    Put the sliced chicken into a mixing bowl and pour the oil over it. Stir to coat the chicken in oil.

    In a small bowl mix together the salt, garlic powder, onion powder, paprika, pepper, brown sugar and cornstarch.

    Sprinkle the seasoning mixture over the chicken and then stir to coat the chicken.

    Place the chicken in your air fryer basket in an even layer.

    Air fry at 400 degrees for 12 minutes. At 6 minutes it's very important to break the chicken apart with a fork and shake the basket so you get nice pieces of chicken bites.

    • Coconut Aminos
    • Brown Sugar
    • Minced Garlic
    • Sesame Oil
    • Salt
    • Ground Ginger

    In the bowl of your Crockpot add the beef broth, coconut aminos, brown sugar, minced garlic, sesame oil, salt, ginger and pepper. Stir to combine.

    Lay the beef roast strips in the crockpot evenly.

    Cook on high heat 1-2 hours or low heat 4-5 hours.

    30 minutes before the beef strips are done combine the cornstarch and 3 tablespoons of water in a small bowl. Pour the cornstarch mixture into the beef mixture and stir to combine. Add the frozen broccoli and stir.

    Continue to cook in the slow cooker until the beef is done and the broccoli is tender.

    Make your rice to serve the beef and broccoli over. I like to make mine in the Instant Pot. I add 2 cups jasmine rice and 2 ½ cups water. Cook on manual for 3 minutes and let the pressure release naturally.

    Instructions

    My favorite way to serve this is over rice. Jasmine rice is my favorite for its texture. I cook mine in my Instant Pot. I add 2 cups Jasmine Rice and 2 ½ cups water for 3 minutes on Manual. Then let the steam release naturally.

    I'm aware that others say to do a one to one ratio with the rice and water. For me this allows the rice to stick together too much. Adding the extra ½ cup of water gives me rice that is easily fluffed with a fork and served.

    In a large skillet over medium heat cook and chop the ground beef until only a little pink remains. Add the chopped onion and cook until it begins to be translucent.

    Description

    This Gluten Free Cheesy Mushroom Hamburger Rice Casserole is an easy, one pot dinner that's perfect for busy weeknights and cozy family meals. Made with ground beef, this hamburger and rice casserole comes together quickly and bakes into a hearty, comforting dish with melted cheese in every bite. 


    Ingredients

    Scale
    • 1 pound Ground Beef
    • 1 medium Yellow Onion, chopped
    • 10 ounce bag Frozen Mushrooms
    • 1 tsp Salt
    • ½ tsp Ground Black Pepper
    • 2 Tbsp Worcestershire Sauce
    • ½ cup Sour Cream
    • 8 ounces Cream Cheese
    • 2 - 14.5 ounce cans Diced Tomatoes, do not drain juice
    • 1 cup Jasmine Rice
    • 2 cups Mozzarella Cheese, shredded

    Instructions

    In a large skillet over medium heat cook and chop the ground beef until only a little pink remains. Add the chopped onion and cook until it begins to be translucent.

    Add the mushrooms and cook until defrosted. Add the salt, pepper, worcestershire sauce, sour cream and cream cheese to the skillet mixture.

    Stir well until the cream cheese is melted and ingredients are mixed together.

    Add the canned diced tomatoes with the juice and the jasmine rice. Stir to combine.

    Bring the mixture to a simmer and put lid on your pan. Simmer 15-20 minutes until the rice is done. Stir occasionally.

    When the rice is done sprinkle the shredded mozzarella cheese on top and let melt. When the cheese is melted serve the casserole.

    Top Tip

    You can use fresh mushrooms in this recipe. I love having frozen ones in my freezer though for meal planning so I don't have to worry about them going bad.
