I love a meal that I can make the entire thing in the instant pot quickly and easily. For this gluten free instant pot taco soup I add the ingredients to the pot, including the raw hamburger, and pressure cook manually for 18 minutes. It doesn't get much easier than that!
Is this soup low carb?
Yes! There aren't beans in this recipe so the ingredients are low carb. This soup is great for dinner or to package up for lunches. I like to add sour cream and avocado as toppings for some added fat.

Can I make this taco soup without beans?
Yes. I don't eat beans (legumes) so I make my taco soup without them. Since I didn't include beans this soup is considered Paleo. I don't miss the beans at all. There is ground beef and chunks of tomatoes that make this soup hearty and filling.
Can I use frozen beef in this recipe?
Yes, but you will need to increase the cook time. I like to have the beef defrosted so the recipe only takes 18 minutes to cook. It's also nice to be able to crumble the beef up to get smaller chunks.
However, you can add your frozen beef in and double the cook time. As long as it's not a large block of frozen beef that should cook it. As I said though I would rather defrost the beef to have smaller chunks and cut down on the cooking time.

Ingredients
1 pound Ground Beef, thawed & crumbled
1 large Onion, chopped
2 tablespoon Minced Garlic
1 - 6 ounce can Tomato Paste
2 - 14.5 ounce cans Diced Tomatoes
1 quart Chicken or Beef Stock
1 tablespoon Sea Salt
1 teaspoon Ground Black Pepper
1 tablespoon Chili Powder
1 teaspoon Ground Cumin
2 teaspoon Ground Oregano
1 teaspoon Ground Coriander
2 teaspoon Smoked Paprika
1 teaspoon Crushed Red Pepper (omit if you don't like spicy food)
2 tablespoon Lime Juice
1 cup fresh Cilantro Leaves, chopped
2 cups fresh Spinach, chopped
Instructions
In the pot of your Instant Pot add the onions, garlic, tomato paste, diced tomatoes, crumbled ground beef and chicken stock.
On top of those ingredients add your spices (salt, pepper, chili powder, cumin, oregano, coriander, paprika and crushed red pepper if you are including it). Add the lime juice.
Stir the ingredients together to mix the spices in.
On manual pressure cook for 18 minutes.
Let the steam automatically slow release. When you can open the pot add the chopped spinach and cilantro. Stir until wilted and mixed in.
Serve the soup hot with sour cream and avocado slices.
