This easy gluten free tamale pie recipe is the perfect ground beef casserole for weeknight dinners! It is a one pan comfort food meal made in a cast iron skillet. The seasoned beef mixture is topped with delicious homemade cornbread.

I love a one pan meal! This easy gluten free tamale pie is all made in one cast iron skillet. It's a quick ground beef weeknight meal that the whole family will love.

Instructions

In a cast iron skillet over medium heat cook the beef until very little pink remains. Add the chopped onions and minced garlic. Cook until the onions are translucent.

Add the stewed tomatoes, corn, tomato paste, olives, chili powder, cumin and salt. Stir to combine. Remove the pan from heat.

In your stand mixer beat together the unsalted butter, milk egg, cornmeal, flour, sugar, baking powder and salt. Spread the cornbread mixture over top of the ground beef mixture.

Bake at 350 degrees for 20 minutes or until the cornbread topping is browned.

Hint: I love to serve this casserole with sour cream and cheese on top.

Storage

Store this casserole in an air tight container in the refrigerator for up to 5 days. To reheat plate each serving and then top with a damp paper towel while microwaving.

1 pound Ground Beef
1 small Yellow Onion, chopped
1 tablespoon Minced Garlic
14.5 ounce can Stewed Tomatoes
15 ounce can Whole Kernel Corn, drained
6 ounce can Tomato Paste
2.25 ounce can Sliced Black Olives
2 teaspoon Chili Powder
1 teaspoon Ground Cumin
1 teaspoon Sea Salt
½ teaspoon Coarse Ground Black Pepper

Cornbread Topping:
¼ cup Unsalted Butter, softened
1 ½ cups Milk
1 large Egg
