This soft and easy gluten free apple spice cookies recipe is made with brown sugar and cinnamon. They make it simple to have a chewy, delicious cookie loaded with apples and flavor. 

I've been making batch after batch of these cookies using the apples from our trees. They are spicy, chewy and delicious. They are the perfect way to use up the abundance of apples we have this year.

How long will apple cookies last?

These cookies will last about a week in an air tight container. You can store them on the counter or in the refrigerator. You can also freeze these cookies in a freezer safe container for up to a month.

I like to freeze a few cookies in each container so I can take them out and add them to lunches. They are great to have in case I haven't planned ahead with something else. I also like to double the batch so we can eat half and freeze half.

How do I make apple cookies?

These cookies are really simple to make! First, peel, core and chopped your large apple and set aside. Then, combine the packed brown sugar, softened unsalted butter and large egg in the bowl of your mixer. Next, add the gluten free flour, xanthum gum, ground cinnamon, ground nutmeg, sea salt and baking soda.

Blend the dry ingredients with the wet ingredients just until there aren't any dry ingredients visible. Add in the chopped apple and mix just until the apple bits are mixed in. From here you will scoop the dough onto baking sheets and bake.

Ingredients

1 cup Brown Sugar, packed
½ cup Unsalted Butter, softened
1 large Egg
1 ½ cups Gluten Free Flour
1 tsp. Xanthum Gum
2 tsp. Ground Cinnamon
1 tsp. Ground Nutmeg
½ tsp. Sea Salt
½ tsp. Baking Soda
1 large Apple, peeled, cored and chopped (approx. 1 cup)


Instructions

Preheat your oven to 375 degrees.

Line two baking sheets with parchment paper.

In the bowl of your stand mixer place the brown sugar, butter and egg. Beat until blended. Add the flour, xanthum gum, cinnamon, nutmeg, salt and baking soda. Beat until blended together.

Add the apple chunks and blend until just combined.

Using a cookie scoop or heaping tablespoon place 12 cookies on each cookie sheet.

Bake at 375 degrees for 10-12 minutes until the cookies are golden brown.

Let cool before removing from the baking sheet.

Store in an air tight container for up to five days on your countertop.
