    Favorite Things July 9, 2021

    This a collection of things I'm loving right now. I've included recipes that are perfect for this season and some of my favorite things. Grab a cup of your favorite beverage and scroll through all the stuff I've enjoyed this week.

    New at Target

    I love the clothes for this season as they start to transition to styles that will work for late summer and into fall by adding layers. The colors this year are really pretty too! I want to order a couple of pairs of the new women's jeans. I also love these dresses. They would be so simples to put a sweater on with and wear when the temperatures start to get cooler.

    Stuff I Love

    What I'm Watching - We are watching The Mosquito Coast on Apple TV. I like the show, but my hang up is the son's character. We only have two episodes left and I'm hoping there is a reason his character has been so annoying.

    What I'm Reading - I just tore through in under a week Malibu Rising by Taylor Jenkins Reid. It is so good! I highly recommend this multi-generational novel.

    What I Just Ordered - I just restocked my Sunwarrior Chocolate Protein Powder. It's my favorite protein powder for smoothies and yogurt bowls.

    What I'm Loving - I'm so glad I purchased outdoor lounge chairs for our backyard! I love sitting in these chairs and reading a book. The exact two I have aren't available any longer, but this pair of lounge chairs are very similar.

    What I Want to Get - I was just watching a video of man oiling and selling wooden bowls in a french market and thought I need a wooden salad bowl! This wooden serving bowl looks like exactly what I want. It's a bonus that it's only $25!

    I love this simple initial necklace. It gives me a bit of a Carrie from Sex in the City vibe. Or maybe it just feels likes the 90's to me.

    This jute area rug looks sturdy and would add a bit of ruggedness to my living room. I love the layered rug look to add some coziness to a room.

    This gold flatware is so pretty! I think it would be amazing for fall and holiday place settings.

    I'm a big fan of canisters for storing things I buy in bulk and also baking supplies that come in bags. I find canisters in my pantry are so much easier to keep track of and find what I need.

    I'm a little bit in love with this white duvet cover set! I think the chenille pattern looks so pretty and it has a bit of a french vibe. So pretty! (I must be dreaming of France lately)

    This geometric lamp with it's soft gold and white coloring is beautiful. I don't need new lamps for my nightstand, but if I did I would scoop these up!

    I love pretty things for around our house. This waist basket is so pretty! I could leave it sitting out in our bathroom. Although, let me be honest, one of our cats would knock it over and spread it everywhere.

    One of the items I use the most in my kitchen is my weighted bottom steel mixing bowl. It's always my go to and I've been using it constantly with all the fruits and veggies from our garden.

    I'm a fan of culottes coming back into style. I love this white pair of culottes with their button details on the front.

    Gluten Free Pasta Chips

    This air fryer recipe for gluten free pasta chips is a great snack idea! I used brown rice gluten free pasta to make this homemade treat. I like them plain or dipped in ranch dip for a healthy snacking option.

    Ingredients

    • Jovial Farfalle Brown Rice Pasta
    • Olive Oil
    • Chili Lime Seasoning Blend
    • Sea Salt
    • Apple Cider Vinegar

    Instructions

    Cook the pasta per the instructions on the package.

    Drain the pasta and pour it into a mixing bowl. Immediately add olive oil and stir to help the pasta not clump together.

    Divide the pasta between two bowls and add the seasoning to each bowl. If you are only going to use one flavor you can use one bowl, but remember to divide the pasta into two batches for air frying.

    Add the first batch of pasta to the air fryer and air fry at 400 degrees for 10 minutes. At the five minute mark take the tray out and shake the pasta so it doesn't clump together. Place the tray back in the air fryer and let your pasta finish cooking.

    Pour the pasta chips into a bowl or onto a cookie sheet to let them cool.

    Follow the same instructions to cook the second batch of pasta chips.

    Serve plain or with your favorite dip. I served these with ranch dip.

    Frequently Asked Questions

    Can I make gluten free pasta chips in the air fryer?

    Yes! My favorite pasta to use is Jovial Gluten Free Brown Rice Farfalle pasta. The brown rice pasta holds together the best when I shake is half way through cooking in the air fryer basket to separate the pieces of pasta.

    How long does it take to make gluten free pasta chips in the air fryer?

    Like many gluten free foods it takes a bit longer to make gluten free pasta chips that it does using regular wheat pasta. I cooked these chips at 400 degrees for ten minutes. At the five minute mark I pulled the air fryer basket out and shook the chips so they weren't clumped together.

    I let the pasta chips cook for another five minutes and then poured them into a bowl to cool. They will be very hot and continue to cook a bit after you have poured them out to cool.

    Description

    Ingredients

    Scale

    1 - 12 ounce package Jovial Farfalle Brown Rice Pasta, divided

    Top Tip

    You could really add any seasoning blend you want or omit the seasoning all together and just add some salt. It is key that you add enough olive oil so the pasta doesn't clump together. This will help when you open the air fryer half way through cooking and shake the pasta to separate it.

    What I'm Reading - I just finished Haven Point by Virginia Hume. It was so good! It's the story of a grandmother and granddaughter that spans seven decades and ends up in the current times. It's so well written! I stayed up until 12:30 am to finish this book because I couldn't put it down.

    What I'm Watching - I know I'm late to this, but we just got Apple TV+ so I'm watching The Morning Show. It's so good. What a great cast!

    What I Just Ordered - Our dogs absolutely love the Top Chews Pork and Chicken Sausage Treats. I love that they are grain free and made in the USA. They actually smell like pepperoni sticks I buy for us!

    What I Want To Get - I have this flowy summer top in my cart and I think I need to order it. I love loose fitting, breathable summer clothes!

    What I'm Loving - I love these new stackable pint jars from Ball. I love jars for drinking glasses and these stack in my cupboard so nice!

    I love this simple white shirt from the Macy's Fourth of July sale. It is perfect for summer and would be cute with a blazer for fall.

    I'm a big fan of denim shirts. This denim shirtdress version is so cute! It would also go from summer to fall really easily with boots and a scarf.

    I didn't know that H&M has an entire beauty line. I'm not sure if it's clean, but they have some really fun highlighter and nail polish.

    As someone who is only 5'3" I'm pretty excited for chunky soled shoes to come back in style. I can get some height without the fear in heels of breaking my ankle.

    I love baskets for storage. I can feel like things are tidy because they are in their basket. I'm only joking a little. This rope basket looks super sturdy and it's pretty too.

    I'm a huge fan of comfy pull on shorts for summer. This pair of linen pull on shorts look cute and breathable for the hot months.

    For anyone still looking for the perfect swimsuit this lovely green shaping one piece swimsuit is under $40!

    I love a moisturizing lip balm for summer. It gives some color while also keeping my lips hydrated. I'm a fan of this lip balm from Honest.

    Gluten Free Raspberry Cornmeal Cake

    This easy gluten free raspberry cornmeal cake is made with fresh raspberry and has a dense texture. This dessert is perfect on it's own or with a simple glaze overtop. I love a simple polenta cake for summer dessert or brunch.

    I love the combination of cornmeal and summer fruits. This cake is also delicious with fresh strawberries or blueberries. For the tart fruits I like to add a simple powdered sugar and milk glaze. I put my recipe for a glaze in the notes.

    Ingredients

    • Fresh Raspberries
    • Gluten Free Flour
    • Gluten Free Yellow Cornmeal
    • Baking Powder
    • Xanthan Gum
    • Sea Salt
    • Granulated Sugar
    • Eggs
    • Milk
    • Vanilla Extract
    • Coconut Oil

    Instructions

    Preheat your oven to 350 degrees. Grease a 9-inch springform pan with coconut oil or butter and set aside.

    In a bowl whisk together the gluten free flour, yellow cornmeal, baking powder, xanthan gum and salt.

    In the bowl of your stand mixer beat together the granulated sugar and eggs. Add the milk, vanilla and melted coconut oil. Beat until combined.

    Add the dry ingredients to the wet ingredients and beat just until they are combined.

    Pour the cake batter into the greased 9-inch springform pan. Place the berries on top of the cake batter to cover the entire top.

    Bake at 350 degrees for 45-50 minutes or until a toothpick in the middle of the cake comes out clean.

    Let the cake cool for at least 10 minutes before releasing the outside of the pan.

    Serve plain or with a simple glaze on top.

    Frequently Asked Questions

    How do I make my gluten free cakes more moist?

    Gluten free baking tends to require more moisture or oil than when you are using regular wheat flour. For this gluten free raspberry cornmeal cake recipe I added milk and coconut oil to make it moist and delicious.

    If you are using a cake recipe that isn't turning out moist I would suggest adding a bit more oil or butter. You can also add mashed banana or applesauce to help your baked goods have more moisture.

    Do gluten free cakes take longer to bake?

    Yes, gluten free baking in general takes a little bit longer to bake than a cake made with regular wheat flour. However, gluten free baked goods tend to brown faster. So you will want to test the cake with a tooth pick in the center to make sure it's actually done even if it looks browned.
     
    Your cake should be a nice golden brown and a tooth pick inserted in the center of the cake should come out clean. You may need to bake your cake up to 5-8 minutes more. If your cake is already very brown, but not done in the center you will need to lower the oven temperature by 25 degrees and cook longer.

    Description

    For a simple glaze combine ½ cup of powdered sugar with 1-2 Tbsp. of milk until you can drizzle the glaze over the cake.

    What We're Watching - We are watching Ted Lasso on Apple TV and so far it's pretty funny. We also just watched the movie Good On Paper on Netflix. It wasn't the best, but it had funny moments.

    What I Just Got - It always seems like we lose flashlights. Yes, I know there is one on my phone, but I mean a real flashlight that I can see more than 6 feet. I ordered this rechargeable flashlight and I'm really happy with it.

    What I Want To Try - I love drinking everything on ice during the summer months. I saw this round ice tray and I think I need it. Do you have one? Does it actually make lovely round ice?

    What I'm Loving - Sometimes I don't need an entire pot of coffee. I'm loving this organic instant coffee! I like to add a scoop of collagen and a couple of tablespoons of coconut milk.

    I'm always looking for sturdy baskets to use for harvesting in the garden. This seagrass basket looks beautiful and like I could fill it full of produce too.

    I'm loving these mid length jean shorts! I like the little flip of the hem and that they aren't super short. It's also amazing that they are only $18!

    I was a teen in the 90's and Lip Smackers Watermelon gloss was my favorite. I want to try this cleaner option from Pacifica for vegan watermelon lip balm.

    Speaking of the 90's, I'm not sure I'm ready to go back to super high flip flops, but I do like this pair of sandals with a bit of a chunky sole.

    I saw these cute wire storage baskets during the Amazon sale. I'm still a little mad at myself for not ordering them. I may have to get these.

    I would like to have lights around our patio area. I've been looking at these edison style string lights.

    I've been trying to replace my favorite Beautycounter eyeshadow palette after they discontinued it. I love the colors in this new PYT Beauty Eyeshadow Palette.

    I've been looking for a new crossbody bag. I love to have my hands free and my current shoulder bag just keeps falling down. It's so annoying! I'm loving this medium sized crossbody bag.

    I may be late to the party, but I just found Target's line of semi precious jewelry. I'm loving this turquoise ring!
