    Gluten free muffins make a delicious snack or breakfast option. I love to have homemade gluten free muffins to put into lunches. They are great to freeze for later too. These gluten free muffin recipes are easy to make!

    Having great recipes for gluten free muffins is a must for following a gluten free lifestyle. They are easy to make and a great way to use ripe bananas and extra fruit. At the end of the week when the apples and bananas are getting ripe I like to make muffins and then freeze half of them for later.

    This gluten free peach crisp is easy to make with oats and canned peaches. This recipe is similar to the old fashioned crisp made with oatmeal my mom used to make and serve with vanilla ice cream. This is the best homemade gluten free crisp recipe!

    This gluten free peach crisp recipe is great for a fast dessert. It's delicious served warm or at room temp so it's great to take for a picnic. We like it plain, but it never hurts to add a dollop of homemade whipped cream or vanilla ice cream.

    Ingredients

    Canned Sliced Peaches in Juice
    Granulated Sugar
    Arrowroot Powder
    Lemon Juice
    Gluten Free Rolled Oats
    Brown Sugar
    Brown Rice Flour
    Sea Salt
    Unsalted Butter
    Pecans

    Instructions

    Preheat oven to 350 degrees.

    In a mixing bowl stir together the canned peaches, sugar, arrowroot powder and lemon juice. Pour into a greased 9x13 baking dish. Set aside.

    In your stand mixer place the gluten free rolled oats, brown sugar, brown rice flour, sea salt, melted butter and pecans. Blend together until you get a crumbly mixture. Pour this crumbly mixture over the peaches in your baking dish.

    Bake for 30 minutes or until peach mixture is bubbling and topping is slightly browned.

    Top Tip

    I used canned peaches in juice. This is important because if you try to use canned peaches in syrup they will be way too sweet. Juice versus syrup makes a big difference in how recipes will turn out.

    What is the difference between a crumble and a crisp?

    The biggest difference is that a crisp contains oats and a crumble does not. Both a crumble and crisp are a topping that goes over a fruit mixture and is baked until bubbling and browned.

    A crisp gets its name because the oats in the topping will become crispy when baked. A crumble is usually made with a flour base and will not be crispy.

    Is gluten free peach crisp simple to make?

    Yes! This is a very simple recipe to make. I make it frequently because it's easy to put together and to have a dessert in a hurry. You could even make it the day before you need it.

    A quick dessert that works well for a picnic or just when you need a delicious treat.


    Ingredients

    Peach Layer:
    2 - 29 ounce cans Sliced Peaches in Juice
    ¼ cup Granulated Sugar
    2 Tbsp. Arrowroot Powder
    2 Tbsp. Lemon Juice

    Topping:
    1 ½ cups Gluten Free Rolled Oats
    ¾ cup Brown Sugar
    ½ cup Brown Rice Flour
    1 tsp. Sea Salt
    ½ cup Unsalted Butter, melted
    ½ cup Pecans, chopped


    Instructions

    Preheat oven to 350 degrees.

    In a mixing bowl stir together the canned peaches, sugar, arrowroot powder and lemon juice. Pour into a greased 9x13 baking dish. Set aside.

    Paleo Chocolate Cupcakes (GF, DF)

    This healthy recipe for paleo chocolate cupcakes is easy to make from scratch. These are the best homemade cupcakes! They are simple, moist and best of all gluten free.

    Sometimes I miss really great, gluten filled chocolate cake. The kind you can buy at any store. With rich chocolate frosting that is full of sugar. But, then I think about the calories and the inflammation it will cause and it's not actually worth it.

    It's good to have a delicious alternative for those chocolate cake cravings. These paleo chocolate cupcakes have a great texture that makes it hard to believe there isn't any flour in them. They rise nicely in the oven and from what I remember taste like a store bought cupcake (I've been gluten-free for over five years).

    The recipe I used for the "icing" is actually a chocolate avocado pudding. It has coconut oil in it so if it seems too runny for frosting you can put it in the fridge for an hour or two and it gets a more frosting like texture.

    Honestly it tastes like really dark chocolate frosting so it having a little more pudding texture doesn't bother me at all. I think the combination is delicious!

    I used my Paleo Chocolate Pudding recipe for the frosting.

    These cupcakes are a delicious alternative for when you are craving something chocolate.


    Ingredients

    Scale

    1 large Banana, very ripe
    1 medium Apple, cored & peeled
    6 Dates, seeds removed
    2 large Eggs
    1 cup Almond Butter
    2 Tbsp. Coconut Oil, melted
    ⅓ cup Cocoa Powder
    1 tsp. Baking Soda
    1 tsp. Baking Powder
    1 tsp. Ground Cinnamon
    ½ tsp. Sea Salt


    Instructions

    Preheat oven to 375 degrees.

    Place all ingredients into a blender and blend until a batter forms.

    Either grease or line your muffin tin (these muffin liners are my favorite). Divide batter evenly.

    Bake for 18 minutes or until the muffins spring back when you lightly touch them.

    Paleo Chocolate Pudding

    This paleo chocolate pudding is an easy homemade dessert recipe to make when you are craving something delicious. This healthy version of chocolate pudding is easy to make from scratch. This recipe is made without cornstarch, gluten or dairy.

    Some days just call for paleo chocolate pudding! This dark, creamy recipe is perfect for those days. It stores well for a couple of days in the fridge and works really well for homemade pudding cups.

    I don't mind eating this chocolate pudding right out of the blender, but it's even better when it's chilled. It's easy to make ahead for a perfect dessert.

    Is chocolate pudding dairy free?

    Not all pudding is dairy free. If you are eating paleo or a dairy free diet you need to be careful of box mixes. Make sure you are reading the ingredient list and checking the label to see if there is a cross contamination in processing the mix.

    Honestly, it's just as quick to put together this pudding recipe as it is to buy a box mix. If you put the pudding together from a recipe yourself you can be sure it is dairy free.

    Can chocolate pudding be made with almond milk?

    Yes! This recipe is made with almond milk. You could also use coconut milk if you don't want to use a nut milk. I replace dairy milk with almond milk in recipes and have not had a problem with how the recipes turn out.

    How do I make chocolate pudding pie?

    This recipe for paleo chocolate pudding can be poured into a prepared pie crust to make a very easy chocolate pudding pie. You can top the pie with coconut milk whipped cream and have a quick dessert ready in no time!

    Ingredients

    1 Avocado, very ripe
    1 large Banana, very ripe
    ½ cup Cocoa Powder
    6 Tbsp. Honey
    ½ tsp. Vanilla Extract
    ¼ tsp. Sea Salt
    2 Tbsp. Coconut Oil, melted
    2 Tbsp. Almond Milk


    Instructions

    Peel and take the seed out of the avocado and banana. Place all ingredients into a blender and blend until a creamy pudding texture is achieved. 

    Pour into a bowl or individual dishes. Refrigerate until you are ready to serve. This pudding will last in the fridge a couple of days.

    Gluten Free Chocolate Chip Oatmeal Bars

    These gluten free Chocolate Chip Oatmeal Bars are really easy to put together and work great to pack for lunch. They come together in one mixer bowl with little mess and clean up.

    My favorite way to eat them is warm with a little coarse sea salt on top. They are rich and delicious! I used almond butter for this batch, but peanut butter or another nut or seed butter would work great.

    GF Chocolate Chip Oatmeal Bars are great on the go when you need a snack. After they cool I put them in sandwich bags to have on hand to pack in lunches or to grab on the go.

    These chocolate chip oatmeal bars mix together quickly and are a delicious treat!


    Ingredients

    Scale

    2 large Eggs
    ⅓ cup Granulated Sugar
    1 cup Brown Sugar
    ¼ cup Almond Butter (or your nut butter of choice)
    ½ cup Unsalted Butter, softened
    1 tsp. Vanilla Extract
    1 ½ cups Gluten Free Flour
    1 ½ cups Rolled Oats
    1 tsp. Baking Powder
    ½ tsp. Sea Salt
    1 ½ cups Semi-Sweet Chocolate Chips


    Instructions

    Preheat oven to 350 degrees.

    Mix eggs, sugars, almond butter, butter and vanilla together in a mixing bowl until well combined into a creamy mixture. Add the flour, oats, baking powder and salt. Mix until just starting to combine. Add the chocolate chips and mix all ingredients together.

    Grease a 9x13 inch pan with coconut oil or butter. Spread bar mixture into the pan evenly.

    Bake at 350 degrees for 25-30 minutes or until the edges of the bars are browned.

    Notes

    Almond butter can be replaced with peanut butter or whatever nut or seed butter you prefer.

    After the bars have cooled a little I like to sprinkle coarse sea salt over them.
