    Gluten Free Raspberry Cornmeal Cake

    This easy gluten free raspberry cornmeal cake is made with fresh raspberry and has a dense texture. This dessert is perfect on it's own or with a simple glaze overtop. I love a simple polenta cake for summer dessert or brunch.

    I love the combination of cornmeal and summer fruits. This cake is also delicious with fresh strawberries or blueberries. For the tart fruits I like to add a simple powdered sugar and milk glaze. I put my recipe for a glaze in the notes.

    Ingredients

    • Fresh Raspberries
    • Gluten Free Flour
    • Gluten Free Yellow Cornmeal
    • Baking Powder
    • Xanthan Gum
    • Sea Salt
    • Granulated Sugar
    • Eggs
    • Milk
    • Vanilla Extract
    • Coconut Oil

    Instructions

    Preheat your oven to 350 degrees. Grease a 9-inch springform pan with coconut oil or butter and set aside.

    In a bowl whisk together the gluten free flour, yellow cornmeal, baking powder, xanthan gum and salt.

    In the bowl of your stand mixer beat together the granulated sugar and eggs. Add the milk, vanilla and melted coconut oil. Beat until combined.

    Add the dry ingredients to the wet ingredients and beat just until they are combined.

    Pour the cake batter into the greased 9-inch springform pan. Place the berries on top of the cake batter to cover the entire top.

    Bake at 350 degrees for 45-50 minutes or until a toothpick in the middle of the cake comes out clean.

    Let the cake cool for at least 10 minutes before releasing the outside of the pan.

    Serve plain or with a simple glaze on top.

    Frequently Asked Questions

    How do I make my gluten free cakes more moist?

    Gluten free baking tends to require more moisture or oil than when you are using regular wheat flour. For this gluten free raspberry cornmeal cake recipe I added milk and coconut oil to make it moist and delicious.

    If you are using a cake recipe that isn't turning out moist I would suggest adding a bit more oil or butter. You can also add mashed banana or applesauce to help your baked goods have more moisture.

    Do gluten free cakes take longer to bake?

    Yes, gluten free baking in general takes a little bit longer to bake than a cake made with regular wheat flour. However, gluten free baked goods tend to brown faster. So you will want to test the cake with a tooth pick in the center to make sure it's actually done even if it looks browned.
     
    Your cake should be a nice golden brown and a tooth pick inserted in the center of the cake should come out clean. You may need to bake your cake up to 5-8 minutes more. If your cake is already very brown, but not done in the center you will need to lower the oven temperature by 25 degrees and cook longer.

    For a simple glaze combine ½ cup of powdered sugar with 1-2 Tbsp. of milk until you can drizzle the glaze over the cake.

    What We're Watching - We are watching Ted Lasso on Apple TV and so far it's pretty funny. We also just watched the movie Good On Paper on Netflix. It wasn't the best, but it had funny moments.

    What I Just Got - It always seems like we lose flashlights. Yes, I know there is one on my phone, but I mean a real flashlight that I can see more than 6 feet. I ordered this rechargeable flashlight and I'm really happy with it.

    What I Want To Try - I love drinking everything on ice during the summer months. I saw this round ice tray and I think I need it. Do you have one? Does it actually make lovely round ice?

    What I'm Loving - Sometimes I don't need an entire pot of coffee. I'm loving this organic instant coffee! I like to add a scoop of collagen and a couple of tablespoons of coconut milk.

    I'm always looking for sturdy baskets to use for harvesting in the garden. This seagrass basket looks beautiful and like I could fill it full of produce too.

    I'm loving these mid length jean shorts! I like the little flip of the hem and that they aren't super short. It's also amazing that they are only $18!

    I was a teen in the 90's and Lip Smackers Watermelon gloss was my favorite. I want to try this cleaner option from Pacifica for vegan watermelon lip balm.

    Speaking of the 90's, I'm not sure I'm ready to go back to super high flip flops, but I do like this pair of sandals with a bit of a chunky sole.

    I saw these cute wire storage baskets during the Amazon sale. I'm still a little mad at myself for not ordering them. I may have to get these.

    Gluten Free Taco Pasta Bake

    This easy recipe for gluten free pasta taco bake is the perfect casserole for dinner! It's simple to make with ground beef, cheese and homemade taco seasoning. I made this cheesy dish in a skillet, but you could also use a baking dish.

    Ingredients

    • Ground Beef
    • Chili Powder
    • Garlic Powder
    • Ground Coriander
    • Ground Cumin
    • Smoked Paprika
    • Sea Salt
    • Ground Black Pepper
    • Yellow Onion
    • Tomato Sauce
    • Diced Tomatoes
    • Water
    • Beef Broth
    • Gluten Free Penne Pasta

    Instructions

    Preheat your oven to 350 degrees.

    Using a cast iron skillet or frying pan cook your beef on medium heat until there is very little pink and then add the chopped onions, chili powder, garlic powder, coriander, cumin, paprika, sea salt and pepper. Cook until onions are translucent. 

    Add the tomato sauce, diced tomatoes, water, broth, pasta, sour cream and ½ cup shredded cheddar cheese. Stir the mixture to combine.

    If you are using a cast iron skillet top the mixture with the rest of your shredded cheese and it's ready to bake. If you are using a frying pan pour the mixture into a 9x13 baking dish and then top with cheese.

    Bake at 350 degrees for 35-40 minutes. The dish will be bubbly and the cheese will be melted when it's done.

    Description

    Top Tip

    Cast iron skillets are one of my favorite cooking essentials. I love how easily they go from the stovetop to the oven with everything all in one pan. When properly seasoned they are easily cleaned up with some water a bit of scrubbing with a chain scrubber or dish brush.

    Can I use chicken in this recipe?

    Yes. You could easily substitute chicken in this recipe if you would like. Cook the chicken completely and then add the onion to the pan to cook until it's translucent. Follow the instructions from there below in the recipe card. You could also omit meat completely if that's what works for you.

    How do I clean and season my cast iron skillet?

    I love to cook with cast iron. It evenly heats and is easy to clean. I like to use this U-picks Cast Iron Skillet Cleaner Chainmail Scrubber that I got from Amazon. I rinse the pan with hot water to remove any loose food and leftover oil. Then I use the chainmail scrubber to lift up any bits of food left. 

    I place the pan on the stove top at medium heat and let it dry completely. Then I pour a tablespoon of oil on the pan and rub it onto the entire inside of the pan with a paper towel. Remove the skillet from heat and it's ready for your next meal.

    Remember to never put your cast iron skillet into the dishwasher.

    What type of pasta should I use for this casserole?

    I'm a big fan of gluten free brown rice pasta. I like how well it holds up to being baked and doesn't get soggy. I also think brown rice pasta has a nice texture and is the closest thing I've found to regular wheat pasta. 

    Some of my favorite brown rice pasta brands are: Jovial, Tinkyada, Trader Joe's

    What I'm Reading - I'm currently reading Songs In Ursa Major by Emma Brodie and loving the rock and roll start up story. If you enjoyed Daisy Jones and the Six by Taylor Jenkins Reid this book is for you! I read most everything from my Kindle. I love that I can have multiple books in one little device that I can toss in my purse when we go somewhere.

    What We're Watching - We are watching Startup on Netflix. It's a few years old and was originally on Crackle. There are three seasons so far and we are hooked.

    What I Just Got - I had been looking for some rubber Birkenstock type sandals that were a less expensive version. I found these FunkyMonkey Double Buckle Slides on Amazon. They are so comfortable! I wear these in the garden and around the farm. When they get dirty I hose them off.

    What I Want To Try - I've been wanting to try these Hero Cosmetics Mighty Patches. I get monthly acne around my chin and I've read these work amazing. Have you tried them? Are they as good as the reviews say they are?

    What I'm Trying - I've been looking all over for some simple, cotton capris. I love them for wearing around during the summer and needed some replacement pairs. I finally found this pair of Champion Jersey Capris. They just came in the mail and I think they will be perfect!

    This is my favorite cast iron pan that I use almost everyday. It is inexpensive and has really held up well to all the use.

    Speaking of cast iron pans this chainmail scrubber is my favorite way to clean the pan with water and then I heat the pan to dry and sanitize.

    I love a great hat for summer days that I don't want to deal with my hair. This cute straw hat with a black band looks perfect for summer.

    I'm loving this stylish two tiered fruit basket. It would be perfect for fruit or ripening tomatoes from the garden. I like that I could put bananas on top and then have plenty of room for everything else on the bottom tier.

    I'm a huge fan of beautiful cake stands. I love that this wooden cake stand also has a glass dome to keep the cake fresh.

    I love a citronella candle for the patio to keep bugs at bay. This lovely ceramic version is perfect and then I would use this pot for a plant once the candle is gone.

    I love days at the beach, but honestly I don't like laying in the sand. I'm loving these beach lounge chairs that have carrying straps on the back.

    I love a flowing top for summer. They go great with shorts, a skirt or leggings. This pretty babydoll top is perfect for the hot summer days.

    I had a pair of mule clogs in high school (in the 90s) that looked just like these strappy mule clogs! I think I might need them.

    I've always been more of a bright red or pink girl for pedicures, but I'm really liking all the pearlescent white pedicures I'm seeing. Pretty!

    Instant Pot Rhubarb Simple Syrup

    This easy recipe for instant pot rhubarb syrup is amazing in drinks. This simple syrup takes just four ingredients and is perfect for cocktails, mocktails and with soda. You can make this delicious homemade syrup in your pressure pot in just 10 minutes!

    I love to make a couple of bottles of this to have on hand for spring and summer drinks. I like to add ½ cup of the instant pot rhubarb simple syrup to a glass full of ice and then pour sparkling water over top. It's such a refreshing drink!

    This also makes a delicious Italian soda if you add cream to the rhubarb simple syrup and sparkling water mixture. It's such a pretty drink to serve at gatherings, bridal showers or baby showers.

    • Water

    Instructions

    Add the chopped rhubarb, sugar, water and salt to the pot of your pressure cooker. Stir to incorporate all the ingredients together. Secure the lid and set to manual mode for 10 minutes.

    Let the steam release naturally. Remove the lid and let the mixture cool completely.

    Strain the rhubarb mixture through a wire mesh strainer. If there is still pulp you would like to remove from the simple syrup strain the mixture again through cheese cloth.

    Store the rhubarb simple syrup in the a sealed bottle in the refrigerator for up to a month.

    Is this instant pot rhubarb simple syrup hard to make?

    No! This is such an easy recipe. You are simply adding your ingredients to your instant pot or pressure pot and cooking on manual for 10 minutes. After letting the steam release naturally let the mixture cool before straining. I like to strain the mixture with a fine wire mesh strainer and then if there are still too many particle I strain again using cheese cloth.

    How do I make instant pot rhubarb simple syrup?

    Start by chopping up four cups of rhubarb. Add the rhubarb, sugar, water and sea salt to the pot of your instant pot. Stir to mix ingredients together. Set the pressure pot to manual for 10 minutes and let the steam release naturally.

    Let the rhubarb mixture cool completely before working with it. Then, strain the ingredients through a fine wire mesh strainer. If there is too much pulp in the syrup you may want to strain a second time through cheese cloth.

    I like to use the wire mesh strainer first because it cuts down on the time it takes the mixture to strain through the cheese cloth. If you just want to use cheese cloth you could let the mixture strain while you do something else and wait for it to fully drain.
