Oatmeal raisin cookies are high on my list of favorite treats. We like them to be soft and chewy. I have a lot of standards for these cookies! I think this recipe meets all my standards.

One of the key things for this cookie is to make sure you have gluten free oats. It is typical for companies to process oats in the same facilities as they process wheat flour and other products containing gluten. You want to make sure the package states the oats you are using are gluten free.

Can oatmeal raisin cookies be frozen?

Yes! These cookies work great to freeze. I like to freeze them in small batches so I can get them out to put in lunches. It's also really nice to have a treat in the freezer when I don't feel like baking anything.

How do I make oatmeal raisin cookies?

These cookies are so simple to make! You blend the sugars and butter from about 3 minutes until they are creamy. Then add the vanilla and eggs. Blend until well combined.

Add in the dry ingredients (baking powder, baking soda, ground cinnamon, sea salt, gluten free rolled oats and gluten free flour). Blend just until the dry ingredients are mixed with the wet ingredients.

Add in the raisins and blend until they are incorporated. Line your baking sheet with parchment paper and then using a cookie scoop or tablespoon place twelve cookies on each sheet.

Bake at 375 degrees for 12 minutes. The cookies will be lightly browned and delicious.

Ingredients

Scale

½ cup Granulated Sugar
½ cup Brown Sugar
½ cup Unsalted Butter, at room temperature
1 tsp. Vanilla Extract
2 large Eggs
1 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Ground Cinnamon
½ tsp. Sea Salt
2 cups Gluten Free Rolled Oats
1 cup Gluten Free Flour
1 cup Raisins


Instructions

Preheat your oven to 375 degrees.

Line three baking sheets with parchment paper.

In the bowl of your stand mixer beat the sugars and butter for about 3 minutes until creamed together. Add the vanilla and eggs. Beat until blended together.

Add the baking powder, baking soda, cinnamon, salt, rolled oats and flour to the wet ingredients. Blend until the wet and dry ingredients are combined. Add the raisins and blend just until they are combined into the dough.

Using a cookie scoop or tablespoon place twelve cookies on each baking sheet.

Bake at 375 degrees for 12 minutes or until the cookies are golden brown.

After the cookies have completely cooled store them in an air tight container for up to a week on the countertop.
