    Ingredients

    • Unsalted Butter
    • Granulated Sugar
    • Vanilla Extract
    • Eggs
    • Eggnog
    • Gluten Free Flour
    • Baking Powder
    • Baking Soda
    • Sea Salt
    • Ground Cinnamon
    • Ground Nutmeg
    • Powdered Sugar

    Instructions

    Preheat your oven to 350 degrees. Grease your bundt pan with butter or coconut oil and set aside.

    In the bowl of your stand mixer blend together the butter and sugar until it is combined. Add the vanilla extract and the eggs one at a time blending them each in before adding the next. Add the eggnog and blend into the batter thoroughly.

    In a mixing bowl whisk together the gluten free flour, baking powder, baking soda, salt, cinnamon and nutmeg. Add this mixture to the wet ingredient and beat until they are incorporated into the batter.

    Pour the cake batter into your greased bundt pan.

    Bake at 350 degrees for 45 minutes or until the cake is golden brown and a tooth pick inserted near the center comes out clean.

    Let the cake stand in the pan for 10 minutes and then flip it out onto a cooling rack.

    Let the cake cool completely before drizzling the glaze or powdered sugar over top.

    To make the glaze add the powdered sugar, vanilla and eggnog to a small bowl and beat with a fork or a whisk until all of the dry ingredient are combined. You can add more powdered sugar or eggnog to get the thickness you would like for your glaze.

    What is the difference between a cake and a bundt cake?

    There really isn't that much difference in the cake batter itself. The bundt cake recipe may call for a bit more moisture and/or baking powder as the cake is going to raise higher than a regular layer cake or sheet cake.
     
    The main difference you might find is that a bundt cake tends to have a crunchier texture on the top. I also love the ease of a bundt cake. The cake gets baked in one pan and then I either drizzle it with a glaze or sprinkle powdered sugar over the top. So much easier than frosting a layer cake!

    How do I make my gluten free cakes more moist?

    Gluten free baking tends to require more moisture or oil than when you are using regular wheat flour. For this gluten free eggnog bundt cake recipe I added the eggnog to make it moist and delicious.

    If you are using a cake recipe that isn't turning out moist I would suggest adding a bit more oil or butter. You can also add mashed banana or applesauce to help your baked goods have more moisture.

    Top Tip

    I'm a huge fan of the taste of eggnog, but I don't love the thick milk texture. So, baking with eggnog is the perfect solution! I used eggnog in this cake and the glaze I drizzled over the cake. You could also just dust the cake with powdered sugar if you would like.

    What I'm Watching - I just watched an episode of the holiday show Baking It on the Peacock App. Andy Samberg and Maya Rudolph are hosting and I liked it. It was fun to see what the contestants made and then there are four very opinionated grandmas judging the baked goods.

    What I'm Reading - I haven't finished reading anything this week, but have added The Cartiers: The Untold Story of the Family Behind the Jewelry Empire by Francesca Cartier Brickell and On a Night Like This by Lindsey Kelk.

    What I'm Listening To - I love Kelly Clarkson's album Wrapped In Red. It is a holiday classic! I've also had Amazon Music's playlist The Top 100 Most Played: Holiday on shuffle on our Amazon Echo.

    What I'm Loving - I'm constantly on the hunt for joggers that aren't too heavy or thick but are soft and fit well. I love (and am ordering another pair) of these All In Motion Joggers. They are on sale until 12/11!

    What I Want - I love checking the new product section on Thrive Market! I want to try this Dark Chocolate Sea Salt Tahini, Brownie Mix and Sir Kensington's Special Sauce (their mayonnaise is my favorite).

    These Santa Claus mugs are so cute! I'm not normally into holiday coffee mugs, but these are adorable.

    I'm looking for a new pair of black winter boots and these pairs are all in the running: double buckle combat boots, faux fur lined moto boots, studded chelsea boots and these clog boots.

    If you are looking for a little gift or stocking stuffer these pairs of silver hoops are really lovely: flat hoop earrings, plated flat hoop earrings, or thin hoop earrings.

    In the bowl of a stand mixer beat together the butter, sugar, egg, vanilla and milk.

    Add the flour, baking powder and salt to the wet ingredients. Mix together until combined.

    Using a cookie scoop measure the dough and roll into balls. Then, press your thumb in the center or use a tart press to make an indentation. Be sure not to press all the way through so your cookies don't leak.

    Add a dollop of jam to the center of each cookie.

    Bake at 350 degrees for 14 minutes or until the edges of the cookies are golden brown.

    Let the cookies cool completely on a cooling rack before you move them to an air tight container to store.

    Cookies will last in a container for up to one week.

    Can I freeze thumbprint cookies?

    Yes! These cookies freeze really well. I suggest freezing them in an airtight freezer container. When you want to defrost the cookies take them out of the container and set them on a paper towel to absorb any moisture they may have accrued while thawing.

    How do you keep thumbprint cookies from spreading too much?

    If your thumbprint cookies are spreading too much they likely have too much oil or butter in them. If the cookies are dry instead of adding more oil or butter add a tablespoon or two of milk.

    Do I have to use jam with my thumbprint cookies?

    No. You can use jam, but you can also use nut or seed butter, chocolate, or lots of other yummy fillings. Jam is my favorite thing to use though. I like to use various types of jam to have multiple colors if I'm making a cookie box or a plate for a gathering.

    Top Tip

    I filled my cookies with Smucker's Natural Strawberry Preserves . This year I didn't have homemade strawberry jam, but this tastes just like homemade. I may have eaten a spoon full as I was filling the cookies.

    These cookies are delicious with any flavor of jam in the center. They are also amazing with lemon curd in the center!

    Can you make snowball cookies with walnuts?

    Yes! You can definitely substitute the pecans with walnuts. You could also use almonds if that works better for you. I have made them with walnuts in the past also and they are still delicious.

    What do snowball cookies taste like?

    I think they have a similar flavor to shortbread (which might be why I like them so much). Shortbread is usually just butter, sugar, flour and salt. This recipe adds in vanilla and pecans. So, the two recipes are very similar.

    Why are my snowball cookies falling apart?

    If your cookies are falling apart they are too dry. You could add a tablespoon or two of butter. You could also add a tablespoon or two of milk. Start with a little and add until your cookies form a ball in your hand easily and stay together on the baking sheet.

    Description

    This easy recipe for gluten free hot cocoa cookies is the best! These cookies are simple to make and come out chewy and delicious. They use white chocolate chips instead of marshmallows and have a nice hot cocoa flavor.


    Ingredients

    Scale
    • ⅓ cup Granulated Sugar
    • ⅓ cup Brown Sugar
    • ¼ cup Buttermilk
    • ½ cup Unsalted Butter, at room temperature
    • 1 tsp. Vanilla Extract
    • 1 large Egg
    • 2 cups Gluten Free Flour
    • ⅓ cup Cocoa Powder
    • ½ tsp. Baking Powder
    • ½ tsp. Baking Soda
    • ½ tsp. Sea Salt
    • 1 cup White Chocolate Chips

    Instructions

    Preheat your oven to 375 degrees. Line your baking sheets with parchment paper and set aside.

    In the bowl of your stand mixer blend together the sugar, brown sugar, buttermilk, butter, vanilla and eggs.

    Then add the flour, cocoa powder, baking powder, baking soda and sea salt. Blend the cookies until all the ingredients are combined. Then add your white chocolate chips and blend just until they are mixed in.

    I like to use a cookie scoop, but you could also use a tablespoon to place the dough on cookie sheets. You will want to press the cookies lightly with the palm of your hand because they don't spread a lot on their own.

    Bake the cookies at 375 degrees for 12-15 minutes.

    Moving the cookies to a cooling rack and let them cool completely before storing them in an air tight container.

    I love to get my white chocolate chips at Trader Joe's, but they are seasonal there and they only have them in the fall. I try to stock up, but when I run out my second choice is Ghirardelli's white chocolate chips.
