    Ingredients

    • Olive Oil
    • Chicken Breasts
    • Yellow Onion
    • Minced Garlic
    • Dried Italian Seasoning
    • Dried Parsley
    • Sea Salt
    • Coarse Ground Black Pepper
    • Marinara Sauce
    • Canned Diced Tomatoes
    • Chicken Stock
    • Gluten Free Penne Pasta
    • Mozzarella Cheese
    • Parmesan Cheese

    Instructions

    Preheat your oven to 350 degrees.

    In a cast iron skillet or oven safe pan over medium heat add the olive oil. Cook the chicken breast until almost done. Then add the onion, garlic, italian seasoning, parsley, salt and pepper. Cook until the onions are translucent and the chicken is done.

    Add the marinara sauce, diced tomatoes, chicken stock, penne pasta, 1 cup mozzarella cheese and parmesan cheese. Stir to combine the ingredients.

    Top with the remaining ½ cup mozzarella cheese.

    Bake at 350 degrees for 35-40 minutes. The casserole will be bubbling and the pasta will be el dente when the casserole is done.

    After the chicken parmesan casserole has cooled completely store in an air tight container in the refrigerator for up to 5 days.

    How do I clean and season my cast iron skillet?

    I love to cook with cast iron. It evenly heats and is easy to clean. I like to use this U-picks Cast Iron Skillet Cleaner Chainmail Scrubber that I got from Amazon. I rinse the pan with hot water to remove any loose food and leftover oil. Then I use the chainmail scrubber to lift up any bits of food left.
     
    I place the pan on the stove top at medium heat and let it dry completely. Then I pour a tablespoon of oil on the pan and rub it onto the entire inside of the pan with a paper towel. Remove the skillet from heat and it's ready for your next meal.

    Remember to never put your cast iron skillet into the dishwasher.

    What type of pasta should I use for this casserole?

    I'm a big fan of gluten free brown rice pasta. I like how well it holds up to being baked and doesn't get soggy. I also think brown rice pasta has a nice texture and is the closest thing I've found to regular wheat pasta.

    • 2 Tbsp. Minced Garlic

    I love to use my cast iron skillet to make this recipe a one pan meal, but you could also use a frying pan and then a 9x13 baking dish to make this recipe. Another option would be to use a 6-7 quart dutch oven.

    Ingredients

    • Ground Beef
    • Egg
    • Yellow Onion
    • Gluten Free Bread Crumbs
    • Minced Garlic
    • Spicy Brown Mustard
    • Worcestershire Sauce
    • Sea Salt
    • Dried Basil
    • Coarse Ground Black Pepper
    • Olive Oil
    • Unsalted Butter
    • Heavy Whipping Cream
    • Beef Broth
    • Mushrooms
    • Gluten Free Flour
    • Dried Oregano

    Instructions

    In a large mixing bowl mix together the ground beef, egg, grated yellow onion, gluten free bread crumbs, minced garlic, spicy brown mustard, worcestershire sauce, sea salt, dried basil and ground pepper. I use my hands, but you can use a large spoon also.

    Place your 12-inch frying pan over medium high heat and add the 2 tablespoons of olive oil.

    Press the beef mixture into six even patties and place them in the frying pan. Fry them until one side is browned and then flip to finish cooking. The patties should be at least 160 degrees in the center to be completely cooked. Once the patties are cooked remove them from the frying pan to a platter.

    Add the unsalted butter to the frying pan on medium high heat and let melt. Add the yellow onion, mushrooms and minced garlic. Cook down the mixture until the onion is translucent and the mushrooms are cooked.

    Sprinkle the gluten free flour over the onion mixture and let that soak up the liquid. Add the heavy cream, beef broth, sea salt, black pepper and dried oregano to the pan. 

    Bring this mixture to a simmer and stir for 5-7 minutes until the gravy is thickened.

    Add the salisbury steaks back to the pan and let them heat back up for 2-3 minutes. 

    Serve this over mashed potatoes or with steamed mixed vegetables.

    What side dish goes well with this recipe?

    Steamed vegetables are a great side dish with this recipe. My seven layer salad or easy pea salad would also be really great options for a side dishes.

    I like to serve this gluten free salisbury steak with mashed potatoes that I can pour the mushroom gravy over top. To keep this recipe low carb I would serve it with a side salad or steamed vegetables.

    What type of pan should I use for this recipe?

    I used a ceramic nonstick pan for this recipe, but you could easily use your twelve-inch cast iron pan. I like the nonstick pan for this recipe because I cook the salisbury steaks first and then after removing them from the pan I cook the gravy.

    The nonstick pan is great for cooking the gravy of medium low heat at a simmer to get a thick gravy to pour over the salisbury steak.

    Salisbury Steaks:

    • 1 pound Ground Beef

    • 2 tsp. Worcestershire Sauce

    Mushroom Gravy:

    • 4 Tbsp. Unsalted Butter

    • 8 ounces Mushrooms, sliced
    • 2 Tbsp. Minced Garlic

    Instructions

    • Granulated Sugar
    • Gluten Free Flour
    • Cocoa Powder
    • Baking Powder
    • Xanthan Gum
    • Baking Soda

    • Semi-Sweet Chocolate Chips

    Instructions

    Preheat your oven to 325 degrees. Grease your 9x5 loaf pan with coconut oil or butter and line with parchment paper. Set aside.

    In a mixing bowl whisk together the gluten free flour, cocoa powder, baking powder, xanthan gum, baking soda and sea salt. Set aside.

    In a microwave safe bowl melt the chocolate chips. I heat for 30 seconds at a time stirring in between until the chocolate is smooth. Set aside to cool slightly.

    In the bowl of your stand mixer beat together the unsalted butter and granulated sugar for 2-3 minutes until well combined. Add the eggs one at a time beating the mixture in between to combine. Add the vanilla and beat to combine.

    Add the melted chocolate and buttermilk to the mixture and beat to combine. 

    Finally, add the dry ingredients to the wet mixture slowly until all ingredients are combined. The batter should be smooth and slightly thick. 

    Pour the batter into the greased 9x5 loaf pan.

    Bake at 325 degrees for 1 hour or until a toothpick inserted in the center of the cake comes out clean.

    Leave the cake in the pan for 10 minutes and then move to a cooling rack to completely cool before icing.

    How do I make my gluten free cakes more moist?

    Gluten free baking tends to require more moisture or oil than when you are using regular wheat flour. For this gluten free chocolate pound cake the buttermilk makes it moist and delicious.

    If you are using a cake recipe that isn't turning out moist I would suggest adding a bit more oil or butter. You can also add mashed banana or applesauce to help your baked goods have more moisture.

    Do gluten free cakes take longer to bake?

    Yes, gluten free baking in general takes a little bit longer to bake than a cake made with regular wheat flour. However, gluten free baked goods tend to brown faster. So you will want to test the cake with a tooth pick in the center to make sure it's actually done even if it looks browned and done.
     
    Your cake should be a nice golden brown and a tooth pick inserted in the center of the cake should come out clean. You may need to bake your cake up to 5-8 minutes more. If your cake is already very brown or getting crisp on the outside, but not done in the center you will need to lower the oven temperature by 25 degrees and cook a bit longer.
