Gluten Free Scotch Eggs with Honey Mustard Dipping Sauce

This easy recipe for oven baked gluten free scotch eggs with honey mustard dipping sauce is made with boiled eggs, sausage and gluten free bread crumbs. The scotch eggs are delicious on their own, but the special sauce makes them even better. I used turkey sausage for mine, but you could also use pork sausage for a rich treat.

a blue floral plate with five scotch eggs next to a small white bowl of honey mustard dipping sauce.

For the recipe I split one pound of sausage into five equal sections. Then, I flatten the section in my hand as evenly as possible. I wrap the sausage around the boiled egg (with the shell removed) and make sure the entire outside of the egg is coated.

Next in a small bowl I have one egg that is beaten. I roll the sausage coated egg in the beaten egg and then roll it in the gluten free bread crumbs. Place the final product on a baking sheet or in a baking dish and bake for 30 to 35 minutes. The outside will be browned and the sausage will be completely cooked when the scotch egg is done.

    Ingredients

    • Turkey Sausage or Pork Sausage
    • Eggs
    • Gluten Free Bread Crumbs
    • Sea Salt
    • Coarse Ground Black Pepper
    • Mayonnaise
    • Spicy Brown Mustard
    • Honey

    Instructions

Preheat your oven to 400 degrees.

In a small bowl mix the gluten free bread crumbs, salt and pepper.

In another small bowl lightly beat the egg for rolling the scotch eggs in.

Divide the pound of ground sausage into five portions. Take a portion and flatten it out evenly in your hand. Wrap the sausage patty around the egg until the entire surface of the egg is covered.

Roll the sausage wrapped egg in the beaten and egg and then the crumb mixture. Place on a baking sheet. Repeat this step four more times. Be sure to leave room between each egg so they cook evenly.

Bake the scotch eggs at 400 degrees for 30 minutes. The eggs will be browned and the juice around them will be clear or slightly browned when they are done.

While the scotch eggs are baking make the honey mustard dipping sauce. In a bowl or jar add the mayonnaise, mustard and honey. Using a whisk or immersion blender blend the ingredients together until smooth and combined. Store in a sealed container in the refrigerator.

Let the scotch eggs cool slightly and then remove them from the baking sheet with a turner.

Serve them immediately warm with the dipping sauce or refrigerate them for at least 2 hours and serve cold with the dipping sauce.

    Ingredients

    Scale
    • 1 pound Ground Turkey Sausage or Pork Sausage
    • 5 Eggs, hard boiled and peeled
    • 1 large Egg, beaten
    • ¾ cup Gluten Free Bread Crumbs
    • ½ tsp. Sea Salt
    • ¼ tsp. Coarse Ground Black Pepper

    Dipping Sauce:

    • 1 cup Mayonnaise
    • ½ cup Spicy Brown Mustard
    • ¼ cup Honey

    Instructions

Preheat your oven to 400 degrees.

In a small bowl mix the gluten free bread crumbs, salt and pepper.

In another small bowl lightly beat the egg for rolling the scotch eggs in.

Divide the pound of ground sausage into five portions. Take a portion and flatten it out evenly in your hand. Wrap the sausage patty around the egg until the entire surface of the egg is covered.

Serve them immediately warm with the dipping sauce or refrigerate them for at least 2 hours and serve cold with the dipping sauce.

    Notes

I like to save my mayonnaise jars for making sauces and dressings in. They work perfectly with an immersion blender and then one container can go directly into the fridge. I love less mess!

    Frequently Asked Questions

Why is a Scotch egg called a Scotch egg?

Mincing meat is also known as scotching. This recipe is made of eggs coated in minced or scotched meat, rolled in egg and then gluten free bread crumbs. Traditionally the recipe uses pork sausage, but I used turkey sausage for mine.

Do I eat my scotch eggs hot or cold?

This is really based on personal preference. I love to eat these gluten free scotch eggs hot, but traditionally scotch eggs are picnic or pub food and are served cold. I like to eat one warm right after I make them and then wrap the rest in tinfoil and have them cold the next day for breakfast.

    Gluten Free Iced Lemon Cookies

These Gluten Free Iced Lemon Cookies are one of my absolute favorite recipes on this site and I think once you make them you are going to completely understand why. They are soft, tender, and melt in your mouth in the most incredible way and the lemon flavor is bright and real thanks to both lemon extract and fresh lemon zest in the dough.

The sweet drizzled lemon glaze on top makes them look so beautiful and nobody ever believes they are completely gluten free.

a gold wire basket lined with parchment paper of gluten free iced lemon cookies next to a bowl of lemons and a mug of hot tea.

The best part about this recipe is how simple it is to pull together. The dough comes together quickly in a stand mixer, the cookies bake in just 15 minutes, and once they cool you drizzle the glaze over the top and let it set. That is it.

They are perfect for Easter and Mother's Day, beautiful on a spring dessert table, wonderful for gifting, and honestly just as good with a cup of tea on a random Tuesday afternoon.

This is one of those recipes you are going to keep coming back to all season long.

If you made these Gluten Free Iced Lemon Cookies I would love to hear what you thought! Please leave a star rating and a comment below. This is one of my favorite gluten free cookie recipes and I hope it becomes one of yours too!

    Storage

Store these gluten free iced lemon cookies in a sealed container at room temperature for up to one week. Do not store them in the refrigerator as this changes their texture and can make them hard and dry. If you want to keep them longer place the cookies in a freezer safe container and freeze for up to one month. Let them thaw at room temperature before serving. I recommend letting the lemon glaze dry completely before stacking or storing the cookies so they do not stick together.

    Top Tip

Make sure your butter is completely at room temperature before you begin. Cold butter will not cream properly with the sugar and you will end up with a denser less tender cookie. I take my butter out of the refrigerator at least an hour before I start baking. Room temperature butter creamed until fluffy with the sugar is the key to getting that perfect soft and melt in your mouth texture in every single cookie.

    Frequently Asked Questions

How should I store gluten free cookies?

I like to store my gluten free cookies in a sealed container on our countertop. If they aren't going to get eaten before they expire I freeze them. You can place the cookies in the fridge, but this changes their texture and can make them hard.

If you are going to freeze the cookies, place them in a freezer safe container and store for up to a month in the freezer.

Do gluten free cookies take longer to bake?

Yes, gluten free cookies do tend to take longer to bake than cookies made with a wheat flour. The outside of the cookie will be browned, but they may not be cooked through in the center.

If you are having this issue you can lower the oven temperature and bake the cookies a bit longer. I also only bake one baking sheet at a time of gluten free cookies. They need to be evenly heated to cook correctly.

    Gluten Free Oatmeal Scotchie Cookies

This easy recipe for gluten free oatmeal scotchie cookies uses oatmeal and butterscotch chips for a chewy, classic cookie made completely gluten free. These were my dad's favorite growing up, and mine too. I used to love baking a batch to pack in our lunches.

a sage green plate of gluten free scotchie cookies next to a small white bowl of butterscotch chips and a small wooden bowl of gluten free rolled oats.

One thing worth knowing before you start: not every brand of butterscotch chips is gluten free. The chill time is worth planning around too, since it makes the difference between a cookie that holds its shape and one that spreads thin.

    Why You'll Love These Cookies

    • Soft, chewy centers with just the right amount of spice
    • Loaded with butterscotch chips in every bite
    • A classic cookie made completely gluten free
    • Freezes well for lunches or a quick treat

A Note on Gluten Free Butterscotch Chips

Not all butterscotch chips are gluten free, so it's worth double checking the label before you buy. Guittard's butterscotch chips are a reliable gluten free option. Nestle's butterscotch chips and Great Value butterscotch chips have historically not been labeled gluten free, though packaging can change over time, so always check the current label.

    Ingredient Notes

    • Gluten free flour: a 1 to 1 gluten free blend like Bob's Red Mill 1 to 1 or King Arthur Measure for Measure works well here.
    • Gluten free rolled oats: oats are naturally gluten free, but cross contamination during processing is common. Look for oats labeled certified gluten free.
    • Butterscotch chips: see the note above, not every brand is safe for a gluten free diet.

    How to Store and Freeze

Store cookies in an airtight container at room temperature for up to a week.

To freeze, bake and cool the cookies completely first, then place them in a freezer safe container for up to a month. They rarely last that long! This is a great one to double batch: freeze half and pull them out for lunches whenever you need a quick treat.

    Top Tip

If your dough feels sticky when you're rolling it into balls, wet your hands with a little water instead of adding more flour. Adding extra flour can make the cookies dry, while a little water on your hands keeps the dough from sticking without changing the texture.

    Frequently Asked Questions

    Can I freeze these cookies?

Yes. I like to freeze the cookies after they have been baked. I put the baked cookies in a freezer safe container and freeze them for up to a month, but they rarely last that long.

I love to make a double batch of cookies and freeze half of them for lunches on days that I don't have any treats prepared.

How do you keep these cookies from spreading too much when I bake them?

It is important that you refrigerate this gluten free oatmeal scotchie cookie dough for at least one hour before baking. If you don't refrigerate the dough it's harder to work with and the cookies will spread too much when you bake them.

    Are butterscotch chips gluten free?

Not always. Check the label before you buy, since brands and formulations can change. Guittard's butterscotch chips are a reliable gluten free option.

Can I use quick oats instead of rolled oats?

Yes, either will work in this recipe. Rolled oats give a slightly heartier, more traditional texture.

Gluten Free Chocolate Chip Banana Muffins

These gluten free chocolate chip banana muffins are the recipe I make every single time I have overripe bananas sitting on the counter and they never last more than a day or two in our house. Moist and fluffy gluten free muffins loaded with sweet ripe banana flavor and studded with semi-sweet chocolate chips throughout, they are ready in just 30 minutes with simple everyday ingredients and one bowl to clean up.

No complicated steps required. Just mix everything together in your stand mixer, scoop into a muffin tin, and bake until perfectly golden.

a muffin tin of gluten free chocolate chip banana muffins next to a small bowl of chocolate chips and white plate with a muffin on it.

What makes these gluten free banana muffins so good is the combination of both brown sugar and granulated sugar along with the natural sweetness of very ripe bananas. The browner and spottier your bananas are the sweeter and more flavorful these muffins will be so do not throw those overripe bananas away.

A touch of cinnamon in the batter adds a subtle warmth that pairs beautifully with the chocolate chips and makes these taste like something from a really good bakery.

They are the perfect gluten free breakfast muffin, an easy after school snack, and a great option for meal prep since they store well all week and freeze beautifully for later.

If you use a banana that isn't overripe you may want to add 2 tablespoons of honey for a little extra sweetness.

    Storage

Store these gluten free chocolate chip banana muffins in an airtight container at room temperature for up to 3 days. For longer storage place the muffins in a sealed airtight container in the refrigerator for up to 5 days. These muffins also freeze beautifully which makes them perfect for meal prep.

Once completely cooled place individual muffins in a freezer safe bag or airtight container and freeze for up to 3 months. Thaw individual muffins at room temperature for about an hour or warm them in the microwave for 30 to 45 seconds straight from the freezer for a quick and easy gluten free breakfast any morning of the week.

    Top Tip

The riper your bananas are the better these muffins will be. Perfectly yellow bananas will work in a pinch but very ripe bananas with lots of brown spots are what give these muffins their natural sweetness, deep banana flavor, and incredibly moist texture.

If your bananas are not quite ripe enough you can speed up the process by placing unpeeled bananas on a baking sheet and baking them at 300 degrees for 15 to 20 minutes until the skins turn black and the bananas are soft and sweet all the way through. Let them cool before adding them to the batter and you will get the same result as naturally overripe bananas every single time.

    Frequently Asked Questions

Why are my gluten free banana muffins dry?

The most common reason for dry gluten free banana muffins is the flour blend you are using. Different gluten free flour blends absorb moisture at very different rates and some absorb significantly more liquid than others. If your batter seems very thick and dry before baking add a tablespoon or two of extra milk to loosen it up slightly.

Also make sure you are using very ripe bananas as they provide the most natural moisture and sweetness. Measuring your gluten free flour by spooning it into the measuring cup and leveling off the top rather than scooping directly from the bag can also help prevent using too much flour which leads to a dry muffin.

What is the best gluten free flour for banana muffins?

I use Bob's Red Mill 1 to 1 Gluten Free Baking Flour and King Arthur Measure for Measure Gluten Free Flour work well. Keep in mind that different flour blends absorb moisture differently so you may need to adjust the amount of milk slightly depending on which brand you use. Always look for a blend that contains xanthan gum for the best texture and rise.

Can I use frozen bananas for this recipe?

Yes! Frozen bananas work beautifully in this recipe and are a great way to use up bananas you have frozen before they went bad. Thaw the bananas completely at room temperature or in the microwave before adding them to the batter. Drain off any excess liquid that has collected as the bananas thaw and then add them to the mixer as you would fresh ripe bananas. Frozen and thawed bananas are often even sweeter and more flavorful than fresh overripe bananas so your muffins will be incredibly delicious.

Can I make these muffins without chocolate chips?

Absolutely! If you prefer plain banana muffins simply leave out the chocolate chips and the recipe works exactly the same way. You can also substitute other mix ins for the chocolate chips to customize the muffins to your taste. Chopped walnuts or pecans add a wonderful crunch, dried cranberries add a tart and chewy element, and white chocolate chips are a delicious and slightly sweeter alternative to semi sweet chocolate chips.

Can I make these muffins dairy free?

Yes! To make these muffins dairy free substitute your favorite unsweetened dairy free milk for the regular milk and use melted coconut oil or a dairy free butter alternative in place of the unsalted butter. The texture and flavor will be very similar to the original recipe and the muffins will still be moist and delicious. Make sure your chocolate chips are also dairy free if you need a completely dairy free muffin.

    Can I double this recipe?

Yes but keep in mind that different gluten free flour blends absorb moisture at different rates so if you are doubling the recipe may need to adjust the amount of milk to get the right batter consistency. The batter should be thick but scoopable and not crumbly or dry before baking. If the doubled batter seems too dry add extra milk one tablespoon at a time until it reaches the right consistency. Bake in two muffin tins at the same temperature and keep an eye on the bake time as it may vary slightly.

    Frequently Asked Questions

How do I add orange flavor to the cake?

To get the best pop of orange flavor it's best to use fresh orange zest and fresh orange juice. You can use two large oranges to get the two teaspoons of zest and half cup of juice that you need.

This is a great way to use up the last oranges in your fruit bowl. Even if they are starting to get too ripe they will work perfect for this recipe and give a sweet citrus flavor.

How long should a bundt cake cool before glazing?

It is best to let your gluten free orange bundt cake cool completely before adding the glaze. I like to let mine set for at least two hours.

I prefer to make the cake the day before I need it and glaze it the next day before serving or guests arrive. This lets the cake cool completely and allows the glaze to be fresh.

How can I enhance the orange flavor?

If you are using orange juice from a carton and/or dried zest you could also add ½ teaspoon of orange extract or orange oil to enhance the orange flavor.
There is nothing wrong with using juice from a carton or dried zest.

Sometimes that's all I have access to depending on the season. However, the orange flavor won't be as strong, so adding the orange oil will enhance your cake.

    Top Tip

This cake is a great way to use up those last two oranges that are in your fruit bowl. Fresh orange zest and fresh squeezed orange juice make this cakes flavor pop! If you only have orange juice in a carton and dried zest that will work too.

This is a great recipe to use with a smaller individual bundt cake pan too. The individual little cakes look so pretty served with the glaze at a gathering or on a dessert table.
