    Gluten Free One Pot Hamburger Helper Copycat

    Ingredients

    • Olive Oil
    • Ground Beef
    • Onion
    • Minced Garlic
    • Sea Salt
    • Coarse Ground Black Pepper
    • Chili Powder
    • Paprika
    • Gluten Free Brown Rice Elbow Pasta
    • Beef Broth
    • Milk
    • Cheddar Cheese
    • Worcestershire Sauce
    • Ketchup
    • Spicy Brown Mustard

    Instructions

    In a large 6-quart dutch oven over medium heat add the olive oil and begin to brown the ground beef. After most of the ground beef is cooked with just a little pink showing add the onion and minced garlic. Cook for a couple more minutes until the onion is translucent. 

    Add the salt, pepper, chili powder and paprika and cook for about one minute.

    Add the elbow pasta, beef broth and milk to the mixture. Bring to a gentle boil and simmer for 7-8 minutes stirring often until the pasta is el dente. I like to test my pasta with a fork to make sure I can easily cut it in half and there isn't any crunch left to the pasta.

    Remove the dutch oven from heat and stir in the shredded cheese, Worcestershire sauce, ketchup and mustard until well blended and creamy.

    Serve immediately.

    Description

    Ingredients

    • 2 cups Milk
    • 1 cup Cheddar Cheese, shredded
    • 2 Tbsp. Worcestershire Sauce
    • 1 Tbsp. Ketchup
    • 2 tsp. Spicy Brown Mustard

    Instructions

    Steamed vegetables are a great side dish with this recipe. My seven layer salad or easy pea salad would also be really great options for a side dishes.

    What type of pot should I use for this recipe?

    I use my 6-quart cast iron dutch oven to make this recipe. This allows me to brown the meat and saute the onions all in one pot. Then I just add the rest of the ingredients and simmer until the meal is done.

    I don't think you need an expensive dutch oven for making meals. This Lodge dutch oven or this Beautiful dutch oven are also really great choices.

    Gluten Free Air Fryer Fajitas

    These Gluten Free Air Fryer Fajitas are one of my favorite quick weeknight dinners because they are ready in just 27 minutes, require almost no cleanup, and taste so good that my family requests them constantly. Steak strips with red, orange, and yellow bell peppers and onion get tossed in a homemade fajita seasoning of chili powder, smoked paprika, cumin, garlic powder, and oregano and then air fried at 390 degrees for 12 minutes.

    Everything comes out perfectly cooked with beautifully caramelized peppers and juicy tender steak every single time.

    I love serving these in a bowl over jasmine rice with a big scoop of guacamole on top but they are equally delicious in gluten free tortillas with all your favorite fajita toppings.

    The homemade seasoning blend is so much better than a store bought packet and you probably already have everything you need in your spice cabinet.

    This is one of those recipes that looks and tastes impressive but is genuinely simple enough for any weeknight.

    These Gluten Free Air Fryer Fajitas are juicy steak strips with red, orange, and yellow bell peppers and onion tossed in a bold homemade seasoning of chili powder, smoked paprika, cumin, garlic, and oregano and air fried at 390 degrees for just 12 minutes. The result is the most flavorful and satisfying steak fajitas that are perfectly cooked every single time with minimal prep and almost no cleanup. Naturally gluten free and dairy free and perfect served in tortillas or over jasmine rice with guacamole for an easy weeknight dinner the whole family will love!


    Ingredients

    • 1 ½ pounds Steak, cut into strips

    Storage

    Store leftover gluten free air fryer fajitas in an airtight container in the refrigerator for up to 4 days. To reheat place the fajita mixture back in the air fryer at 350 degrees for 3 to 4 minutes until heated through or reheat in a skillet over medium heat for a few minutes. The steak and peppers reheat beautifully and are just as delicious the next day in a bowl over rice or wrapped in a warm gluten free tortilla.

    Top Tip

    Do not overcrowd the air fryer basket. If you are making the full recipe with 1.5 pounds of steak and all the peppers and onion you may need to work in two batches depending on the size of your air fryer. Overcrowding causes the vegetables and steak to steam rather than caramelize which means you lose the beautiful color and slightly charred flavor that makes these fajitas so good. Give everything room to breathe and stir at the 6 minute mark for even cooking.

    What I'm Loving - I've been drinking more smoothies lately and I've been loving Barney Butter Unsweetened Almond Butter Powder. There's no dealing with the oil separating or trying to stir it!

    What I Want - I want to try Native's new line of face wash, facial moisturizer and facial serum in brightening citrus and bergamot. We love their deodorant and bar soaps.

    Ingredients

    • Ground Beef
    • Gluten Free Bread Crumbs
    • Egg
    • Parmesan Cheese

    • Tomato Paste
    • Sea Salt

    • Ketchup

    • Beef Broth

    Instructions

    In a four cup measuring cup or small bowl mix together the barbecue sauce ingredients: ketchup, brown sugar, finely chopped yellow onion, apple cider vinegar, beef broth, sea salt, coarse ground black pepper, ground paprika, ground cumin and worcestershire sauce.

    Pour enough of the barbecue sauce into the bowl of your slow cooker to cover the bottom. Set the rest aside.

    In a mixing bowl blend together the ground beef, bread crumbs, egg, parmesan cheese, grated onion, minced garlic, tomato paste, sea salt, coarse ground black pepper and chili powder with your hands or a spoon.

    Form the meatball mixture into golf ball sized balls and place them in your slow cooker. Do not stack any of them on top of each other. Make sure you have them on the bottom of the slow cooker bowl.

    Pour the remaining barbecue sauce over the meatballs.

    Cover your slow cooker and cook on low for 3-4 hours. Meatballs should be browned and a minimum of 160 degrees on the inside when tested with a thermometer.

    Serve hot as an appetizer or over buttered pasta or with mashed potatoes for dinner.

    How do I make gluten free meatballs from scratch?

    The key is gluten free breadcrumbs. There are several brands that have certified gluten free breadcrumbs. You can also use rice crumbs. I've used both and been happy with both options.

    The gluten free bread or rice crumbs along with the egg will help the meatballs to hold their shape. Once the meatballs are in the crockpot I don't stir them until they are fully cooked so they don't fall apart.

    What do you serve barbecue meatballs with?

    I like to use these meatballs as an appetizer and I serve them on their own with toothpicks. They are also delicious served with mashed potatoes or buttered pasta for a meal.

    • 1 tsp. Sea Salt
    • ½ tsp. Coarse Ground Black Pepper
    • 2 tsp. Ground Paprika
    • 1 tsp. Ground Cumin
    • 1 Tbsp. Worcestershire Sauce

    Instructions

    In a four cup measuring cup or small bowl mix together the barbecue sauce ingredients: ketchup, brown sugar, finely chopped yellow onion, apple cider vinegar, beef broth, sea salt, coarse ground black pepper, ground paprika, ground cumin and worcestershire sauce.

    Pour enough of the barbecue sauce into the bowl of your slow cooker to cover the bottom. Set the rest aside.

    In a mixing bowl blend together the ground beef, bread crumbs, egg, parmesan cheese, grated onion, minced garlic, tomato paste, sea salt, coarse ground black pepper and chili powder with your hands or a spoon.

    Form the meatball mixture into golf ball sized balls and place them in your slow cooker. Do not stack any of them on top of each other. Make sure you have them on the bottom of the slow cooker bowl.

    Pour the remaining barbecue sauce over the meatballs.

    Cover your slow cooker and cook on low for 3-4 hours. Meatballs should be browned and a minimum of 160 degrees on the inside when tested with a thermometer.

    Serve hot as an appetizer or over buttered pasta or with mashed potatoes for dinner.
