I love an easy one pot recipe for quick winter comfort food recipes! This ground beef pasta casserole can be made in a cast iron skillet or in a regular frying pan and then transferred to a baking dish to go in the oven.

Instructions

Preheat your oven to 350 degrees.

In a cast iron skillet or frying pan over medium heat cook the ground beef until just a little pink remains. Add the chopped onion and minced garlic. Cook on medium heat until the onion is translucent.

Add the diced tomatoes, tomato sauce, tomato paste, beef broth, Italian seasoning, sea salt and pepper. Stir to combine the ingredients and heat to a simmer.

Add the sour cream, cream cheese, ½ cup cheddar cheese, ½ cup monterey jack cheese and uncooked penne pasta. Stir to combine.

If you are using a frying pan transfer this mixture to a baking dish.

Top the dish or skillet with the remaining ½ cup cheddar cheese and ½ cup monterey jack cheese.

Bake at 350 degrees for 35 minutes or until bubbling around the edges and browned slightly.

Storage

Yes! You can substitute an equal amount of ground chicken or ground turkey for the ground beef in this recipe. Follow the same instructions for this substitution.

What type of gluten free pasta is the best?

Gluten free brown rice pasta is my favorite for flavor and texture. I've found brown rice pasta holds its shape better in recipes and doesn't turn into mush. My favorite brand is Jovial Foods.

How do I clean and season my cast iron skillet?

I love to cook with cast iron. It evenly heats and is easy to clean. I like to use this U-picks Cast Iron Skillet Cleaner Chainmail Scrubber that I got from Amazon. I rinse the pan with hot water to remove any loose food and leftover oil. Then I use the chainmail scrubber to lift up any bits of food left. 

I place the pan on the stove top at medium heat and let it dry completely. Then I pour a tablespoon of oil on the pan and rub it onto the entire inside of the pan with a paper towel. Remove the skillet from heat and it's ready for your next meal.

Remember to never put your cast iron skillet into the dishwasher.
