    This a collection of things I'm loving right now. I've included recipes that are perfect for this season and some of my favorite things. Grab a cup of your favorite beverage and scroll through all the stuff I've enjoyed this week.

    Favorites for Spring

    I love the spring pinks, yellow, blues and mint green! There are so many pretty kitchen appliances in spring colors available right now. If you need new small appliances why not get them in a lovely spring color.

    Stuff I Love

    Reading - "The Case of the Missing Marquess: An Enola Holmes Mystery" Did you watch the Netflix movie? I've had these books on my reading list forever and after watching the movie knew I had to read them.

    Flipping Through - The spring issue of Magnolia Journal. I look forward to this magazine arriving! It's so inspiring. The content is thought provoking and lovely. Even the feel of the paper they print the cover on is nice. (Yes, I'm a nerd who worked in marketing. I notice things like paper feel.)

    Snack I'm Craving - Thrive Market's Chili Lime Plantain Chips. They are salty with a little kick of spice and a nice crunch. They are the perfect potato chip replacement. They're on sale right now too!

    New Stuff - I just got this cute, wooden Thyme and Table cutting board with a chevron pattern with my Walmart pickup order. I find some really cute props for photography and my kitchen at Walmart.

    Something I want - Did you know Walmart has a new clothing line called Free Assembly? There are some really cute clothes! I want this Free Assembly Camp Shirtdress in green.

    Listening to - The Dr. Axe Show Podcast episode with Dr. Motley called Heal Your Brain, Focus and Memory and Overcome ADHD, Depression, Dementia and More. It's so interesting how gut health and immune system health effect our brains. I know when my inflammation is up because I get brain fog and I hate it.

    Gluten Free Slow Cooker Lasagna Soup

    This easy recipe for gluten free slow cooker lasagna soup is perfect for a weeknight meal. It's made with gluten free lasagna noodles, diced tomatoes and ground beef. The meat and sauce cook in the crockpot and then you add the pasta 30 minutes before serving.

    We love this recipe for putting together a meal that I don't have to stir and watch while it cooks. I put this in the crockpot and do other things while dinner is being made. I highly suggest topping with the cottage cheese, parmesan and mozzarella. It really adds to the flavor of the soup!

    I'm a big fan of my Crock Pot 6 quart Slow Cooker. It's the perfect size for most recipes and easy to clean up when I'm done.

    Ingredients:

    Ground Beef
    Canned Diced Tomatoes
    Yellow Onion
    Minced Garlic
    Marinara Sauce
    Beef Broth
    Italian Seasoning
    Sea Salt
    Coarse Ground Black Pepper
    Dried Parsley
    Gluten Free Lasagna Pasta
    Parmesan Cheese
    Mozzarella Cheese
    Cottage Cheese

    Instructions

    In the bowl of your 6 quart or larger slow cooker add the ground beef broken into small clumps, diced tomatoes, onion, garlic, marinara sauce, beef broth, Italian seasoning, salt, pepper and dried parsley. Stir to combine ingredients.

    Cook on low for 6-7 hours or on high for 2-3 hours. Cook until the ground beef is completely done. 

    Turn the slow cooker on low and add the broken lasagna noodles. Cook on low in the hot sauce mixture for 30 minutes.

    Serve the soup hot with parmesan cheese, mozzarella cheese and cottage cheese on top.

    Storage

    If you have leftover gluten free lasagna soup let it cool and then store in an air tight container in the refrigerator for up to 5 days. I like to reheat the soup in the microwave for a single bowl or if there is a large amount left I put the leftovers back in the slow cooker on low to reheat.

    Top Tip

    Be sure to wait until the ground beef mixture is fully cooked to add your noodles. If you add them sooner they will get mushy. Once you add the gluten free lasagna pasta check it after 20 minutes to see if the noodles are cooked and al dente or if they need a bit longer.

    Frequently Asked Questions

    How do I make gluten free lasagna soup?

    Good gluten free lasagna noodles is key! I really like the Jovial Brown Rice Lasagna Pasta. I think they taste the most like what I remember regular lasagna noodles tasting like. They hold together really well also.

    These noodles are perfect if you can't have corn products too. I love that they are simply brown rice and water.

    I cook the ground beef, diced tomatoes, onion, garlic, marinara sauce, beef broth, Italian seasoning, salt, pepper and parsley in the slow cooker on low for 6-7 hours or on high for 2-3 hours. Cook until the meat in done.

    Then I turn the crockpot to low and add the broken lasagna noodles. Let the noodles stand in the hot sauce for 30 minutes. Serve the soup with cottage cheese and shredded mozzarella cheese on top.

    Do I cook noodles before adding to slow cooker?

    No! Don't cook the Jovial Brown Rice Lasagna Pasta before adding it to the slow cooker. The gluten free pasta will cook in the hot sauce in your slow cooker. If you precook the pasta it will get too soft and won't hold together in your soup.

    Can I use a slow cooker to make soup?

    Yes! Using my slow cooker is one of my favorite ways to make soup. I love the simplicity of adding my ingredients and having a hot dinner ready in a few hours while I do other things.

    When possible I look to use the low heat setting and cook my soups slowly so nothing burns on the bottom. If you are going to use the high heat setting be sure to have enough liquid in the pot and to thoroughly stir your ingredients so nothing is stuck to the bottom of your pot.

    Description

    1 teaspoon Sea Salt

    1 - 9 ounce box Jovial Brown Rice Lasagna Pasta, broken into pieces
    ½ cup Parmesan Cheese, shredded
    1 cup Mozzarella Cheese, shredded
    1 cup Cottage Cheese


    Instructions

    In the bowl of your 6 quart or larger slow cooker add the ground beef broken into small clumps, diced tomatoes, onion, garlic, marinara sauce, beef broth, Italian seasoning, salt, pepper and dried parsley. Stir to combine ingredients.

    Gluten Free Cherry Almond Cake

    This simple recipe for gluten free cherry almond cake is perfect for dessert or brunch. The easy cake is make from scratch using almond flour. It's simple to bake with fruit! I like to use frozen cherries, but you could also use fresh cherries.

    I use a nine inch springform pan for this gluten free cherry almond cake recipe. It allows the cake to rise nicely with the toppings staying on top. After the cake has cooled slightly and the pan isn't too hot to touch I take the outside ring off and slice the cake to serve it.

    This cake is perfect to make the day before to serve with coffee at brunch or after dinner for dessert. I like the cake by itself, but it would also be delicious with a scoop of vanilla ice cream.

    Ingredients

    • Unsalted Butter
    • Gluten Free Flour
    • Almond Flour
    • Granulated Sugar
    • Brown Sugar
    • Eggs
    • Almond Extract

    Instructions

    Preheat your oven to 350 degrees. Grease a 9-inch springform pan with coconut oil or butter. Set aside.

    In your stand mixer blend together the butter, almond flour, granulated sugar, brown sugar, eggs, almond extract and vanilla extract until smooth.

    In a separate bowl whisk together the gluten free flour, baking powder and salt.

    Add the dry ingredients to your batter and mix until they are combined. 

    Fold in the cherries with a spatula distributing them through the batter.

    Pour the batter into your greased springform pan.

    Bake at 350 degrees for 30 minutes.

    Carefully remove the cake from your oven and sprinkle the sliced almonds and 2 tablespoons of brown sugar on top. Bake for another 10 minutes or until golden brown and toothpick comes out clean.

    Let the cake and pan cool before removing the pans ring. Serve by itself or with vanilla ice cream.

    Frequently Asked Questions

    How do I make my gluten free cakes more moist?

    Gluten free baking tends to require more moisture or oil than when you are using regular wheat flour. For this gluten free cherry almond cake I used ¾ cup unsalted butter to make it moist and delicious.

    If you are using a cake recipe that isn't turning out moist I would suggest adding a bit more oil or butter. You can also add mashed banana or applesauce to help your baked goods have more moisture.

    Do gluten free cakes take longer to bake?

    Yes, gluten free baking in general takes a little bit longer to bake than a cake made with regular wheat flour. However, gluten free baked goods tend to brown faster. So you will want to test the cake with a tooth pick in the center to make sure it's actually done even if it looks browned.
     
    Your cake should be a nice golden brown and a tooth pick inserted in the center of the cake should come out clean. You may need to bake your cake up to 5-8 minutes more. If your cake is already very brown, but not done in the center you will need to lower the oven temperature by 25 degrees and cook longer.

    Can you use almond flour in cakes?

    Yes! Keep in mind that there is a difference between almond flour and almond meal. Almond flour is more finely ground and works really well in baked goods. Almond meal tends to be coarser and can give baked goods a gritty texture.

    I like to use almond flour along with gluten free flour or extra baking powder.
    Almond flour by itself in a recipe doesn't rise well. However, when you combine it with a flour that does rise well or a bit more baking powder you can get a great texture in your baking.

    Add butter and gluten free flour to the pan. Whisk the butter and flour together to form a paste. Add 3 cups of bone broth and whisk until ingredients are combined. Scrape the bottom of the pan with your whisk to get all the bits of fried onion and brown bits leftover from the meatballs.

    Add the sour cream, heavy whipping cream, gluten free worcestershire sauce, salt, pepper and sage to the pan. Whisk to combine.

    In a separate small bowl mix 1 tbsp. of arrowroot powder with 2 Tbsp. of beef broth. Pour the mixture into the gravy.

    Let the sauce simmer for a few minutes until it thickens.

    While the sauce is thickening boil a pot of water and cook the pasta per the instructions on the box.

    Combine the cooked pasta and thickened sauce. Serve with the meatballs.

    What's the difference between Swedish meatballs and Italian meatballs?

    The biggest difference are the spices used. Swedish meatballs typically have allspice and nutmeg in them. Italian meatballs usually have basil and parmesan cheese in them.

    What do you eat Swedish meatballs with?

    They are typically served with potatoes. For these gluten free Swedish style meatballs I served them with Jovial Brown Rice Tagliatelle pasta. For a low carb meal you could serve them with cauliflower rice or steamed veggies. You can't go wrong with any of these choices!

    Top Tip

    I made these in my favorite Lodge Cast Iron pan. I cooked the meatballs in the pan first and then moved them to a plate. Then, I made the gravy in the same pan being sure to scrape the bottom of the pan with my whisk to get all the delicious bits of browned onion off the bottom. A lot of the flavor for the gravy comes from the remnants of meatballs left in the frying pan.

    I look up all my products in the EWG app before making a purchase. It's amazing to have while I'm at the store and I want to try something new. Keep in mind the product will get dinged for fragrance and it's up to you to decide if that fragrance is from essential oils and safe for you.

    Most clean product sites are very forth coming with their ingredient list and you should be able to find the information easily. This will also help you to see if the products are gluten free. Most hair care brands aren't certified gluten free, but they should have a very clear list of ingredients.

    I like to purchase shampoos and conditioners that don't weigh my hair down. With wavy hair it's a very fine line between enough product to keep the frizz under control and too much that flattens my waves. Here are my favorites:

    I get so excited when I find clean hair care for wavy hair that doesn't make my waves crunchy. If you have wavy hair, you know what I mean! I've tried some products that leave my hair dull and feeling like I put glue in it.

    If you find yourself with crunchy hair, but you love the product you can let your hair air dry partially and then using a blow dryer with a diffuser you can finish drying your hair. This will typically get rid of that crunchy feeling and help your hair to look more natural.

    How to Dry Your Wavy Hair

    After I've showered I wrap my hair in a cotton anti-frizz towel. I leave my hair in the towel while I apply face and body lotion. Then I take my hair down and run a wide tooth comb through it to remove knots. I then apply my Alaffia Beautiful Curls Curl Defining Gel. After that I gently part my hair and pull my bangs down.

    Then using the cotton anti-frizz towel I very gently scrunch my hair from the bottom to the roots to get excess moisture out. I'm careful not to disturb the clumps of waves that have formed.

    I let my hair air dry for at least one hour or until it's half way dry. Then using a blow dryer with a diffuser I flip my head over and gently blow dry by lifting the ends to the roots in the diffuser. When my hair is mostly dry I flip my head back up and finish drying any spots that feel damp.

    When my hair is dry I apply either the Herbal Essences Bio Renew Curl Cream or the Cantu Shea Butter Curl Activator Cream. If there are spots sticking out or that aren't laying down with the rest I twist them away from my face and let them fall into the other waves.

    Nutrition for Healthier Hair

    I've really noticed a difference in my hair regrowth, health and thickness since I started using Vital Proteins Collagen Peptides. I add a scoop into my coffee every morning. The collagen peptides dissolve easily and are flavorless.

    If I skip my morning coffee I will add the collagen to another meal. I like to put it in yogurt, my smoothie or tea. Since it's flavorless you won't even know it's there until you start to notice how heathy your hair is (and also how nice your nails look).
