    Gluten Free Pecan Pie Bars

    This easy recipe for gluten free pecan pie bars is made without corn syrup. The recipe uses pure maple syrup and has a delicious shortbread crust. These dessert bars are perfect for Thanksgiving and fall gatherings!

    I cut this recipe into 16 generous sized bars. I would serve them this size if they are going to be the main dessert, but they could be cut into smaller bars if they are going on a dessert table.

    These bars are really quick and easy to put together. I like not having to roll out a pie crust! They are delicious served after a meal with a cup of coffee or tea.

    Ingredients

    • Gluten Free Flour
    • Unsalted Butter
    • Brown Sugar
    • Pecans
    • Granulated Sugar
    • Sea Salt
    • Pure Maple Syrup
    • Eggs
    • Vanilla Extract

    Instructions

    Preheat your oven to 350 degrees. Grease a 9x13 pan with coconut oil or butter. If you would like to pull the bars out of the pan to cut them also line the pan with parchment paper. Set aside.

    In a food processor, using a push chopper or a knife and cutting board finely chop ⅓ cup pecans. Then, coarsely chop 1 cup of pecans. Set aside.

    In the bowl of your stand mixer add the butter and brown sugar. Beat until well blended together. Add the gluten free flour and finely chopped pecans and beat until a dough forms.

    Press the dough evenly into the 9x13 pan. Bake at 350 degrees for 25 minutes or until the edges are golden brown.

    While the crust is baking make the filling. In your stand mixer add the granulated sugar, brown sugar, gluten free flour, salt, maple syrup, eggs and vanilla. Beat until the ingredients are mixed into a runny batter. Add the coarsely chopped pecans and beat just until they are blended.

    When the crust comes out of the oven pour the filling mixture over top.

    Return the 9x13 pan to the oven and bake at 350 degrees for 30-35 minutes. The edges will pull away from the sides and be browned when the bars are done.

    Cool completely before cutting into bars.

    Frequently Asked Questions

    How should I store these pecan pie bars?

    You can place a lid or plastic wrap over the container you baked the bars in and store them like that in the refrigerator. I also like placing each bar in a small glass container so they are ready for single servings.

    Then they can be taken out of the fridge for a quick treat or to be put into a lunch box. If they've been in the refrigerator for over three days I put the individual containers in the freezer for later.

    Can these bars be frozen?

    Yes! They do well in a freezer safe container in the freezer for up to a month. You could make these a few days or a week prior to Thanksgiving or an event you want to take them too and then freeze them so you're not rushed to make dessert while cooking the rest of the meal.

    Description

    What I'm Listening To - I've been listening to Red (Taylor's Version) by Taylor Swift while workin in the kitchen. I'm also enjoying The Pianoman at Christmas by Jamie Cullum.

    What I'm Reading - The latest issue of The Magnolia Journal just arrived and I couldn't wait to dive in. I don't get very many magazine any longer, but this one never disappoints.

    What I'm Watching - I usually like to wait for all episodes of a show to be streaming so I can binge watch it, but we've been watching The Morning Show on Apple TV weekly. It's so good!

    What I'm Loving - I continue to love my Instant Pot. I use it a lot in the winter for soups, roasts and beans. I have the 8 quart version so I can make large pots of soup and fit an entire large roast into it.

    What I Want - My favorite waffle knit pajama bottoms are old and wearing out. I looked for new ones this week and found some really great deals on them! I love this dusty pink pair and this classic black pair.

    I was looking for taper candle holders online. I found these pretty marbles ones, this copper candelabra, and these wood and metal ones I like. I ordered these bees wax taper candles for the holidays.

    I added these stoneware soup bowls to my Christmas wish list. They're so pretty!

    As the weather gets cooler I've been on the hunt for pretty sweaters. I love this ruffle sleeved sweater, this fair isle turtleneck, this pretty Christmas sweater, and this dark green cardigan.

    I've been looking at these Christmas village cake pans. I think these would be so fun to decorate and set up a display at a holiday gathering dessert table. There's a larger version too that would be pretty as a center piece.

    I was looking for gluten free advent calendars. There are some out there, but I don't love the candy ingredients. This bright advent calendar would be perfect to fill with my own gluten free candy.

    Growing up it was popular to have light up plastic santa claus and snowman decorations. I'm sure in the 80's they were a fire hazard, but this new light up santa is so much cuter!

    • Gluten Free Flour
    • Cocoa Powder

    Instructions

    These cookies are super simple to make! The brown sugar, granulated sugar, unsalted butter, vanilla and eggs go into your mixer. Mix on medium high speed until these ingredients are well blended.

    Add the flour, cocoa powder, baking powder, baking soda and salt. Mix until the dry ingredients are just incorporated with the wet ingredients. Add the chocolate chips and mix until they are blended into the dough.

    I love to use a cookie scoop to make things really easy when placing the dough on your baking sheet. A cookie scoop helps you to have uniform cookies so they bake at the same temperature and time period.

    Bake at 375 degrees for 15 minutes. The cookies edges will be slightly crisp, but the center will be soft.

    Picking the best gluten free flour is a hot topic when it comes to gluten free baking. My top three picks are King Arthur Gluten Free Measure for Measure Flour, Bob's Red Mill Gluten Free 1-to-1 Baking Flour and Namaste Foods Gluten Free Perfect Flour Blend. I've used all three of these for years and have been happy with them.

    They are all fine ground, so you don't get a gritty texture to your baked goods. Although, they do all contain xanthan gum I do still add extra in some recipes that I want extra rise and elasticity in.

    Top Tip

    This recipe is really great for using up leftover sweet potatoes. You can use the sweet potatoes you served the day before to make biscuits for the next nights meal!

    I like to prepare my sweet potatoes in my instant pot (pressure pot). Put one cup of water in the bottom of the instant pot and then put the rack in to keep the sweet potatoes out of the water. I add my sweet potatoes and then using manual pressure cook for 12-18 minutes depending on how many and how large the sweet potatoes are.

    Let the steam release naturally from the instant pot and then remove the lid. Let the sweet potatoes cool completely and then remove the skins. Put the sweet potatoes in the bowl of your stand mixer and beat until they are mashed.
