This easy recipe for gluten free chicken parmesan pasta casserole is a perfect weeknight meal. It's oven baked with gluten free penne pasta and marinara sauce. This gluten free pasta recipes is cheesy and delicious!
1 Tbsp. Olive Oil
2 cups Chicken Breast, cube (approximately 2 medium sized breasts)
1 medium Yellow Onion, chopped
2 Tbsp. Minced Garlic
1 tsp. Dried Italian Seasoning
2 tsp. Dried Parsley
1 tsp. Sea Salt
1/2 tsp. Coarse Ground Black Pepper
1 - 25 ounce jar Marinara Sauce
1 - 14.5 ounce can Diced Tomatoes
2 cups Chicken Stock
12 ounces Gluten Free Penne Pasta
1 1/2 cups Mozzarella Cheese, shredded
1/2 cup Parmesan Cheese, grated
Preheat your oven to 350 degrees.
In a cast iron skillet or oven safe pan over medium heat add the olive oil. Cook the chicken breast until almost done. Then add the onion, garlic, italian seasoning, parsley, salt and pepper. Cook until the onions are translucent and the chicken is done.
Add the marinara sauce, diced tomatoes, chicken stock, penne pasta, 1 cup mozzarella cheese and parmesan cheese. Stir to combine the ingredients.
Top with the remaining 1/2 cup mozzarella cheese.
Bake at 350 degrees for 35-40 minutes. The casserole will be bubbling and the pasta will be el dente when the casserole is done.
