    Gluten Free Coleslaw

    This easy recipe for gluten free coleslaw has a creamy, homemade dressing. This healthy salad is keto and low carb friendly. I walk you through how to make the best gluten free coleslaw.

    I make this salad multiple times during the summer. It's so simple to make and is even better the second night after the cabbage has marinated in the sauce.

    I like to use the prepackaged coleslaw mix. I usually buy the package with carrots in it, but if you are Keto or low carb you can get the bags without carrots. You could also finely chop up heads of cabbage on your own.

    As we start to get cabbage from the garden I will chop up my own cabbage and run carrots through the food processor or mandolin slicer for this salad.

    Does coleslaw have gluten in it?

    This largely depends upon what type of vinegar you use. Malt vinegars are made from barley and would contain gluten. In this recipe I use apple cider vinegar which is usually safe.

    As always make sure you read the label to make sure nothing that contains gluten has been added to the apple cider vinegar. I like the tanginess the apple cider vinegar adds to the salad.

    Is coleslaw ok on Keto or low carb diets?

    Yes. Coleslaw makes a fantastic side dish while on a Keto or low carb diet.

    How long does gluten free coleslaw keep?

    Coleslaw is generally fine for 2-4 days in the refrigerator. I actually like coleslaw the best on the second day after the cabbage has marinated in the sauce.

    Be sure not to leave your coleslaw out in the sun or warm temperatures so the dressing doesn't spoil. The gluten free coleslaw needs to go back in the refrigerator after you've served it.

    Ingredients

    2 - 14 ounce bags Coleslaw Mix
    ¾ cup Mayonnaise
    ⅓ cup Apple Cider Vinegar
    2 tsp. Dijon Mustard
    1 tsp. Celery Seeds
    1 tsp. Sea Salt
    1 tsp. Ground Black Pepper


    Instructions

    In a large bowl pour the bags of coleslaw mix.

    In a small bowl or jar add the mayonnaise, apple cider vinegar, mustard, celery seeds, salt and pepper. Using the drink attachment for your hand mixer, an emersion blender or whisking by hand mix the ingredients together thoroughly.

    Pour the dressing over the coleslaw mix and stir until it is all coated.

    Store in your refrigerator for at least 2 hours before serving.

    Notes

    I like this salad best on day two after the cabbage and dressing have mixed thoroughly.

    Gluten Free Sourdough Bread

    This easy recipe for gluten free sour dough bread includes the instructions for how to make your own starter. This no knead, homemade gluten free bread is great for sandwiches or making french toast.

    When I first started eating gluten free I really missed bread. I tried several of the brands I could buy in the store and thought they were gritty and fell apart too easily. Plus they were expensive!

    I started making all the gluten free bread recipes I could find, but I just couldn't get the texture I was looking for. I finally ordered a gluten free starter from Cultures for Health. This recipe is based off of their recipe. I've tweaked it so that the bread is more like a classic sourdough bread. The crust is thicker and and the bread is coarser.

    I love that this bread will hold together when I make a sandwich or french toast using it. It is perfect for toast and is great to let go stale for croutons.

    Can you eat sourdough bread on a gluten free diet?

    I know that some people who have an intolerance to gluten can eat sourdough that is made from regular flour. That isn’t the case for me and may to be the case for you. If you can’t tolerate any gluten I wouldn’t suggest eating regular sour dough bread.

    This recipe shows you how to make your own gluten free sourdough starter. I love that you are in control of everything that goes into the starter and the environment it is processed in. You will know for sure that it’s gluten free and safe for you.

    How does gluten free sourdough work?

    What makes this recipe truly gluten free is that the sourdough starter is made strictly with gluten free flour. There isn't any gluten in the process of making the starter or in the bread recipe.

    This sourdough bread is made from a fermented sourdough starter and doesn't need gluten to work. The bread rises because of the fermentation. The process of making the bread is different from a gluten sourdough starter, but you still get delicious bread with this recipe.

    Ingredients

    1 ½ cups Gluten Free Sourdough Starter
    3 large Eggs
    4 tablespoon Unsalted Butter, melted
    1 ¼ cups Milk
    2 Tbsp. Honey
    ¾ cup Sweet Sorghum Flour
    ¾ cup Tapioca Flour
    ½ cup Brown Rice Flour
    ½ cup Potato Starch
    1 Tbsp. Xanthum Gum
    1 Tbsp. Baking Powder
    2 tsp. Sea Salt


    Instructions

    In the bowl of your mixer place the gluten free sourdough starter, eggs, butter, milk and honey. Beat until it is blended together in a wet mixture.

    Add the sweet sorghum flour, tapioca flour, brown rice flour, potato starch, xanthum gum, baking powder and sea salt. Mix until well blended 3-4 minutes. The dough will be wet and sticky, but blended together well.

    Grease a bread pan with coconut oil. 

    Pour the dough into the bread pan and spread evenly. Place a bowl or another bread pan over this pan and place in a warm place for 6-8 hours. I like to mix my dough up the night before and let it proof overnight.

    Preheat your oven to 350 degrees.

    Bake the bread for 1 hour 10 minutes. The top will be brown and have a nice crust when the bread is done.

    Let the bread stand in the pan for 10 minutes and then turn out onto a cooling rack. Let the bread cool completely before slicing.

    When the bread is completely cooled store in a sealed container for up to five days.

    Notes

    The width and size of your bread pan will effect how tall your loaf is. A smaller or more narrow bread pan will give you a taller slice of bread. I use a regular bread pan and am fine with the rectangular shape of my loafs of bread.

    In this post I show you how to make an easy gluten free sourdough starter. It's so simple to start the process with gluten free flour and water! This sourdough starter makes the best bread!

    One of the things I missed most when I first went gluten free was bread. Just the simplicity of making a sandwich for dinner when I wasn't feeling like cooking or toast for breakfast. I tried a lot of different store bought gluten free breads but wasn't a fan of the gritty texture most had.

    I originally purchased a gluten free sourdough starter from Cultures for Health. This recipe is based on their recipe. I liked the recipe, but made some tweaks so it's has a thicker crust and denser texture more like regular sourdough. In my opinion their recipe was too cake like.

    I didn't realize when I purchased a sourdough starter how easy it is to start one on your own. It takes about seven days and then you can bake bread on the eighth day.

    How do you make a gluten free sourdough starter from scratch?

    It is so easy! I like to use a one quart, widemouth jar. You could use a leftover mayonnaise jar or whatever you have on hand. The most important part is you can either set a lid on top or put a coffee filter and rubber band over it. And that the jar leaves enough room for the starter to triple in size.

    Make sure the jar has been washed and sanitized. I like to run it through the dishwasher with a hot drying cycle to make sure there aren't any bad bacteria in the jar.

    Place ⅓ cup gluten free flour and ⅓ cup hot water from the tap. Put the lid over the jar (do not screw it down) or place a coffee filter and rubber band over the jar. Place a rubber band around the jar indicating where the top of the mixture is. This will help you to see when the starter begins to grow.

    Put the jar in a warm place. I put mine on the mantle above our wood stove. You don't want it to be too hot. The room should be 70-74 degrees. If it's not warm enough the starter won't grow.

    You will repeat this process for 6 days until you see the starter double in size. You will remove half of the starter and discard each day (I know it's hard to throw away flour, but it's not ready to use yet). If you aren't seeing the starter grow it may need to be in a warmer place or just need another day or two.

    On the seventh day save the discard in a container and place in the fridge. Feed your starter the same ⅓ cup flour and ⅓ cup hot water. The next day add the discard with the saved container from the day before. Place on the counter to let it come back up to room temperature.

    You should have one and half cups of gluten free sourdough starter and be able to make your first loaf of bread!

    You can continue to feed the starter to have another loaf in two days or place the starter in the refrigerator. If you place the starter in the refrigerator you will need to get it out and feed it once a week to keep it healthy.

    Can you eat sourdough bread on a gluten free diet?

    Ingredients

    ⅓ cup Gluten Free Flour
    ⅓ cup Hot Tap Water


    Instructions

    In a one quart jar place the flour and hot tap water. The tap water should be hot but you should still be able to run your hand under it without burning yourself. 

    Stir the flour and water mixture until thoroughly combined.

    Place a lid on top without screwing it down or place a coffee filter and rubber band on top.

    Put the jar in a warm place. I put mine on the mantle above our wood stove. The room should be 70-74 degrees for the starter to grow.

    Everyday around the same time discard half the starter and put another ⅓ cup gluten free flour and ⅓ cup hot tap water for 6 days. On the 7th day save the discard in a container and place in the fridge. Repeat the process of adding ⅓ cup flour and ⅓ cup hot tap water. 

    On the 8th day add the discard to yesterday's container. Place this on the counter to bring it back up to room temperature. Feed the starter in the jar another ⅓ cup flour and ⅓ cup hot tap water. 

    At this point you can leave your starter out and repeat the process of making bread every other day or you can place your starter in the refrigerator. If you place your starter in the refrigerator you will need to feed it ⅓ cup flour and ⅓ cup water once a week to keep it alive.

    Gluten Free Cornbread

    This gluten free cornbread is easy to make from scratch. You can make the best homemade cornbread with cornmeal that is moist and delicious. This recipe is on heavy rotation in our house!

    We love to eat this cornbread right out of the oven with lots of butter or I use this recipe for stuffing. I also love to eat my cornbread with some jam for breakfast. The options are endless!

    What is this cornbread made from?

    I like to use Bob's Red Mill Gluten Free Cornmeal. It is a coarser ground cornmeal so it gives the cornbread more texture. Since you will be using fine ground gluten free flour it still has a moist, cake-like texture.

    Can you eat cornbread if you are gluten free?

    Yes. As long as you are careful to purchase your cornmeal from a vendor that certifies it's gluten free. If you try to use regular cornmeal it is likely processed with wheat flour and will be contaminated.

    Be sure to read the label and make sure it's certified gluten free. There may not be gluten in the ingredients list, but it is likely that it was contaminated with gluten while being processed.

    How do I make gluten free cornbread from scratch?

    The process of making this cornbread is the same as regular cornbread. You will just want to make sure you are using certified gluten free ingredients. There will be a seal on the product stating it's gluten free and may also be in bold on the packaging.

    Even though your regular cornmeal may not have anything containing gluten listed in the ingredients there is a very high chance the product was processed along with products that have gluten in them. The gluten free seal is very important to look for.

    This gluten free cornbread is easy to make from scratch. You can make the best homemade cornbread with cornmeal that is moist and delicious.


    Ingredients

    Scale

    ½ cup Unsalted Butter, softened
    2 cups Milk
    2 large Eggs
    2 ½ cups Gluten Free Cornmeal
    2 cups Gluten Free Flour
    ¼ cup Granulated Sugar
    2 Tbsp. Baking Powder
    1 tsp. Sea Salt


    Instructions

    Preheat your oven to 400 degrees. Grease a 9x13 baking dish with butter or coconut oil. Set aside.

    In the bowl of your stand mixer place your ingredients and blend together. The mixture will be a bit lumpy.

    Pour the mixture into your 9x13 baking dish.

    Bake at 400 degrees for 20 to 25 minutes or until the edges of the cornbread are golden brown.

    Wait for the cornbread to cool before slicing into squares.

    I have used whole milk and almond milk in this recipe with success.
