 2022, so I must mentally be ready. It seems like most years it takes me weeks to get the new year correct on things.

    This week I have a lot of the new items from Hearth and Hand at Target. They just released a huge amount of home decor and kitchen items for the new year. Some is even already for Easter! Although I think all of this could be used year round.

    I'm also sharing lots of women's loungewear. I love warm comfy clothes for this time of year and there are lots of new styles to choose from. These are few of my favorites I've found.

    I'm sharing three recipes that will be perfect for meals this week. I love to eat this gluten free Italian keto bread toasted with some butter on it with soups this time of year.

    New Hearth & Hand from Magnolia at Target

    There are so many lovely pieces in this new line for your home and kitchen. I have this huge mixing bowl with a pour spout in my cart right now. I can't believe it's only $20! I'm also looking at their cool new propagation vase. Happy shopping my friends!

    What I'm Watching - I'm just finishing up the Hallmark Christmas movies for the season. The last movie, Tis the Season to be Merry, was really cute and the perfect way to end Christmas movies for the year.

    What I'm Listening To - It's on my list this weekend to listen to the Armchair Expert Podcast Holiday Spectacular 2021 on Spotify.

    What I'm Reading - I'm just a few chapters into A Letter to Three Witches by Elizabeth Bass. So far I'm really liking the characters and it's an easy read.

    What I'm Loving - I got this really large and heavy Studio McGee for Target wood cutting board for Christmas and I love it! I can't wait to use it for a charcuterie board and in photos.

    What I Want - It's cold where I am so I was just looking at warm sweaters and shirts. I like this cable stitch pullover, this floral sleeve henley top and this black plaid flannel shirt. Plus, Target has spend $40 and save $10 on clothes through tomorrow!

    Walmart still has their 8 quart Instant Pot marked down to $59. This is the simple model I have that will make lots of soup and meals. I use mine a lot!

    Speaking of Walmart, I didn't know they sold Tramontina cookware. I have a 3 quart saucepan from them that I love (similar to this stainless 3 quart saucepan). I'm looking at this 8 quart lock and drain stock pot that's under $40.

    I love this large footed porcelain serving bowl. It would be so pretty on the counter with fruit in it and for serving salads.

    I'm still loving all the 90's and early 2000's throwback clothing that is showing up in stores. This double breasted cardigan over this turtleneck sweater paired with these straight leg jeans is perfect!

    Favorite Things December 17, 2021

    one of my favorite things is an evergreen wreath with juniper and holly berries and a plaid bow on a wood door

    As we are getting close to Christmas I have lots of ideas that could be gifts or something for you. I'm all about the warm layers right now and there are so many pretty sweaters and jackets this season.

    I also have my three favorite Christmas movies from this week. We stream everything, so during the holiday season I use the Frndly App to watch Hallmark movies. They just added Lifetime, so I caught up on a few of their movies.

    I have a holiday dessert recipe and two meal ideas for you this week. I'm all about soups and cozy casseroles this time of year. I love when there are leftovers for the next night too. Are you a leftovers fan?

    What I'm Listening To - I use my Amazon Echo to play music while I work. Right now I'm listening to the playlist "My Year In Review 2021". They are all my favorite songs I played this year!

    What I'm Watching - I just watched Ghosts of Christmas Past on Lifetime and really liked it. I also enjoyed The Holiday Fix Up and Holiday in Santa Fe. I like the movies that are bringing back actors from the 90s.

    What I'm Reading - I'm about 45% into Must Love Books by Shauna Robinson and I'm loving it so far. The main character, Nora, is super likable and I've been excited to pick this book up and read more.

    What I'm Loving - We had a chimney fire last week (we are fine and so very blessed our house is fine too). There was quite a bit of smoke in the house and it is still a bit smelly. So, I ordered this Winix Air Purifier. I liked that there is just one filter to replace once a year and it is really helping with the smell in our house.

    What I Want - I want to try this Honest Beauty Hydrogel Cream. I read that it's really great for winter skin. FYI, Target has buy $30 and get $10 back on beauty right now.

    I like to use glass food storage containers with locking lids. I ordered this square glass food storage container from Target and I really like it.

    I haven't ordered anything from the Gap Home line at Walmart, but I have been looking at this sherpa lined throw blanket. It looks warm!

    If you need a hostess gift this gold colored wick trimmer and candle snuffer set are so pretty! They would make such a nice gift.

    I'm a big fan of diffusing essential oils instead of burning candles. My allergies just can't handle most candles. This cute little diffuser is $15 and on my list for kitchen.

    I was looking at Drew Barrymore's Beautiful line of kitchen appliances and utensils. I really like this 5-piece cooking utensil set and this 6 quart dutch oven.
