    • Carrots
    • Green Onions
    • Parsley
    • Dijon Mustard
    • Lemon Juice
    • Olive Oil
    • Honey
    • Salt
    • Black Pepper

    Instructions

    Peel and then grate the carrots using a box grater or your food processor.

    Finely chop the green onions and parsley.

    Add the carrots, green onions and parsley to a large mixing bowl.

    In a small bowl with a whisk or in a jar with your immersion blender add the dijon mustard, lemon juice, olive oil, honey, salt and pepper. Whisk or blend together.

    Pour the dressing over the carrot mixture and stir to coat the salad.

    Serve immediately or store in the refrigerator in an air tight container until you're ready to serve it.
