Description
These soft, chewy cookies are loaded with fresh apple and warmly spiced with cinnamon and nutmeg. A simple gluten free treat that comes together with one bowl and a stand mixer.
Ingredients
- 1 cup Brown Sugar, packed
- 1/2 cup Unsalted Butter, softened
- 1 large Egg
- 1 1/2 cups Gluten Free Flour
- 1 tsp. Xanthan Gum
- 2 tsp. Ground Cinnamon
- 1 tsp. Ground Nutmeg
- 1/2 tsp. Sea Salt
- 1/2 tsp. Baking Soda
- 1 large Apple, peeled, cored and chopped (approx. 1 cup)
Instructions
Preheat your oven to 375 degrees.
Line two baking sheets with parchment paper. Set aside.
In the bowl of your stand mixer place the brown sugar, butter and egg. Beat until blended. Add the flour, xanthan gum, cinnamon, nutmeg, salt and baking soda. Beat until blended together.
Add the apple chunks and blend until just combined.
Using a cookie scoop or heaping tablespoon place 12 cookies on each cookie sheet.
Bake at 375 degrees for 10-12 minutes until the cookies are golden brown.
Let them cool slightly before removing from the baking sheet to a cooling rack.
Store in an air tight container on the counter or in the refrigerator for up to a week, or freeze for up to a month.
