    2 Tbsp. Minced Garlic
    1 medium White Onion, chopped
    4 stalks Celery, diced
    2 cups Frozen Peas
    5 cups Spinach, chopped
    32 ounces Chicken Stock
    ½ cup Basil Pesto
    2 tsp. Dried Fennel
    1 tsp. Sea Salt
    ¼ tsp. Coarse Ground Black Pepper
    3-4 Boneless, Skinless Chicken Breasts, cubed
    Parmesan Cheese for serving


    Instructions

    • Ground Beef
    • Gluten Free Bread Crumbs

    • Sea Salt

    Instructions

    In a mixing bowl using your hands or a large spoon mix together the ground beef, gluten free bread crumbs, egg, parmesan cheese, onion, garlic, salt, pepper and parsley until well combined.

    In a mixing bowl or large measuring cup whisk together the cranberry sauce, chili sauce, water and brown sugar until well combined.

    Pour enough of the sauce mixture on the bottom of your slow cooker to coat it. Then roll the meatball mixture into golf ball sized balls and place them touching, but not on top of each other on the bottom of the slow cooker.

    After all the meatballs are in the slow cooker pour the rest of the sauce on top of the meatballs.

    Set your crockpot to low and and cook 2-4 hours until the internal temperature is a minimum of 165 degrees.

    Move the meatballs to a plate and pour a bit of sauce over them to serve with toothpicks for an appetizer or over mashed potatoes or buttered noodles for a meal.

    The key is gluten free breadcrumbs. There are several brands that have certified gluten free breadcrumbs. You can also use rice crumbs. I've used both and been happy with both options.

    The gluten free bread or rice crumbs along with the egg will help the meatballs to hold their shape. Once the meatballs are in the crockpot I don't stir them until they are fully cooked so they don't fall apart.

    What do you serve cranberry meatballs with?

    I like to use these meatballs as an appetizer during the holidays and I serve them on their own with toothpicks. They are also delicious served with mashed potatoes or buttered pasta for a meal.

    My favorite chili sauce is Thai Kitchen Red Chili Dipping Sauce. Their brand doesn't have any added artificial colors or flavoring. I checked several other brands and they all had artificial colors and added ingredients that I didn't want.

    • Dried Navy Beans
    • Olive Oil
    • Yellow Onion
    • Carrots
    • Celery

    Soak your navy beans in a bowl of water for 16-24 hours. Strain and rinse the beans thoroughly. Set aside.

    In a 6-quart instant pot add olive oil and press the saute button. Saute the onions, carrots and celery for 3-5 minutes to soften.

    Add the garlic, salt, pepper, thyme, rosemary, cumin, bay leaves, beans, vegetable stock and water to the instant pot. Stir to combine the ingredients. Press the two bay leaves into the soup mixture.

    Using manual pressure cook for 30 minutes. Let the steam release naturally.

    Once the steam has released remove the lid. Carefully remove the bay leaves and then serve the soup.

    How do I reheat soup in my Instant Pot?

    The first night I make soup in my Instant Pot I let it cool completely. Then I put the lid on or plastic wrap over top and store it in the refrigerator. The next night when I want to reheat the soup I take it out of the fridge and remove the plastic wrap.

    I place the stainless pot back in my Instant Pot and put the lid on making sure it's set to sealed. Then I press the manual button and set the time for 3 minutes. The soup will heat up while it's coming to pressure and it only takes a short amount of time to have hot soup ready to serve.

    How much liquid do you need in the instant pot for soups?

    The official instant pot manual calls for at least 8 ounces or 1 cup of liquid for the instant pot to come to pressure. For this recipe you will be using 32 ounces of vegetable broth. That is more than enough liquid for your pressure pot to work properly.

    • Turkey Deli Meat

    Make your sandwiches and then secure them together with two toothpicks.

    Description

    This gluten free and low carb air fryer turkey sandwich recipe is perfect for an easy lunch. It makes a grilled turkey and cheese sandwich in minutes that is perfectly crisp on the outside and melted on the inside. I love these hot sandwiches with a bowl of soup.


    Ingredients

    Gluten Free Italian Keto Bread or Gluten Free Herbes de Provence Keto Bread
    Turkey Deli Meat
    Cheddar Cheese Slices or Swiss Cheese Slices
    Mayonnaise
    Stone Ground Mustard
    Unsalted Butter


    Instructions

    Make your sandwiches and then secure them together with two toothpicks.

    Place two sandwiches at a time in the basket of your air fryer. Air fry at 360 degrees for 5 minutes to melt the cheese.

    Flip the sandwiches over and air fryer at 380 degrees for 5 minutes to crisp the bread.

    Remove the toothpicks and enjoy your gooey, warm sandwich.
