    I love an easy one pot recipe for quick winter comfort food recipes! This ground beef pasta casserole can be made in a cast iron skillet or in a regular frying pan and then transferred to a baking dish to go in the oven.

    Ingredients

    • Ground Beef
    • Yellow Onion
    • Minced Garlic
    • Diced Tomatoes
    • Tomato Sauce
    • Tomato Paste
    • Beef Broth
    • Italian Seasoning
    • Sea Salt
    • Coarse Ground Black Pepper
    • Gluten Free Penne Pasta
    • Sour Cream
    • Cream Cheese
    • Cheddar Cheese
    • Monterey Jack Cheese

    Instructions

    Preheat your oven to 350 degrees.

    In a cast iron skillet or frying pan over medium heat cook the ground beef until just a little pink remains. Add the chopped onion and minced garlic. Cook on medium heat until the onion is translucent.

    Add the diced tomatoes, tomato sauce, tomato paste, beef broth, Italian seasoning, sea salt and pepper. Stir to combine the ingredients and heat to a simmer.

    Add the sour cream, cream cheese, ½ cup cheddar cheese, ½ cup monterey jack cheese and uncooked penne pasta. Stir to combine.

    If you are using a frying pan transfer this mixture to a baking dish.

    Top the dish or skillet with the remaining ½ cup cheddar cheese and ½ cup monterey jack cheese.

    Bake at 350 degrees for 35 minutes or until bubbling around the edges and browned slightly.

    Substitutions

    • Ground Turkey or Chicken - instead of ground beef you can substitute ground turkey or ground chicken
    • Mozzarella Cheese - you can replace the monterey jack cheese with mozzarella cheese
    • Gluten Free Spiral Pasta - the penne pasta can be replaced with spiral or rotini pasta

    Storage

    Let the leftovers cool to room temperature and then store in an air tight container in the refrigerator for up to 5 days. I love to make this recipe for meal prep and then store single servings in containers in the fridge for lunches.

    I'm a big fan of gluten free brown rice pasta. I think it holds up the best in recipes and has a nice texture. My favorites are Jovial Gluten Free Brown Rice Penne Pasta and Jovial Gluten Free Brown Rice Fusilli Pasta.

    1 pound Ground Beef

    12 ounce box Gluten Free Penne Pasta

    Yes! You can substitute an equal amount of ground chicken or ground turkey for the ground beef in this recipe. Follow the same instructions for this substitution.

    What type of gluten free pasta is the best?

    Gluten free brown rice pasta is my favorite for flavor and texture. I've found brown rice pasta holds its shape better in recipes and doesn't turn into mush. My favorite brand is Jovial Foods.

    How do I clean and season my cast iron skillet?

    I love to cook with cast iron. It evenly heats and is easy to clean. I like to use this U-picks Cast Iron Skillet Cleaner Chainmail Scrubber that I got from Amazon. I rinse the pan with hot water to remove any loose food and leftover oil. Then I use the chainmail scrubber to lift up any bits of food left. 

    I place the pan on the stove top at medium heat and let it dry completely. Then I pour a tablespoon of oil on the pan and rub it onto the entire inside of the pan with a paper towel. Remove the skillet from heat and it's ready for your next meal.

    Remember to never put your cast iron skillet into the dishwasher.

    In my opinion cookies are the easiest gluten free treat you can make. I love the simplicity of making cookie dough and baking them. I like to make half batches of multiple types of cookies so I can make a tray full of different treats.

    Hot soup is such a simple meal, but always welcome on cold days. I love to make a big pot of soup while I'm meal prepping to have for lunch all week long. I'm also a big fan of making a double batch of soup and freezing half for later in a freezer safe bag or container.

    What soup broth is gluten free?

    Most chicken, beef and vegetable broths are gluten free. Always check the label, but a true broth shouldn't include ingredients with gluten. If you are using bouillon in your recipe be sure to check the ingredients carefully. Most bouillon does contain gluten!

    How can I thicken soup without gluten?

    You can use gluten free flour, arrowroot powder, tapioca powder or cornstarch to thicken a gluten free soup. In a small bowl mix the thickener with some water before pouring into your soup so it doesn't clump.

    I love pumpkin pie! It is easily my favorite Thanksgiving dessert option. This gluten free praline pumpkin pie takes the classic pumpkin pie to a new level. The crunch from the pecan praline topping is so good!

    • Gluten Free Graham Cracker Pie Crust
    • Pumpkin Puree
    • Brown Sugar
    • Milk
    • Eggs
    • Vanilla Extract
    • Ground Cinnamon
    • Ground Cloves
    • Ground Ginger
    • Ground Nutmeg
    • Ground Allspice
    • Sea Salt
    • Pecans
    • Maple Syrup

    Instructions

    In your stand mixer blend together the pumpkin puree, brown sugar, milk, eggs, vanilla, cinnamon, cloves, ginger, nutmeg, allspice and salt. Pour the pumpkin mixture into the gluten free graham cracker pie crust.

    While the pie is baking in a mixing bowl stir together the pecans, brown sugar, maple syrup, vanilla and salt until combined.

    Bake at 350 degrees for 15 minutes or until a toothpick inserted in the center comes out clean.

    Let the pie cool to room temperature before cutting.

    Praline is a mixture of pecans and brown sugar. It usually also includes vanilla extract and salt. For this recipe I also added maple syrup for the delicious flavor.

    Can I use a store bought crust for this recipe?

    Yes! I love the simplicity of using store bought gluten free crusts. For this recipe I used a gluten free graham cracker crust, but you could also use a regular gluten free crust.
