A quick dessert that works well for a picnic or just when you need a delicious treat.
Preheat oven to 350 degrees.
In a mixing bowl stir together the canned peaches, sugar, arrowroot powder and lemon juice. Pour into a greased 9×13 baking dish.
In your stand mixer place the rolled oats, brown sugar, brown rice flour, sea salt, melted butter and pecans. Blend together until you get a crumbly mixture. Pour this crumbly mixture over the peaches in your baking dish.
Bake for 30 minutes or until peach mixture is bubbling and topping is slightly browned.
You can replace the pecans with walnuts.
I like to make homemade whipped cream (1 cup heavy whipping cream + 2 Tbsp. granulated sugar) to serve with my cobbler.
