    Choosing Your Air Fryer

When I first got my air fryer a couple of years ago the options were pretty limited, but now there are a lot of versions on the market. I highly suggest getting a five quart or larger model.

It's so nice to be able to fit a 32 ounce bag of frozen broccoli or tater tots in and cook them in one batch. I've also found the larger size gives enough room to fit a turkey breast, small roast or two steaks. Plus, the price difference isn't very much for the large sizes making them totally worth it.

Instant Pot Chicken and Broccoli Casserole

This healthy recipe for instant pot chicken and broccoli casserole uses rice and is super easy to make. This creamy casserole is a one pot meal made in under 30 minutes.

I'm going to say that this isn't the prettiest casserole I've ever made, but it is delicious. I used canned chicken in the recipe for convenience, but you could use raw chicken. If you choose to use raw chicken you will need to add some cooking time.

This recipe calls for wild rice. It is yummy in the recipe and I highly recommend you use it. If you choose to use white rice you may need to reduce the cooking time. Since the husk, bran and germ are removed from white rice it doesn't take as long to cook.

three bowls of gluten free instant pot chicken and broccoli casserole with shredded cheddar cheese and gluten free sourdough bread

How do I clean my instant pot after cooking savory dishes?

After using your instant pot for savory dishes or in this case using broccoli you may notice that the silicone ring in the lid has an odor. This is simple to take care of!

Wash the metal pot insert by hand or in the dishwasher. Remove the rubber seal from the lid and wash both the lid and the ring. Place the ring back into the lid.

Put the metal pot into the pressure cooker. Add one cup water and one cup white vinegar to the metal pot. Place the lid on the pot and seal. Manually cook for 3 minutes. Let the steam release naturally.

After the liquid has cooled, dump it out and rinse the pot, lid and seal. Your pot, lid and seal shouldn't have any lingering odors.

    Gluten Free Homemade Pasta Sauce

This easy recipe for gluten free homemade pasta sauce is made with fresh tomatoes. This is a great way to use garden tomatoes and make a simple sauce from scratch. Let me show you how to make a healthy spaghetti sauce at home.

This recipe just has one tablespoon of sugar or honey to cut the acidity of the fresh tomatoes. I use carrots to give this sauce a sweet flavor instead. The sauce is loaded with healthy vegetables!

three plates of gluten free homemade pasta sauce over caserecce gluten free pasta
    [feast_advanced_jump_to]

    Ingredients

    Tomatoes
    Yellow Onion
    Carrots
    Minced Garlic
    Olive Oil
    Fresh Basil
    Dried Thyme
    Dried Oregano
    Sea Salt
    Coarse Ground Black Pepper
    Honey or Granulated Sugar

    Instructions

Preheat your oven to 350 degrees.

On a baking sheet lay out your chopped tomato chunks. Drizzle with olive oil and sprinkle with sea salt. Roast at 350 degrees for 30-40 minutes.

In a dutch oven or heavy pot add olive oil and chopped carrots. Cook 5-8 minutes or until the carrots begin to get tender.

Add in the onion and garlic to the carrots. Cook until onion is translucent.

Add the roasted tomatoes, basil, thyme, oregano, salt, pepper and honey or sugar. Stir to combine the ingredients.

Use an emersion blender to puree the sauce to your liking. I like to leave some chunks in my sauce, but you may want the sauce to be smooth. If you don't have an emersion blender let the sauce cool slightly and then do batches in a blender.

Serve the sauce with pasta or freeze in freezer safe containers for later.

    Frequently Asked Questions

Do I have to peel tomatoes for this sauce?

I don't peel my tomatoes for this sauce. I roast the tomatoes in the oven on a baking sheet for 30-40 minutes before using them in this sauce. Roasting the tomatoes makes the peels softer.

After I've cooked the sauce down I use my emersion blender to roughly puree the sauce. I like some chunks, but you can puree until the sauce is smooth if you prefer. This process can also be done in a blender.

Tomato peels are full of carotenoids. Carotenoids are antioxidants that protect the body from cellular damage, aging and some chronic diseases. The peels also have flavonols which can support your circulatory system.

What tomatoes are best for pasta sauce?

My favorite tomatoes for sauces are San Marzano tomatoes. I love to grow San Marzano's in my garden. I'm also a big fan of Roma tomatoes for sauces. There are many different types of tomatoes that would make a great sauce.

If you are purchasing tomatoes from the grocery store to make this sauce you should be able to get Roma tomatoes and those will work well. If they are still orange when you purchase them leave them out on the counter for a couple of days to finish ripening.

I find that best tomatoes for sauces and cooking with have a nice, sweet tomato smell when they are ripe and ready to use. They should still be firm and not mushy. I like to look for tomatoes with healthy peels and no blemishes for my sauces.

    Frequently Asked Questions

How do I clean and season my cast iron skillet?

I love to cook with cast iron. It evenly heats and is easy to clean. I like to use this U-picks Cast Iron Skillet Cleaner Chainmail Scrubber that I got from Amazon. I rinse the pan with hot water to remove any loose food and leftover oil. Then I use the chainmail scrubber to lift up any bits of food left.

I place the pan on the stove top at medium heat and let it dry completely. Then I pour a tablespoon of oil in the pan and rub it onto the entire inside of the pan with a paper towel. Remove the skillet from heat and it's ready for your next meal.

Remember to never put your cast iron skillet into the dishwasher.

Can I freeze this gluten free sausage, kale and potato skillet?

Yes. I like to cook the potatoes, sausage, onions and add the seasoning. Cook this just like the directions in the recipe say. I do not add the kale at this time. I place the cooked potatoes, sausage, onions and seasonings into a freezer safe container and freeze.

When I'm ready to reheat this meal I place all the ingredients back into the cast iron skillet and reheat. Once the meal is hot I toss in the kale and cook just until the kale is wilted. Serve this dish while it's still hot.

    Gluten Free Sourdough Pizza Crust

This easy recipe for gluten free sourdough pizza crust has no yeast in the ingredients. It is homemade from a gluten free sourdough starter and rises overnight. I walk you through how to make this delicious pizza crust.

I love a Friday night homemade pizza! It's delicious and a great way to use up what I have left in the fridge before I get new groceries. Leftover taco meat means we have a taco pizza. Leftover mushrooms, olives, pineapple, cheese and a jar of sauce are one of my favorite combinations.

I also have a gluten free pizza crust recipe that uses yeast for rising instead of sourdough.

    [feast_advanced_jump_to]

    Ingredients

    Gluten Free Sourdough Starter
    Egg
    Olive Oil
    Warm Water
    Gluten Free Flour
    Sea Salt
    Buttermilk Powder
    Garlic Powder
    Onion Powder

    Instructions

In your stand mixer blend together the gluten free sourdough starter, egg, olive oil and water. Add the gluten free flour, salt, buttermilk powder, garlic powder and onion powder. Blend until a dough forms.

Grease a large bowl with coconut oil or butter. Place the dough in the bowl and rub with one to two teaspoons of olive oil to seal the dough.

Cover the bowl and put in a warm place for 8 to 24 hours. The dough will rise and be porous when it is ready.

Place parchment paper on a baking sheet. Press the dough out on the parchment paper with hands dampened with water or roll out using a second piece of parchment paper.

Bake at 450 degrees for 10 minutes.

Add toppings and bake 20 minutes more.

Let cool slightly before cutting and serving.

    Frequently Asked Questions

How do you store sourdough pizza dough?

I store mine in a covered bowl overnight. You need to have enough space in the bowl for the dough to rise. If I'm not going to use the gluten free sourdough pizza crust the next day I transfer it to a sealed container and store it in the refrigerator for up to 3 days.

If you've put the pizza crust in the refrigerator take it out at least two hours before you want to use it so it has time to come back to room temperature.
