I'm not a big fan of raw eggs. Don't get me wrong, I love our farm fresh eggs. I just don't like them raw. So, traditional caesar dressing using raw eggs is a big no for me. I came up with this gluten free recipe using anchovy fillets as an alternative.

I love caesar salads whether I'm using classic romaine or kale. We like them with croutons and chicken or just plain. Salads make a great, quick lunch for me so I'm always looking for a new version to try.

Being gluten free means I have to be really careful with salad dressings. I've found it's the condiments that gluten is snuck into. I really have to read the labels! So, it's become easier to mix up my own gluten free salad dressings. I know what's in the dressing and can feel completely safe eating it.

Yes! This gluten free caesar dressing is keto and low carb friendly. Anchovies are a great source of omega-3 fatty acids. They are also a great source of iron.

How do I make gluten free caesar dressing?

It is so easy to make homemade caesar dressing. Since dressings are place that gluten tends to be added I like to make my own dressing to be sure it's gluten free.

I add the mayonnaise, minced garlic, anchovy fillets, lemon juice, Dijon mustard, Worcestershire sauce, Parmigiano-Reggiano, salt and pepper to a tall glass jar. A leftover mayonnaise jar or wide mouth canning jar works great.
Then, using my emersion blender I blend all of the ingredients together to get a smooth and creamy dressing. You could also make this dressing in your food processor.
