    Ingredients

    • Gluten Free Flour
    • Baking Powder
    • Baking Soda
    • Ground Cinnamon
    • Sea Salt
    • Brown Sugar
    • Granulated Sugar
    • Vanilla Extract
    • Unsalted Butter
    • Eggs
    • Gluten Free Rolled Oats
    • Gluten Free Rice Crisp Cereal
    • Shredded Coconut
    • Pecans
    • Coated Chocolate Candies or Semi-Sweet Chocolate Chips

    Instructions

    Preheat your oven to 350 degrees. Line four baking sheets with parchment paper and set aside.

    In the bowl of your stand mixer combine the brown sugar, granulated sugar and butter until creamed together, about 3-4 minutes. Add the eggs and vanilla. Mix to combine. 

    In a separate mixing bowl whisk together the gluten free flour, baking powder, baking soda, cinnamon and salt. Add this mixture a little at a time to the wet ingredients until it is mixed together.

    Add the rolled oats, rice crisp cereal, coconut, pecans and chocolate pieces. Using a spatula combine these ingredients into your dough. Doing this step by hand will prevent you from breaking the rice cereal into tiny pieces. 

    Using a cookie scoop or tablespoon place the dough onto the cookie sheets. Press each cookie slightly so they are a disc shape rather than a ball before placing them in the oven.

    Bake at 350 degrees for 12 minutes or until golden brown.

    Move the cookies to a cooling rack to cool completely before storing them in an airtight container.

    Description

    • 3 cups Gluten Free Flour

    • 1 ½ cups Pecans, chopped
    • 1 ½ cups Coated Chocolate Candies or Semi-Sweet Chocolate Chips

    Instructions

    How can I tell when the monster cookies are done?

    Your cookies should be a nice golden brown color. You may also notice that they are slightly darker brown on the bottom edges.

    Can I freeze monster cookies?

    Yes. I like to freeze the cookies after they have been baked. I've found freezing the dough causes the rice crisps to not stay as crisp. I put the baked cookies in a freezer safe container and freeze them for up to a month.

    I love to make a double batch of cookies and freeze half of them for lunches on days that I don't have any treats prepared.

    What makes these monster cookies gluten free?

    I'm careful to use products that state they are gluten free. Rice cereal is something I would presume is gluten free, but it depends on how the manufacturer processes it. If the cereal is processed along with other products that contain gluten it becomes contaminated.

    You should take this same precaution with the rolled oats and shredded coconut. Make sure you are using products that state they are gluten free. Just checking the label for ingredients that may have gluten isn't enough.

    How should I store gluten free cookies?

    I like to store my gluten free cookies in a sealed container on our countertop. If they aren't going to get eaten before they expire I freeze them. You can place the cookies in the fridge, but this changes their texture and can make them hard.

    If you are going to freeze the cookies, place them in a freezer safe container and store for up to a month in the freezer.

    Top Tip

    I get the chocolate candies at Trader Joe's. Their chocolate candies are made with all natural dyes! I've found it hard to find all natural alternatives so I was thrilled when I found these yummy candies. Unreal also makes milk chocolate gems that are dye free.

    My Gluten Free Pantry Staples

    To make living a gluten free lifestyle easier I love to have a fully stocked pantry with all of the staple baking, cooking, smoothie and snack ingredients I need. I'm sharing my favorite gluten free items to have in my pantry. I hope this list of my gluten free pantry staples is helpful. I love to see what others keep in their pantries!

    Gluten Free Baking Supplies

    1. King Arthur Gluten Free Flour - I've used several gluten free flours through the years. I like this flour for baking and cooking. It's easy to get at most stores too.
    2. Blue Diamond Almond Flour - I like to use finely sifted almond flour for baking. The finer the flour the less gritty the baked goods will be.
    3. Anthony's Coconut Flour - This brand is a great resource for reasonably priced gluten free products. This organic coconut flour is finely ground and great for baking.
    4. Anthony's Brown Rice Flour - I love using brown rice flour because it doesn't change the taste of your baked goods. It's a really fine flour that's great for baking.
    5. Rodelle Baking Cocoa - This is my favorite cocoa powder! It has the best rich flavor for baking with!
    6. Enjoy Life Mini Chocolate Chips - I love to bake with these mini chocolate chips! They are gluten free and dairy free but have a really great taste and texture.
    7. It's Just Xanthan Gum - I use xanthan gum to give baked goods a more fluffy texture, especially when using almond or coconut flour.
    8. Simply Organic Ground Ceylon Cinnamon - I use ground cinnamon a lot when I'm baking. A really good ceylon cinnamon has the best rich flavor.
    9. Arrowhead Mills Yellow Cornmeal - I love cornmeal in pancakes, muffins, waffles and of course cornbread.
    10. Ghirardelli Premium Baking Bar - Their bars aren't marked gluten free, but their website states their dark chocolate is gluten free. These bars melt really well for baking.
    11. Rodelle Pure Vanilla Extract - This vanilla extract has a rich flavor that is perfect for baking. Using a quality vanilla is important to get a great flavor.
    12. Bob's Red Mill Baking Powder - Their baking powder is aluminum free and makes flaky delicious baked goods.

    Gluten Free Cooking Supplies

    1. Big Tree Farms Coconut Aminos - I use coconut aminos a lot to give dishes more depth in flavor. It is what I replace soy sauce with one-to-one in recipes.
    2. Swanson Low Sodium Chicken Broth - I always keep chicken broth in the pantry for soups. I also like to replace water in savory recipes with broth for more flavor.
    3. Jovial Brown Rice Pasta - this is my go-to brand for pasta. Brown rice pasta is my favorite gluten free pasta and holds it's shape well for hot and cold pasta dishes.
    4. Lotus Foods Gluten Free Rice Ramen - I love making ramen for a quick meal. This brand holds it shape and tastes delicious.
    5. Lea & Perrins Worcestershire Sauce - Not all worcestershire sauces are gluten free. I always check the label, but this one usually is and it's delicious with meats and in pasta dishes.
    6. Sir Kensington Classic Mayonnaise - This is my absolute favorite mayonnaise. I use it in all of my cooking and to make fry sauce.
    7. Alessi Basil Pesto - Pesto is so versatile to use in dressing, soups and pasta dishes.
    8. Chosen Foods Avocado Oil - Avocado oil has a high smoke point so it's great to use in the air fryer. It has a very mild flavor that's also great for making dressings.
    9. 4C Gluten Free Crumbs - I use gluten free breadcrumbs in meatloaf, meatballs and to make a crunchy coating on chicken to fry.
    10. Muir Glen Canned Diced Tomatoes - I add these to soups, sauces, and salads. I always keep canned diced tomatoes on my pantry shelf for easy meals.
    11. Contadina Tomato Paste - Also a must for soups, sauces and dressings. I reach for tomato paste to add acid to my recipes and extra flavor.
    12. Bragg Apple Cider Vinegar - I add a tablespoon to a glass of water daily and also use in dressings and pasta dishes.

    Ingredients

    • Cannellini Beans
    • Minced Garlic
    • Carrots
    • Yellow Onion
    • Olive Oil
    • Sea Salt
    • Italian Seasoning
    • Dried Basil
    • Coarse Ground Black Pepper
    • Italian Style Turkey Sausage
    • Diced Tomatoes
    • Kale
    • Bay Leaves
    • Gluten Free Pasta Shells
    • Chicken Broth
    • Parmesan Cheese

    Instructions

    Set your Instant Pot to saute and add olive oil to the pot. Add the garlic, carrots and onion to the pot and saute until the onion is translucent and the carrots are beginning to soften. 

    Add the rinsed beans, salt, Italian seasoning, dried basil, pepper, diced tomatoes, crumbled sausage, kale, bay leaves and broth. Stir to combine. 

    Add the uncooked pasta on top, but do not stir to combine. Gently press the pasta down a little until it is covered in liquid. This will prevent your pasta from burning on the bottom of the pot.

    Secure the lid and set to not vent. Using the manual setting cook for 15 minutes. Let the pressure release naturally for 10 minutes and then manually release the steam.

    Carefully remove the lid. Remove the bay leaves. Add the grated parmesan cheese and stir into the soup.

    Serve the soup hot with more parmesan cheese sprinkled on top.

    Frequently Asked Questions

    How do I clean my instant pot after cooking savory dishes?

    After using your instant pot for savory dishes or in this case using spices you may notice that the silicone ring in the lid has an odor. This is simple to take care of!

    Wash the metal pot insert by hand or in the dishwasher. Remove the rubber seal from the lid and wash both the lid (don't submerge the lid in water) and the ring. Place the ring back into the lid.

    Put the metal pot into the pressure cooker. Add one cup water and one cup white vinegar to the metal pot. Place the lid on the pot and seal. Manually cook for 3 minutes. Let the steam release naturally.

    After the liquid has cooled, dump it out and rinse the pot, lid and seal. Your pot, lid and seal shouldn't have any lingering odors.

    Do I have to use turkey sausage in this recipe?

    No. You could omit the turkey sausage and still have a delicious soup. Since the turkey sausage I used for this recipe had some Italian seasonings added I would increase the Italian seasoning in this recipe to 2 teaspoons.

    You could also use unseasoned sausage and also add the extra Italian seasoning to get the same flavor. I like to add the meat to this recipe to make it extra hearty with more protein, but that is completely optional.

    Description
