This easy recipe for gluten free chocolate chip cookies makes the best chewy cookies! It is so simple to make homemade chocolate chip cookies for snacks and lunches. These delicious cookies area always a hit!
The key to these cookies staying flatter and having that chewy center is flattening them before they go in the oven and then before they are completely cooked taking the pan out of the oven and banging it on the counter to deflate them.
After banging the pan on the counter you put the cookies back in the oven for a few minutes to finish baking. I also like to save some of the chocolate chips to place them on top of the cookies.

Instructions
Preheat your oven to 350 degrees.
Line three baking sheets with parchment paper.
In the bowl of your stand mixer blend the sugars and butter together for 3-4 minutes until they are creamed together. Add the eggs and vanilla. Blend until combined.
Add the flour, baking soda and salt to the wet mixture and blend until just combined. Add the chocolate chips and blend until they are just mixed in.
Using a cookie scoop or tablespoon place the dough onto the baking sheets. Using the palm of your hand flatten the cookies to about half the size they are as a ball.
Bake the cookies at 350 degrees for 11 minutes. Take the cookies out and bang the tray on your counter or edge of your stovetop to flatten them. Put the cookies back in the oven and bake for another 3 minutes.
Let the cookies cool slightly before removing them from the baking sheet to a cooling rack.

Yes. Xanthan gum is typically used in gluten free recipes to replace the gluten. It helps the cookies to rise and to have an airy texture. For these cookies I wanted them to be flatter and with a more chewy texture.
Omitting the xanthan gum allows these cookies to stay flatter and gives them a denser texture. However, most gluten free flour brands have already added xanthan gum to their mixes.
