    Ingredients

    • Olive Oil
    • Ground Beef
    • Pepperoni
    • Yellow Onion
    • Minced Garlic
    • Frozen Mushrooms or Fresh Mushrooms
    • Red Bell Pepper
    • Marinara Sauce
    • Black Olives
    • Italian Seasoning
    • Sea Salt
    • Dried Basil
    • Coarse Ground Black Pepper

    Instructions

    Add the olive oil to the metal pot in your Instant Pot and set to saute. Add the onion, garlic, mushrooms and red pepper to the bowl and saute for 2-3 minutes until slightly softened.

    Add the crumbled ground beef, roughly chopped pepperoni, marinara sauce, chopped black olives, Italian seasoning, dried basil, salt, pepper, diced tomatoes and beef broth to the Instant Pot bowl. Stir to combine.

    Set the Instant Pot to manual  and cook for 18 minutes. When the soup is done let the steam release naturally.

    Carefully take the lid off the Instant Pot and stir the shredded mozzarella cheese into the hot soup.

    Serve with grated parmesan cheese sprinkled on top.

    Description

    • 1 pound Ground Beef
    • 6 ounce package Pepperoni, roughly chopped
    • 1 medium Yellow Onion, chopped
    • 1 Tbsp Minced Garlic
    • 10 ounce package Frozen Mushrooms or Fresh Mushrooms
    • 1 Red Bell Pepper, chopped
    • 25 ounce jar Marinara Sauce
    • 6 ounce can Black Olives, roughly chopped
    • 2 tsp Italian Seasoning
    • 1 tsp Dried Basil
    • 1 tsp Sea Salt
    • ½ tsp Coarse Ground Black Pepper
    • 14.5 ounce can Diced Tomatoes
    • 32 ounce carton Beef Broth
    • 1 cup Mozzarella Cheese, shredded
    • ¼ cup Parmesan Cheese, grated for serving

    Instructions

    Add the olive oil to the metal pot in your Instant Pot and set to saute. Add the onion, garlic, mushrooms and red pepper to the bowl and saute for 2-3 minutes until slightly softened.

    How do I clean my instant pot after cooking savory dishes?

    After using your instant pot for savory dishes or in this case using spices you may notice that the silicone ring in the lid has an odor. This is simple to take care of!

    Wash the metal pot insert by hand or in the dishwasher. Remove the rubber seal from the lid and wash both the lid (do not submerge the lid in water) and the ring. Place the ring back into the lid.

    Put the metal pot into the pressure cooker. Add one cup water and one cup white vinegar to the metal pot. Place the lid on the pot and seal. Manually cook for 3 minutes. Let the steam release naturally.

    After the liquid has cooled, dump it out and rinse the pot, lid and seal. Your pot, lid and seal shouldn't have any lingering odors.

    Can this instant pot pizza soup be frozen?

    Yes! This soup is perfect to make ahead and freeze or to freeze your leftovers to have a quick meal to reheat. Be sure to use a freezer safe container so it doesn't get freezer burnt and this soup will last for up to a month in your freezer.

    I'm sharing my home and women's clothes under $50 from the Nordstrom Winter Sale that just started. I have to admit that I rarely buy anything at Nordstrom unless it's on sale. I like to wait until the few sales they have each year to add nice items to my kitchen and wardrobe.

    I'm just finishing up a book I'm loving and I also shared a couple of books that I just added to me to-be-read list. I also shared a new to me television show that we've been watching that makes me want a chateau in the French countryside!

    • Baking Powder
    • Sea Salt

    Instructions

    Preheat your oven to 375 degrees. Line a baking sheet with parchment paper and set aside.

    In the bowl of your stand mixer add the gluten free flour, baking powder, salt, pepper, buttermilk and eggs. Beat together until all ingredients are incorporated. The dough will be slightly lumpy.

    Using a spatula or tablespoon drop even portions of the dough onto the baking sheet leaving room for the biscuits to spread and rise. I make twelve generous sized biscuits with this recipe.

    Bake the biscuits at 375 degrees for 15 minutes. The biscuits will be firm and lightly browned on the bottom when done.

    If you would like to add some golden color to the top of the biscuits, turn your broiler on high and broil very briefly while watching the biscuits so they don't burn.

    What is the difference between a drop biscuit and a rolled biscuit?

    These gluten free buttermilk drop biscuits have more liquid in the dough, while rolled biscuits will have a stiff dough with less moisture. A drop biscuit is literally dropped onto the baking sheet using a tablespoon. Rolled biscuits are rolled out and then cut into biscuits before being placed on a baking sheet.

    Drop biscuits are a bit less uniform, but easier and quicker to make since you get to skip the step of rolling out and cutting the dough.

    What does buttermilk do to biscuits?

    Buttermilk reacts with the baking powder and helps the biscuits to rise. You can't replace the buttermilk with regular milk or you won't get a fluffy biscuit that rises in the oven. Buttermilk is more acidic than regular milk and that causes the reaction with the leavening agent.

    For the cake you see in these photos I made three 8-inch cakes by using the recipe below for two of the cakes and then cutting the recipe in half for a third cake. For the filling I mixed strawberry jam with some of the pink vanilla buttercream frosting to give a nice strawberry flavor between each layer.

    Instructions

    Preheat your oven to 350 degrees. Grease two 9-inch with butter or coconut oil and set aside.

    In a mixing bowl sift together the gluten free flour, baking powder, baking soda and salt. Set aside.

    In the bowl of your stand mixer beat together the room temperature butter and granulated sugar until smooth. Add the egg whites, vanilla extract, almond extract, milk and sour cream. Blend the ingredients together. The mixture will be a bit lumpy.

    Add the dry ingredients to the wet ingredients and beat together until mostly smooth. You may still have a few small butter lumps in the batter and that is fine.

    Description

    This easy recipe for gluten free vanilla cake is moist and fluffy! This simple dessert is made from scratch and is perfect for a gluten free birthday cake. I used my pink vanilla buttercream frosting on this cake for a lovely color.


    Ingredients

    Scale
    • 2 cups Gluten Free Flour
    • 2 tsp Baking Powder
    • ½ tsp Baking Soda
    • ½ tsp Sea Salt
    • ½ cup Unsalted Butter, at room temperature
    • 1 ½ cups Granulated Sugar
    • 4 Egg Whites, at room temperature
    • 2 tsp Vanilla Extract
    • ½ tsp Almond Extract
    • ⅔ cup Milk
    • ⅔ cup Sour Cream

    Instructions

    Preheat your oven to 350 degrees. Grease two 9-inch with butter or coconut oil and set aside.

    In a mixing bowl sift together the gluten free flour, baking powder, baking soda and salt. Set aside.

    In the bowl of your stand mixer beat together the room temperature butter and granulated sugar until smooth. Add the egg whites, vanilla extract, almond extract, milk and sour cream. Blend the ingredients together. The mixture will be a bit lumpy.

    Add the dry ingredients to the wet ingredients and beat together until mostly smooth. You may still have a few small butter lumps in the batter and that is fine.

    How do I make my gluten free cakes more moist?
