    Ingredients

    • Cannellini Beans
    • Minced Garlic
    • Carrots
    • Yellow Onion
    • Olive Oil
    • Sea Salt
    • Italian Seasoning
    • Dried Basil
    • Coarse Ground Black Pepper
    • Italian Style Turkey Sausage
    • Diced Tomatoes
    • Kale
    • Bay Leaves
    • Gluten Free Pasta Shells
    • Chicken Broth
    • Parmesan Cheese

    Instructions

    Set your Instant Pot to saute and add olive oil to the pot. Add the garlic, carrots and onion to the pot and saute until the onion is translucent and the carrots are beginning to soften. 

    Add the rinsed beans, salt, Italian seasoning, dried basil, pepper, diced tomatoes, crumbled sausage, kale, bay leaves and broth. Stir to combine. 

    Add the uncooked pasta on top, but do not stir to combine. Gently press the pasta down a little until it is covered in liquid. This will prevent your pasta from burning on the bottom of the pot.

    Secure the lid and set to not vent. Using the manual setting cook for 15 minutes. Let the pressure release naturally for 10 minutes and then manually release the steam.

    Carefully remove the lid. Remove the bay leaves. Add the grated parmesan cheese and stir into the soup.

    Serve the soup hot with more parmesan cheese sprinkled on top.

    Ingredients

    • 2 - 15.5 ounce cans Cannellini Beans, drained and rinsed
    • 2 Tbsp. Minced Garlic
    • 4 large Carrots, chopped
    • 1 medium Yellow Onion, chopped
    • 2 Tbsp. Olive Oil
    • 1 tsp. Sea Salt
    • 1 tsp. Italian Seasoning
    • 1 tsp. Dried Basil
    • ½ tsp. Coarse Ground Black Pepper
    • 16 ounce Italian Style Turkey Sausage
    • 14.5 ounce can Diced Tomatoes
    • 1 bunch Kale, stem removed and coarsely chopped
    • 2 Bay Leaves
    • 12 ounce box Gluten Free Pasta Shells
    • 32 ounce carton Chicken Broth
    • 2 cups Water
    • ½ cup Parmesan Cheese, grated

    Instructions

    Set your Instant Pot to saute and add olive oil to the pot. Add the garlic, carrots and onion to the pot and saute until the onion is translucent and the carrots are beginning to soften. 

    Add the rinsed beans, salt, Italian seasoning, dried basil, pepper, diced tomatoes, crumbled sausage, kale, bay leaves and broth. Stir to combine.

    How do I clean my instant pot after cooking savory dishes?

    After using your instant pot for savory dishes or in this case using spices you may notice that the silicone ring in the lid has an odor. This is simple to take care of!

    Wash the metal pot insert by hand or in the dishwasher. Remove the rubber seal from the lid and wash both the lid (don't submerge the lid in water) and the ring. Place the ring back into the lid.

    Put the metal pot into the pressure cooker. Add one cup water and one cup white vinegar to the metal pot. Place the lid on the pot and seal. Manually cook for 3 minutes. Let the steam release naturally.

    Do I have to use turkey sausage in this recipe?

    No. You could omit the turkey sausage and still have a delicious soup. Since the turkey sausage I used for this recipe had some Italian seasonings added I would increase the Italian seasoning in this recipe to 2 teaspoons.

    You could also use unseasoned sausage and also add the extra Italian seasoning to get the same flavor. I like to add the meat to this recipe to make it extra hearty with more protein, but that is completely optional.

    Ingredients

    • Baby Potatoes
    • Avocado Oil
    • Sea Salt
    • Coarse Ground Black Pepper
    • Pesto or use my Gluten Free Homemade Walnut Pesto Recipe
    • Parmesan Cheese

    Instructions

    Wash the baby potatoes and then cut them all in half. If some of the baby potatoes are a lot larger than the others you may need to cut them into quarters. It's important that the potato chunks are all about the same size so they cook evenly.

    In a large bowl add the cut baby potatoes, avocado oil, salt and pepper. Mix to coat the potatoes in oil and seasoning.

    Pour the potato mixture evenly into the basket of your air fryer. Air Fry at 390 degrees for 12-15 minutes. Shake the air fryer basket once or twice in the middle of cooking to make sure all of the potatoes get browned. Test the largest potato piece with a fork to make sure it's done. If it's not done air fryer for 2-3 minutes more.

    Pour hot potatoes back into a large bowl. Add the pesto and grated parmesan cheese. Stir the mixture to melt the cheese and coat the potatoes.

    Serve immediately warm or serve cold.

    Top Tip

    For the pesto in this recipe I either use this Barilla Rustic Basil Pesto or I use my recipe for Gluten Free Homemade Walnut Pesto. One of my favorite things to grow in the garden, flower beds and containers is basil. It's really easy to start from seed, is prolific all summer long and makes delicious fresh pesto.

    Regular fryers use oil to cook your food. An air fryer uses circulated air to evenly cook your food without the need for oil. This eliminates excess oils and the calories that come with them!
     
    I like to either spray oil onto what I'm frying or use oil in the recipe to help seasoning stick to your food. For this recipe I mix the ingredients with avocado oil so that helps the spices stick to the potatoes. This little bit of oil will also help the outside of the potatoes get a nice crispiness.

    How do I clean my air fryer?

    Air fryers are so easy to clean! Remove the basket from the air fryer and take the tray out of the basket. Using soap and water wash the two parts and rinse clean. Do not submerge your air fryer unit in water.

    If the inside of your air fryer is dirty you can lightly wipe clean with a wet cloth. I rarely notice the inside of my air fryer needing to be cleaned. Usually this only happens if I overfill the basket.

    What I'm Watching - This isn't a new show, but it was new to me. We've been watching on the Peacock App Escape to the Chateau. I've loved watching them remodel this huge chateau and estate!

    What I'm Reading - I'm just finishing up Lost and Found in Paris by Lian Dolan. It's so good! I can't wait to see how it ends. I just added Sister Stardust by Jane Green and The Good Left Undone by Adriana Trigiani to my to-be-read list.

    What I'm Loving - These Larabar Banana Chocolate Chip bars are my new favorite sweet snack. I order them from Target because they regularly have online coupons for Larabar.

    What I Want - I live in t-shirts, but was thinking it might be nice to get a few comfy blouses to change things up. I like this smocked button front top, this short sleeve eyelet shirt, and this gauze button down shirt.
