Description

A mix of almonds, cashews, walnuts, and pecans tossed in olive oil, fresh herbs, spices, and nutritional yeast then air fried until perfectly golden and crunchy. These gluten free air fryer savory herb roasted nuts are high in protein and healthy fats, ready in minutes, and taste like premium store bought seasoned nuts.

Instructions

In a large mixing bowl add the cashews, walnuts, and almonds. Pour the olive oil and melted coconut oil over the nuts. Add the rosemary, thyme, cumin, nutritional yeast, sea salt and pepper. Mix the nuts until they are all well coated with oil and spices.

Pour the nut mixture into the basket of your air fryer. And spread evenly.

Air fry at 350 degrees for 6 minutes. At 3 minutes shake the basket so the nuts are evenly roasted.

Immediately pour the nuts onto a parchment lined baking sheet to cool. Spread them out so they don't stick together.

After the nuts are completely cooled you can transfer them to an air tight container for storage up to a week.

Notes

You can use whatever nuts you have on hand, but if they are a lot smaller than what I'm using in this recipe you may need to cook them for a shorter amount of time.

If you don't have crushed rosemary you can grind your whole dried rosemary in a coffee grinder or small food processor.
